    • The Power of Kale

      Have you ever seen the show, “Monsters inside me” on TV? If you haven’t I will give you my cliff notes version of the plot. Basically it’s a show that reenacts true stories about people getting parasites inside their bodies either from eating something, swimming somewhere, laying somewhere filthy and so on. It’s quite frightening really.

      One episode in particular haunts me to this day. A group of people traveled to Mexico and went out to eat at a local restaurant. They were all infected with a type of parasite that came from rat poop. The real kicker is HOW they got contaminated. SLUGS ate the poop, and crawled their nasty way all over the lettuce in the restaurants garden. The restaurant didn’t see the slug(S) and they were CHOPPED up with the lettuce and fed to the travelers. OH MY LORD.. if you’re a regular to my blog you’ll know slugs are my biggest fear. Keep this story in your short term memory, I’ll come back to it.

      The other day I went for a hot, hilly, sweaty run. Upon my arrival home, my stomach had its mind set on one thing: A GIANT bowl of cold greens. (You know where this is going…)

      Now let me just say, I had a garden last year. This garden was very successful, and one of the most successful things I planted was my Swiss chard. I didn’t harvested the chard on my own because I was always fearful of what I would find lurking in the leaves. One day I felt brave and decided to go get some chard..all by myself. MISTAKE! SMACK dab on the middle of the leaf I grabbed was a slug the size of a quarter. Needless to say I flipped shit.

      I never harvested that chard again.

      OK back to the other day. I had just finished mixing my bowl of spinach, chard, kale, and regular lettuce, this bowl was huge. Like bigger than my head huge.

      Just as my broccoli was finished steaming I saw it. Right there on one of my kale leaves..was a slug the size of an uncooked grain of rice. Don’t ask me how I saw it, I have unbelievable slugdar (slug radar.) I froze. This bowl was too big to waste, I had to overcome this fear of mine, and eat the damn bowl of greens. I went through EVERY single leaf. Once I confirmed this was safe, I ate the entire bowl. Kale has some serious power.

      From watching that TV show, to finding slugs in my garden, I was bound to find one in the produce I purchased at the store. I never eat greens without the though crossing my mind, and the worst part is that I may have missed tiny slugs in the past because I didn’t see them. OHhhh the horror. I’m just glad I saw this one before my colon had to jump ship.

      So what’s the point of this story? Kale (and other greens) aren’t only powerful inside your body to keep you healthy, they also are powerful over your mind and can help you overcome the disgust and fear from seeing your biggest phobia slime its way across your lunch. There was no way I was going to let that bowl go to waste.

    • Blissful Blueberries

      Working in a coffee shop means I get to work around drool worthy baked goods all day long. I have been lusting over the blueberry scone at Starbucks since it was first launched a few weeks ago as apart of the new La Boulange treats. This scone is made with dairy, so I took the inspiration and baked my own dairy free scones!

      I took my scones up a notch though and added orange zest and squeezed an orange on top, with some sugar for a crumbly finish. Craving satisfied! If you look close you’ll see the zest!

      I used a pre-made flour base so I don’t have a recipe for you, but perhaps this post will inspire you to bake some scones to have with your morning coffee! I had just purchased some fresh organic blueberries that were on sale, it must have been fate!

      If all else fails, there is a Starbucks on every corner and you can go buy a blueberry scone from them, I hear they are delicious! I bring some home to my mom anytime I can! Bringing home scones for my family means I get to eat more of these scones, win win!

      I still had plenty of blueberries left after making these scones, and decided to throw some in with a bowl of quinoa. From there I added some pistachios and topped it all off with some lime juice! SO simple, but so delicious!

      I don’t have a recipe for this either because I just eyeballed everything. I used a half cup of (pre)cooked quinoa (which comes out to be more like a full cup after the quinoa is cooked,) around 3/4 cup of blueberries, and around 1/2 cup shelled salted pistachios. Squeeze as much lime (or lemon, or ORANGE!) on top as you desire!

    • Hot Hot HOT!

      The temperatures have been (finally) rising in Washington and we are away from 50-60 degrees and into the 80 degree range. This is nothing for some of you, but for me I die. I die at night when I can’t sleep because it’s too hot, I die in the day when I get into my car and can’t breathe until my AC gets going, and I die when I try to run while it’s still 80 out.

      The heat just ZAPS my energy, but I am really loving the fact that this is my “slower” pace lately. My slower pace used to be 10:30-11:00 miles, but for the last month it’s been 9:30-9:40 miles. I can feel the difference when I am running slower, but even this “slow” pace is fast for me. I talk about pace too much, but only because I get so excited!

      The real test will be when I start running longer distances again, but I am still content with my 3-5milers. On top of melting out of my own skin, I am 90% positive I had a slight case of strep last week. Aside from having someone in a lab coat swab my tonsils and smear my mouth bacteria on some agar agar, I let the symptoms describe themselves. My tonsils were the size of ping pong balls, my throat keept me awake at night it hurt so bad, and there were small white bumps on my throat. So gross, and def strep symptoms. I rode it out though, and tried at home remedies like ACV and honey with cayenne.

      I mentioned in my last post that I just can’t hang when it comes to eating ice cream on a hot day, but give me a cupcake and I will pummel through walls. Even poorly frosted cupcakes get a chance. This frosting melted into a sad puddle, but was delicious!

      Much less heavy than ice cream, but still satisfies my ferocious sweet beast. I also like my brownies and cakes cold, so they get put into the fridge immediately. Along with cold cakes my diet has been consisting of cold fruit and cold grains. Starbucks just started selling the most epic salad, and it just so happens to be vegan!! I am so obsessed, man I love my job.

      The dressing is delicious, but way too oily so I only use a skosh, just enough to give the kale some flavor. I’m a plain grain eater anyway. Well done Starbucks, well done.

      While I enjoy the heat in moderation, I have to admit that I am already looking forward to the fall months. October is my favorite month of the year, and I’m already day dreaming about all the pumpkin and cinnamon I will be consuming around Thanksgiving. Too soon?

      Q: How do you handle the heat?? I’m a big wimp, I like 65F and sunny..anything more and I wine like a squeaky door handle. I don’t know how my family in Arizona handles the 120F months. Too hot, TOOOO HOT!

      Last weekend I spent some time with old/new friends. I say old/new because while they are new to me friends..I have met them before because we all went to high school together. A mutual friend recently came into town and brought us all together. Since the three of us have no friends we decided to make a trip to Seattle together.

      The original plan was to go to a couple farmers markets, but we only made it to one and were only there for about 8 min. Enough time to snap some pictures & drink some juice.

      The remainder of the day was spent figuring out public transportation (I have never ridden so many city buses in my life, and it was a blast of an adventure), eating good food, and spending time looking at thrift shops, bakery’s, and coffee shops.

      While this bakery had an adorable picture worthy sign, they did not have anything worth purchasing inside. So I did what any Seattle lover would do, and I walked across the street to Starbucks. I got some weird looks for getting a drip coffee while it was 80F outside.

      It’s no secret that I love to walk, however the temperatures were getting higher and higher throughout the day, and it was hard to walk at times. You know you’re with good people when despite the heat you still go out of your way to walk for some sugar.

      This homemade ice cream shop has one vegan ice cream option, which was delicious, but reminded my why I don’t like ice cream on hot days. Call me crazy, but I feel so sick and weighed down with the heaviness of frozen cream on a hot day. Nonetheless this coconut milk chocolate chunk ice cream was SO good. Must remember for a COOLER day.

      I really liked that my ice cream was the same price as all the “normal” ice creams. Usually I find that I am paying more for a vegan option (which is lammmeee) but this place charges by the scoop regardless of the flavor! That’s the way to do it! All in all it was a fun and exhausting day with new friends.

      1. My black cat is starting to get grey hair. He is five, which means he is around a million years old in cat years. I’ve been helping him by plucking any that I find, he needs to find himself a nice girl to settle down with. Just kidding, he’s a mamas boy.

      2. I have been enjoying a lot of nature. Big surprise.

      4. I have been eating the most random food creations. I have been coming home at the end of my days ravenous, and waiting even 5 minutes for some cous cous to cook just isn’t going to work. Insert, “anything I can wrap inside a tortilla.”

      5. I ate a few things this week that had dairy in them. Oops. C’est la vie.

      6. My running has been amazing. I just don’t know where my “speed” is coming from, but I am surely not complaining. My last run was exactly one second faster per mile than my fastest pace. Making this overall time 7 seconds faster than my fastest time. Every single second counts. EVERY SINGLE ONE! 8:xx/miles here I come!

      7. I have a blog post in my drafts that has been there for almost a month. I am struggling to find the courage to post it.

      8. Lately I have had a lot of faith. Faith in life, faith in my future, and faith in myself. I found a new ring that I promptly bought for myself without a second thought. I love it.

      9. My blogging has been very lazy lately. I’ve been rather boring, and rather busy. Instead of blogging about my cats diarrhea, and boring meals, I just don’t blog. You all understand.

      10. Most recipes I make are a one time deal unless I drool excessively. There are a few recipes I swear by, and my energy bites are one of them. I make them way too much.

      I have kept to running anywhere from 3-5 miles the past month and the shorter distances have been great. A while back I mentioned I am no longer watching my Garmin like a hawk while I run, instead I will look at it when the run is complete. Every single run has been getting faster..and faster..and faster. I’m naturally a slower runner..think 10m/mile range, so you can understand my excitement when I ran my fastest run everrrr this week.

      BOOM 9:18 pace! This convinces me that in time I will be able to run my 3-5 milers within an 8:XX range. It’s the little things..finding excitement in something simple! I want to run another half marathon in the near future, but for now I am happy focusing on the shorter/quicker runs. These quicker runs have been consistent, so I hope this isn’t a fluke.

      The past week I have been living in the 90’s while doing a series of “8 minute ___” workouts. From arms, to buns, to legs, to abs. I’ve been doing them everyday and I am still sore. These YouTube videos from the 90’s are no joke. I find myself looking forward to them. I may have busted out my leotard from when I did ballet. I was 4 when I did ballet.

      I’ve been obsessed with soy lattes since discovering them a few weeks ago. I just can’t get enough. I’ve also been obsessed with breakfast for dinner. Lots of cereal with LOTS of fruit. I do eat things other than cookies and cake, but they just aren’t worth sharing usually

      This past weekend I went to my first baseball game of the season.

      Before finding my seat, I made sure to first find the moose.

      Nothing makes me feel more like a child than getting a photo with a sweaty mascot. I felt his sweat through the suit…gross. When I think baseball, I think hot dogs. I’ve never been a fan of hot dogs, but the vegan hot dogs made by Field Roast I DO happen to like! Lucky for me this baseball stadium sells them! I get to fit in with the crowd!

      I was asked multiple times if I had vodka in my camel back. Uh no..I carry water, carrots and peanut butter and jellies..no vodka drunk kids.

      I think I finished this hot dog in a matter of seconds. After watching the Mariners loose, my date and I headed into the heart of Seattle for the remainder of the day. The game was at 1:10PM, which meant we still had time to walk around afterwards!

      I found some blue trees. I want blue trees in my backyard. Then I can dress up like an Avatar creature and do a dance around the swaying branches. I felt inclined to include the blue trees in this post. After walking it was time for dinner..shocker..I needed more food.

      A whole loaf of bread, and a plate full of spaghetti and broccoli later I was ready to be rolled home. After my day of eats it’s no wonder my pants feel snug. If anyone has P90X that I can borrow it would be greatly appreciated, I need to build some muscle!

      Eating my weight in carbs did give me the opportunity to run my fastest 5K to date the next morning. I’ll take it!

      I am a firm believer that a picture can speak a thousand words.

      Take these sky high pancakes for example. I don’t need to tell you that these were delicious, moist, decadent, amazing, FILLING, and some of the best pancakes I have ever eaten. The picture does an excellent job describing all of that to you on its own!

      I’ve been craving pancakes like crazy the past couple weeks. I haven’t had pancakes in months, and I consider pancakes to be the epitome of a lazy morning breakfast. In a good way. After discovering I had all the ingredients I needed, I finally made myself a tower.

      Classic Fluffy Vegan Pancakes

      • 1 cup whole wheat flour
      • 1 tbsp raw sugar
      • 2 tbsp baking powder
      • 1 cup vanilla almond milk
      • 1 tbsp olive oil
      • 1 tbsp apple sauce
      • 2.5 tsp vanilla
      • cinnamon

      Directions: Combine your dry ingredients in a large bowl and set aside. In a separate bowl combine your wet ingredients and then add them to the dry ingredients. Stir together until there are no visible clumps. I took cinnamon and completely covered the top of the wet mixture. No measurements, just a LOT of cinnamon! Stir the cinnamon in and cook!

      You can choose how big to make these, but once they start to form bubbles flip them over to cook the other side. Serve with bananas and maple syrup, or any other fruit/toppings you would like! All I was missing was some coconut whipped cream!

      I am almost ashamed to tell you I ate this entire batch by myself..almost. What can I say I was hungry and these were so good, but you already knew that from the pictures. 😉

      I do have a confession though, I like my pancakes a little…mushy. I LOVE pumpkin pancakes because they come out so soft and almost like they are under cooked. I took these pancakes off the griddle just a tad bit early to have some softness on the inside.

      That’s the joy of eating the whole batch, you can make them however you want! To really heighten your lazy morning experience, I highly suggest serving these with a cup of coffee.

      I’m going to apologize now for the recipe I am about to share with you. I guarantee you will not be able to stop eating this, which means you will need to purchase a new pair of pants to fit your new, larger waistline after you eat the entire pan of these chocolate treats.

      Zero Self Control Chocolate Bars 

      Straight up SWIPED from amy-newnostalgia! EXACT recipe. It was perfect just the way it was. The name is mine though, haha. I named it from my experience. 

      • 1 cup peanut butter
      • 2/3 cup honey *
      • 1/2 cup coconut oil (NO substitutions, must use coconut oil)
      • 2 cups oats (NOT instant)
      • 1 1/4 cup semi sweet chocolate chips
      • 3/4 cup dried cranberries

      *I use honey in my diet while most vegans don’t. If you don’t want to use honey, try another sticky sweetener in its place.

      In a medium sized saucepan, melt together peanut butter, honey, and coconut oil. Remove from heat and add oats, chocolate chips, and dried cranberries. Stir until combined and chocolate chips are melted.

      Spread into a 9 x 13 pan. Refrigerate until hardened, about an hour or so. Store in refrigerator.

      Oh I’m not done yet. These bars were not eaten alone. Ohhhh no, they had a copilot. I had a can of coconut cream in my fridge for almost a month, and I finally decided to use it.

      Coconut Whipped Cream

      • 1 can of coconut cream (14 oz) I used that TJ’s can. 
      • 1 1/2 tablespoons powdered sugar
      • 1 1/4 teaspoons of vanilla

      Place your can of coconut cream into the fridge for at least 8 hours, or for a month like I did. After 8 hours open the can UPSIDE down and pour the liquid into a container to use later. Possibly for a smoothie. Take the hardened cream out of the can into a mixing bowl and combine with the powdered sugar using an electric mixer. Add the vanilla and let sit.

      NOTE: This whipped cream is like Leonardo DiCaprio, or like a fine wine, it gets better with age. Let this sit for at least a day before you use it for the best results. I found that when I tasted it the first day it was much too fatty and rich for me. The next day it was better, and TWO days after I made this it was perfect. While most recipes use a can of coconut milk, I thought the fatty texture of the coconut cream was divine. Plus this is GOOD fat, we need good fats in our diet! Great with fruit, or with those chocolate bars!

      I couldn’t stop cutting off pieces of this chocolate stuff and dipping it straight into the cream. I ate all the cream by myself and it’s gone. The pan of chocolate bars are gone too.. both gone in two days. I was addicted. In all actuality the ingredients are not bad in either of these recipes, but I know nothing about moderation. I had ZERO self control with these. Now if you’ll excuse me, I’m late for my Chocoholics Anonymous meeting.

    • When Nature Calls

      Lately I have been spending a lot of time alone. Sometimes it’s peaceful, sometimes it’s not. This weekend I tried to get out and spend time around other people and bless them with my charm and wit. Friday I successfully got lost in nature, kind of. Can you get lost if you’re not alone?

      I brought my sister with me to go for a walk in the woods because let’s be honest, I am afraid of going into the woods alone. What can I say, I’m a wuss. What I am not afraid of though, is honoring nature when it calls. I was no where near a bathroom and my bladder felt like it was carrying the entire San Diego Zoo. The problem was finding somewhere appropriate to hide. I don’t prefer this way, but I just had to.

      Finally when I thought I couldn’t hold my bladder any longer I found a giant rock to hide behind. I told my sister to block my way and she then say, “Can Tiff try?” For those of you that don’t know, my sister has autism and is very impressionable. I probably should have held it, but I REALLY had to go. I said “NO! Don’t ever do this..and pretend it didn’t happen.” She said, “Keep it a secret.” Yes..keep my secret. Sorry mom.

      I have been craving pizza, for WEEKS! For some reason I’ve had no motivation to make my own, and as a vegan it’s not easy to just walk into Domino’s and ask for a pizza without cheese. Plus who knows whats in their crust..ANYWAY. This pizza..was legit.

      I chose the Field Roast pizza and it had: white garlic sauce, Field Roast, fresh tomatoes, spinach, and I ditched mushrooms for potatoes. Potatoes on pizza is the best. I think they also sprinkled dill on top, which I don’t really care for..but the pizza was so good I was able to ignore the dill. Plus I dumped enough red pepper and nooch on top to plug a flood hole.

      The pizza is made to order, so you know it’s fresh. They don’t sell by the slice so I had to purchase a small, but that just means more for later. I love supporting small businesses.
