    • Little Bits of Love

Posted at 7:30 AM by Brittany, on August 3, 2015

There are a handful of things I am loving right now, and not just watching my cats UFC fight while I dip popcorn into almond butter and mustard.

      SEPARATELY.

Recipe to come for this pie.

As you can see/know if you follow me on Instagram I ate a fat piece of raw pie last Monday and went for a run from my town, to the next town over. I had no idea if I’d make it as I haven’t run more than 6 miles (and only a handful of times) since March.

      • Creepin in a coffee shop

      IMG_3044

I hadn’t spent time blogging in a coffee shop for…so long I can’t recall when the last time was. It’s always fun to be in a Starbucks that isn’t the one I work at.

      • Features on popular websites.

Hey look, those are my balls!

I am not a famous food blogger, nor do I aspire to be one. My recipes don’t travel the web at the speed of light, and I don’t have people knocking at my door begging to try my random creations. With that said, it has been like the work of a wizard adding coffee to the energy bite world. These bite sized balls have been a hit since the day I first shared them. Adding coffee to treats makes the world a better place.

I stalled long enough with buying a new pair of Vibrams, so I ordered these online because they were on sale. I can’t say I love these yet because they haven’t arrived, but I’m hopeful that by sacrificing my pride with that “up the ankle” look they’ll be extra comfortable. If anything they won’t have holes in the toes like my current pair.

      • Coffee

      IMG_3141

Is this a shocker? Do you know what I do sometimes with my days off? I drive out of my way to get a good cup of coffee. Yesterdays cup was Brazil Santa Ines, a Starbucks Reserve roast with tasting notes of milk chocolate and plantains. It sang in my mouth.

Despite today’s somewhat random attempt at a post, I have a few posts in the draft bin ready to go. One mountain adventure, one recipe, and one product review.

Piggy backing off of that I also love blogging for the people I meet, and places I go.

Like that time I went to Taiwan…

Just kidding, but this girl did and she sent me that awesome mug with a bear on it. I am traveling soon though to visit this girl. I’m stoked to stomp all over Ohio and drink all their coffee, and eat all their food. All the all’s.

Q: What is one thing (or five) that you’re loving right now? I’m loving how sore my legs are from yesterdays five hour hike.

Disclaimer: No felines were harmed in the making of this post.

    • Super Food Energy Bites

Posted at 6:03 AM by Brittany, on March 4, 2015

About two months ago I was gifted a bag of raw hazelnuts, and by raw I mean they were still in their cocoon of a shell. I knew I wanted to do something fun with them, but they sat on my counter for days, then weeks, then months. I was then gifted a second bag, and to avoid becoming the Filbert hoarder (did you know Filbert is another name for hazelnuts!?) I knew it was time to put these bags to use.

There was only one problem, how would I de-shell them?

      IMG_0646

I grabbed a wooden kitchen mallet, stepped outside, squatted like I was using the bathroom in the woods, and smashed over 100 hazelnuts. Talk about being connected to your food. I then took my fresh nuts and made the inevitable. Hazelnut butter!

      IMG_0651

This has been on my foodie bucket list FOREVER, and I finally did it. OH.MY.GOODNESS. The flavor, unreal. AND IT WAS WARM. I added cacao (my latest obsession, not to be confused with cocoa) and stevia for a chocolate version.

      AND THEN I made these…

      IMG_0671

      Superfood Energy Bites

      Ingredients

      • 1 cup dry whole grain oatmeal
      • 1/2 cup ground flaxseed
      • 1/2 cup chocolate hazelnut butter*
      • 1/4 cup of honey + 1 tblsp
      • 1 tsp vanilla
      • 1/4 cup golden berries
      • 1/4 cup dried cranberries

      Directions

Simply combine your dry ingredients first, and then pour in your wet. Mix until WELL combined. Once combined, set in the fridge for 10-15 minutes to set. Once set, roll into bite sized balls, makes anywhere from 8-12 depending on your size preference.

      IMG_0669

*Note: I used my homemade cacao hazelnut butter, but you can use any kind you’d like. Add 1-2 tblsp of raw cacao to your nut butter (make sure it’s still creamy) if yours is without it.

The golden berries have a slight citrus bite to them, which balanced out the rich and creamy hazelnut butter. Golden berries and cacao are both super-foods, which basically means you’re eating a ball made of super powers. Not to mention the energy boosting powers of raw nuts, and flaxseeds too. Have I sold you on these yet?

      Oh

      Oh hey there golden berry.

These bites helped power me through my eight mile run on Sunday, which then resulted in a new to me taste courtesy of the Whole Foods hot bar.

      IMG_0661

      IMG_0663

See those crunchy clusters in the middle? Fried tofu. I can now die happy.

I’d happily run 10 more miles just to eat those clusters again.

      IMG_0703

Good thing I have some energy bites left.

Q: Ever made your own nut butters? It’s time consuming, but so worth it.

    • From Me to Her

Posted at 5:03 AM by Brittany, on February 10, 2014

I love Valentines day..always have, always will. Maybe it’s because it’s the day before my birthday, maybe it’s because I love any excuse to get mushy, or maybe elementary school really set me up for success with positive emotions attached to the holiday. How can any child NOT love making their own mailboxes and getting a shitton of candy!?

      004

I may be single this year, meaning I don’t have a strapping young man to shower me with broccoli trees, and vegan chocolates, but that doesn’t mean I can’t still celebrate. If anything, that just means I don’t have to worry about buying gifts or being disappointed by someone that’s not as excited as I am. I kinda sorta like any and all holidays.

      vday

This February 14th I’ll be spending my evening with one of my fellow single ladies for a vegan feast and a sappy movie, perfect. I wanted to give her a small gift, because any excuse to craft is a good excuse. I took some extra twine from this craft, some burlap bags I hoarded from Starbucks over the holidays, and bought myself a Mason jar.

      032

      033

      029

What you’ll need for this craft:

      • burlap material
      • twine
      • medium Mason jar
      • heart cutout (or whatever else you want)
      • scissors
      • fabric glue
      • something to fill the jar

      018

My date just recently made the switch to a plant based diet, so buying her sugar laden chocolates from the grocery store wasn’t an option. Besides, store bought treats are simply unoriginal, and turn your rump into a semi truck. I’m making her some energy bites, because I am obsessed and lied in my last post when I said I was done talking about them.

Of course I’ll be making her fresh bites, these ones were just for the photos..and for me.

      028

This craft was SO easy, and so much fun. I cut a small circle out of the burlap bag to fit the lid of the jar and glued it to the top of the lid. Then I wrapped some twine around the neck of the jar, and used the glue to connect the end strand to the middle of the wrap. This ensures the end is blended in and unable to be seen. The heart cutout was an up-cycle from a card my younger sister made, and it was the perfect addition! You can find similar items at Michael’s and punch a hole in the corner to stick the twine through it.

      021

I found this adorable heart box at Target for a whopping total of $1.00. Steal.

      023

A gift from me to her. I hope she likes it. 🙂

Q: How are you celebrating Valentines day this year? Single or attached?

    • Ohh, it is Lovee.

Posted at 7:01 AM by Brittany, on January 17, 2014

When I was younger I never understood the necessity of researching a product before I bought it. I was naive and brainwashed by society’s impatient need for something NOW. Thankfully, my dad is a research wizard and although it took me a while, I fully appreciate everything he has done to help me research and purchase anything “large.” My latest and greatest technological toy that was fully researched before purchase is a dSLR camera.

      20140114-084538

      Canon Rebel T3i

I knew what I wanted: a dSLR fit for a beginner, under $500, and with image stabilization. My main goal was to finally take photos without the blurry look I got with my iPhone. I Consumer Reported the hell out of each and every model within these three categories and finally narrowed the choice down to this one. Purchases are much easier this way.

      002003004

When my new toy finally came in the mail, I took it out for a spin. The three photos taken above were before I realized there was an auto focus button, and I had to manually focus these. Hence a bit of blurriness still. I also re-sized them, which I think affected the noise.

That Frango canister was filled with chocolates from a customer given to my coworkers and I for Christmas. I saw the empty can in the corner the other day and promptly snagged it, what a perfect decorative jar! I adore the vintage look it has. I had more decorative ideas that I snapped photos of to try and get a feel for my new camera.

      008009010

My loyal readers know I have an obsession with wood products. This three sectioned wood tray was originally filled with three different succulents. The succulents died, but I kept the jars and the tray knowing I would reuse it someday. I finally figured out what to reuse it for. The typical coffee bean and vanilla candle, it smells like cupcakes. LOVE.

I also filled a rose topped jar from with coffee beans, and discovered the camera flash.

      017

I sometimes have a tendency to not read directions. I’ve always been one to figure something out simply by playing with it. I think this will be the first time I have to actually read the manual because there are so many options and settings. These photos were all taken at random on random settings and they aren’t as crisp as I would like. I did take a few of my cats on the portrait setting that turned out great.

      014

Who says black pets aren’t photogenic!?!? LIES!

      020

So there you have it, some of my very first amateur photos with my new dSLR. These were all taken inside, while normally I go outside for natural light. These were also taken with the hands of someone that had no idea what they were doing. I look forward to coming back to this post a year from now and seeing if/how my photos have improved! I also can’t wait to start photographing some legit food porn.

      First photo of food.

First attempt at adding text to the photo. Very amateur. Click this photo for link to my recipe.

If you need to get a hold of me, I’ll be out with the trees and birds with this camera strapped to my face trying to get the perfect shot. New obsession commenced.

      Q(s):

      • Does re-sizing your photos change the quality?
      • What do all you photogs do in order to make a photo decently sized for a blog post, while still maintaining the quality?
      • Any helpful tips or tricks for a brand new wannabe?
      • Have you tried the coffee bean and vanilla candle combo? AMAZING.

    • Early Morning Confessions

Posted at 7:51 AM by Brittany, on June 23, 2013

      1. My black cat is starting to get grey hair. He is five, which means he is around a million years old in cat years. I’ve been helping him by plucking any that I find, he needs to find himself a nice girl to settle down with. Just kidding, he’s a mamas boy.

      2. I have been enjoying a lot of nature. Big surprise.

      20130622-112201

      3. My soul feels full of life after spending time with old friends.

      4. I have been eating the most random food creations. I have been coming home at the end of my days ravenous, and waiting even 5 minutes for some cous cous to cook just isn’t going to work. Insert, “anything I can wrap inside a tortilla.”

      20130622-11222820130622-112247

      5. I ate a few things this week that had dairy in them. Oops. C’est la vie.

      6. My running has been amazing. I just don’t know where my “speed” is coming from, but I am surely not complaining. My last run was exactly one second faster per mile than my fastest pace. Making this overall time 7 seconds faster than my fastest time. Every single second counts. EVERY SINGLE ONE! 8:xx/miles here I come!

      20130622-112213

      7. I have a blog post in my drafts that has been there for almost a month. I am struggling to find the courage to post it.

      8. Lately I have had a lot of faith. Faith in life, faith in my future, and faith in myself. I found a new ring that I promptly bought for myself without a second thought. I love it.

      20130622-112253

      It’s perfect.

      9. My blogging has been very lazy lately. I’ve been rather boring, and rather busy. Instead of blogging about my cats diarrhea, and boring meals, I just don’t blog. You all understand.

      10. Most recipes I make are a one time deal unless I drool excessively. There are a few recipes I swear by, and my energy bites are one of them. I make them way too much.

      20130622-183932

      Q: What’s your confession?
