      Note: I did not come out looking like this. I was 8 mo. here, and already loving everything Halloween.

      – 1991: Stepped on a giant slug, proceeding to give me a life long phobia. Real talk.

      – 1992: Had the best hair I’ll ever have, this cannot be repeated.

      – 1997: Became the coolest kid on the block with my authentic Japanese Pokemon cards. Thank you dad for living in Japan and sending me this gold.

      – 2000: Hit puberty, tried to fight it by wearing the same soccer shorts and Old Navy tech vest…everyday. This lost me my title of coolest kid on the block.

      I also had a hair cut like this for years…thanks mom.

      – 2004: Introduced myself to coffee at the orthodontist (totally ironic.) Put enough cream and sugar in my cup to give five people diabetes for life.

      – 2005: Got braces. This sparked my fascination of teeth.

      – 2012: Gave up all animal products, and perfected the art of roasted vegetables. Ran my first half marathon through the happiest place on earth.

      – 2012: Sparked my insatiable appetite for cupcakes.

      – 2013: Had a life changing breakup with aforementioned boy, which taught me peace, patience, and balance. I’m now very (possibly too) comfortable being alone.

      – 2013: Got a job at Starbucks. Cracked out on coffee even more than at the orthodontist when I was 15. Discovered a new passion for the bean.

      – 2014: Fell in love with the mountains and with my life, despite my always changing path. Learned that change is constant and adaptation is key.

    • Starbucks Christmas Espresso Coffee Tasting

      Over the summer I took a general biology class to kick start my back to school adventures. It was the first of four classes I needed to take in order to apply to a holistic nutrition program, and it was a fantastic class. It wasn’t easy, but it also wasn’t hard. I learned a lot and had plenty of free time to spend my summer in the mountains.

      Fast forward to now and my life consists of chemistry and Starbucks. One of these is not like the other. By that I mean I love my job, and I hate my class. I’m in a constant mood of “blah” and I miss my mountain adventures. Things feel chaotic and I am no longer in a constant place of zen.

      I’ve realized spending each and every day stressing over one class is doing nothing but damage. My grade isn’t benefiting from my stress, and my happiness is nonexistent. In an attempt to balance my life again I’ve decided to focus on myself, and not feel guilty about it. When I’m done with my school work for the day – I’ll be done. I will do something for myself and not think twice.

      OK I may think twice at first, but in time I hope to balance out my work and play. I started with an at home coffee tasting pairing Starbucks 2014 espresso blend with a pumpkin fudgy cookie.

      Life is too short to be miserable, and this class is not worth my stress. If I do the work, I know I will be fine. So I put away my books and turned on my oven to create this mouthwatering pairing.

      These cookies are VERY rich, but mildly sweet. Think of them as a breakfast cookie, making them an acceptable pairing for your morning cup of coffee – specifically this espresso roast.

      Pumpkin Fudgy Truffle Cookies

      Ingredients

      • 1 cup pumpkin puree
      • 1 cup almond butter
      • 3/4 cup cocoa powder
      • 1/4 cup maple syrup
      • 2 tsp cinnamon
      • 1/3 cup raw/organic cacao nibs

      Directions

      1. Preheat oven to 350F
      2. Combine all items except the nibs in a food processor or large bowl and mix until well combined. Add in the nibs and scoop each cookie onto a lined baking sheet, or use a pizza stone like I do. This made 12 cookies.
      3. Bake for 12-15 minutes or until tops are firm and center isn’t mushy.

      These cookies are soft like a truffle, fudgy like a brownie, and round like a cookie. It’s the best of all three worlds. The raw nibs balance out the sweetness of the maple syrup, but for a sweeter cookie use regular chocolate chips instead. I’m trying to behave with my sugar intake. Trying.

      Tasting Notes: The espresso blend has a caramel sweetness to it that pairs beautifully with flavors of pumpkin, cinnamon, and spices. The acidity is low and the body is full helping to enhance the pumpkin flavors of these cookies. Each bite and each sip came together holding hands like two preschool kids on the playground. Two thumbs way, WAY up for this blend.

      This coffee will be available to the public sometime next month. I know it’s not even Thanksgiving yet, but I just couldn’t resist this deliciously smooth coffee. A warm cup of the holidays is the perfect way to slow down & appreciate life one day at a time, wouldn’t you agree?

    • Coffee Tasting for One

      My life has been taken over by chemistry. If I’m not doing chemistry- I’m working. If I’m not working – I’m running. If I’m not running – I’m eating, and if I’m not eating – I’m sleeping. Catch my drift? It amazes me how I ever got through chemistry when I first started college a few years ago. Either I wasn’t dedicating enough time to the subject, or…no that’s about it.

      I am now spending HOURS on my homework everyday, and I am only taking one class!

      I found myself with a free afternoon last week and while I would have loved to be out exploring the mountains, time did not permit such an activity. Instead, I drove 40 minutes out of my way for a cup of coffee and some grocery shopping. Starbucks + Trader Joe’s = BlissfulBritt. <–corny.

      Trader Joe’s wooed me with its fall themed charm, and infamously cheap squash. Where else can you buy all that squash pictured above for $10? No where I tell you..a single honey crisp will cost you $3, and a spag squash of this size could easily cost $6 elsewhere. Joe-Joe’s are priceless…

      Conveniently tucked next door to this TJ’s is a Starbucks Reserve store. This is why I drove out of my way. Actually it’s the combination of the two stores, but this post has coffee in its title so I’ll focus on that. The Starbucks I work at is not a reserve store, so in order to enhance my coffee knowledge I like to try the rare coffees that these stores sell. Plus after 3 hours of straight chemistry I needed to study something I was actually passionate about.

      Unfortunately what I asked for is not what I got. Knowing very little about these coffees (precisely why I want to try them) I asked the barista working which of the five they offered had the most cocoa notes. What he gave me happened to be the complete opposite, but I drank it anyway. This is what I get for not doing my homework before I walked through the door. Lesson learned.

      I’m not a fan of “bright”/ highly acidic coffee’s, and this one was very citrus-y. I wouldn’t buy it again, but I took some notes to add to my memory bank, and now I know how to describe this blend. Mission accomplished. Coffee and squash made for the perfect afternoon.

      While at TJ’s I briefly (all of 3 seconds) contemplated purchasing their pumpkin spice coffee. I realized how absurd this would have been due to the fact that I have pounds and POUNDS of (free) coffee at home, and all I needed to do was add my own spices to my french press. This morning that is exactly what I did. I added 1/4 tsp of pumpkin pie spices and 1/4 tsp of cinnamon to 5.5tblsp (and about 24oz H2O) of the already subtlety spiced blend Komodo Dragon.

      Life is good.

      What kind of Coffee Master would I be if I didn’t announce and partake in National Coffee Day (NCD)?? Today is the day where coffee is recognized for all its wonderful abilities, flavors, pairings, benefits, and social affairs. Today is the day I have an actual reason to celebrate my love for the bean, not that I ever felt like I needed one! You can’t stop love I tell ya.

      In order to honor this day I prepared a tasting for myself, some of my fellow coworkers (including a regular customer,) and even my mom! It’s never a wrong time for a coffee tasting, and I often spring them on my fellow baristas when time permits, but it’s an absolute MUST for NCD.

      For this tasting I also wanted to honor the arrival of fall, because fall and coffee go together like cayenne pepper and sweat. My usual one cup a day habit has found its way to a “once in a while” two cup habit simply due to the cozy feels I get with a hot mug on a rainy afternoon. I feel warm and fuzzy just typing that out. Where was I..OH yeah, FALL!

      For starters I went with the obvious – pumpkin. A light and fluffy pumpkin spice sugar mini muffin to pair with Anniversary Blend one last time before it’s gone for the season. Have you snagged yourself a bag yet? It’s only going to be around a short while longer.

      Pumpkin Spice Mini Muffins

      Ingredients

      • 1 3/4 cup whole wheat flour
      • 1/2 teaspoon cinnamon
      • 1/4 teaspoon pumpkin pie spice
      • 1/2 teaspoon allspice
      • 1/8 teaspoons ground cloves
      • 2 teaspoons baking powder
      • 1/2 teaspoon salt
      • 3/4 cup pumpkin puree
      • 1/2 cup almond milk
      • 1/2 cup brown sugar
      • 1/3 cup melted coconut oil
      • 1 chia egg ( 1 tblsp chia seeds + 3 tblsp water)
      • 1 teaspoon vanilla extract

      For the cinnamon sugar topping: coconut oil, cinnamon, and raw sugar.

      Directions

      1. Preheat oven to 350F, and prepare a mini muffin tin with coconut oil on the side to prevent sticking. These also successfully make larger muffins if you prefer those over the mini version.
      2. Make your chia egg and set aside for it to coagulate while you combine your first few ingredients.
      3. In a large bowl combine your flour, cinnamon, pumpkin pie spice, allspice, cloves, baking powder and salt.
      4. In another separate large bowl, whisk together pumpkin puree, almond milk, brown sugar, melted coconut oil, chia egg and vanilla.
      5. Pour this wet mixture into your dry mix and stir using a wooden spoon until combined.
      6. Scoop batter evenly into you muffin pan.
      7. Bake for 10-12 minutes, or until a toothpick comes out clean.
      8. Allow to cool, and then top with cinnamon sugar mix.

      For the cinnamon sugar topping: I used 1/2 tblsp cinnamon, and about 3 tblsp sugar. I melted a little bit of coconut oil at a time and rolled the top of each muffin in the oil before rolling into the cinnamon sugar mix.

      Tasting Notes: The spicy notes from the cinnamon, and smooth flavors of the pumpkin paired beautifully with the crisp and spicy flavors of Anniversary Blend. Anniversary Blend alone can be a bit sharp, but the sugary coating to the muffin harmonized perfectly to tone down the flavor of the coffee. These muffins were AMAZING.

      Next I played it simple and somewhat safe. I made dark chocolate covered Fuji apples rolled in pumpkin seeds, and paired them with House Blend. For those of you that like an all around medium roast (medium body/acidity) I highly recommend this one, it’s very smooth.

      Assembly for these was simple – melt yourself some dark chocolate, cover as much of the apple as you desire, crush some pumpkin seeds, and roll the apple in the seeds. Voila.

      Tasting Notes: The rich cocoa and nutty seeds harmonized AMAZINGLY with the smooth, balanced body of House Blend. The cocoa notes stood out the most, and I was surprised by how well these paired together. House has a distinct nutty/cocoa flavor, and while this is a coffee that can be savored easily on its own, combining it with the chocolate takes your palate party to an entire new level. That’s a party I always want to attend.

    • What I Learned in LA

      I’d like to dedicate this post to my homegirl Gigi, without her this post would not be possible. A fantastic host and friend, she drove me all over the place in order to satisfy my sweet tooth, and my Disney obsession. Mad love for you G. ❤ ❤

      Here’s what I learned on this trip to LA:

      1. Local coffee costs the amount of a small child’s root canal and despite being really cool, (personal pour overs that resemble a 9th grade science experiment, cool beans.) $5 for a drip coffee resulted in trips to Starbucks for the rest of my trip. $1.90 drip coffee is more like it.

      In all reality though the pourover I got from Commissary in West Hollywood was fantastic.

      2. Vegan and gluten free bakeries are just as abundant, if not more popular here than in Seattle. I felt right at home in this aspect. Breakaway Bakery takes the cake (pun very much intended) for my second favorite treats. The Bearded Lady will forever have my heart at the top.

      Also delicious was Rising Hearts Bakery in Culver City. I balanced this bakery visit with a trip to Cafe Gratitude right before. I eat green so I can eat three desserts at once.

      Side note: my back is a wreck and I have knots for days. Help me, I pay in cookies.

      5. The LA farmers market sells nut butters that are so good you will be willing to spend double on them in order to ship them to your house. I brought a carry on bag, and in order to avoid the possibility of the airport throwing my beloved jars away I mailed them to myself.

      6. Disneyland is better when littered with pumpkins. I can’t think of anything better than combining two of my favorite things: Disneyland + fall/Halloween = pure bliss.

      What happens when I have random pictures/things to talk about, but haven’t blogged in a week? You get random pictures tied to random things to talk about. What can I say, I’m living life. I’m also going to Disneyland with this babe in less than a week and about split my pants I’m so excited. Or maybe that’s from the cookies…but I digress.

      All you haters can just stuff it because summer is done in my book, DONE!     • Early Morning Confessions

      1. I have fallen in love with smoothie bowls. Can’t stop, won’t stop.

      2. One of my regular customers came in without his wallet last week. I told him breakfast was on me and not to worry about it (the perks of being a regular.) He insisted he would come back to pay, and sure enough he did.  Along with paying for his coffee and lemon loaf he proceeded to buy a $20 gift card, and then gifted it to me. Humanity can be wonderful.

      3. I also channeled my inner Pocahontas last week and canoed myself just around the river bend.

      Or Lake Washington, same thing.

      4. I’m done with school for one month. I walked away from my summer biology class with a 4.0.

      5. On Saturday I hiked Mailbox Peak again. I didn’t even wait a full 30 days before going back. It was even more brutal the second time. I won’t be hiking this one again for a while.

      6. The day after the hike (yesterday) I had a Sunday long run. Ouch.

      9. Speaking of balls…I’ve become obsessed with coffee tastings and parings. Like, it’s all I think about when I’m not thinking about running, eating, or breathing. Nothing says fall like Starbucks annual Anniversary Blend. I wanted to do a tasting to highlight the spice notes along with some maple and pumpkin oat flavors. So I made some Maple Pumpkin Pie Oat Bites.IMG_2190

      Maple Pumpkin Pie Oat Bites

      Ingredients

      • 1 cup + 1 heaping tblsp uncooked oats
      • 1/2 cup ground flax seed
      • 1 tblsp cinnamon
      • 1/4 cup creamy almond butter
      • 1/4 cup canned pumpkin
      • 1/4 cup maple syrup
      • 1 tsp vanilla
      • heaping tblsp raw pumpkin seeds

      Directions

      1. In a medium sized bowl combine oats, ground flax, and cinnamon. Mix well.
      2. Stir in your remaining ingredients until well combined.
      3. Place the mixture in the fridge for 15 minutes.
      4. Roll the mixture into approximately 1 inch sized balls. Makes 10-12 bites.
      5. Store in air tight container.

    • Coffee Master Certification: My Coffee Tasting/Pairings

      IMG_2139After months of reading, tasting, talking, exploring, and learning all I can about coffee (alone, and also coffee and Starbucks together) I am finally a certified Coffee Master. This journey focused on coffee history, geographic origins, coffee agriculture, sourcing and buying, green coffee quality, the art of roasting and blending, and my favorite part:

      -coffee parings/tastings/flavors/notes.

      Coffee, like wine grapes, gets much of its flavor from the specific growing conditions and processing methods of whatever region it was produced in. Three of the main coffee producing regions are: Latin America, Africa, and Asia. Each of these regions have specific flavor characteristics that give each coffee blend its distinct coffee “notes.”

      What’s a coffee note you ask? Certain flavors are detected in coffee’s that allow them to harmonize well with certain foods. Have you ever had a cup of Joe that just didn’t mesh well with your blueberry muffin? This is due to the specific notes present with each blend. Alone this coffee may be just what you’re looking for, but when shared alongside a meal you’ll want to be a bit more particular.

      Coffee blends alone may survive just fine, but when you combine them with the right foods the harmony is out of this world.

      Lets break down the top three regions by their coffee notes.

      Latin America – high balanced flavors of cocoa or nuts, as well as a crisp, bright acidity.

      Africa – Floral and citrus characteristics.

      Asia – Full body and spicy flavors with balanced acidity and herbal notes.

      Part of my final certification was putting together a coffee tasting. As a food AND coffee lover you can imagine my excitement when the two come together. If anyone is interested in learning more about a proper coffee tasting with coffee alone, let me know in the comments.

      I chose one coffee from each coffee region, plus one coffee that is multi-regional and paired each with different foods.

      Kenya – An African grown coffee with complimentary flavors of grapefruit, berries, currants, raisins, and oranges.

      For this pairing I made an orange and currant quinoa salad. Sounds bizarre right? Oranges, quinoa, and coffee? This went together SO well it was almost magical. I could have cried from the joy I felt.

      Komodo Dragon – An Asia/Pacific coffee with complimentary flavors of cinnamon, maple, buttery breads, and pastries.

      For this pairing I chose almond butter stuffed dates sprinkled with cinnamon. The flavors harmonized almost perfectly. This is a common breakfast pairing for me, except I also use a rice cake for my base.

      Guatemala Antigua – A Latin American grown coffee with complimentary flavors of cocoa, apples, caramel, and nuts.

      Organic Yukon – A multi-regional blend with beans from both Latin American and Asia. This blend is mellow and well balanced with complimentary flavors of cinnamon, raisins, oatmeal, and chocolate.

      Due to the cocoa and chocolate notes in both of these coffee’s, they both paired well with some chocolate chip coffee cookies. I used fresh ground Yukon beans in the mix for these cookies. I also paired these two coffees with some toasted coconut cashews.

      While these all balanced well together, I found that the Yukon paired a bit better with the cookie, and the Guatemala paired a bit better with the cashews. Guatemala has more nutty notes while Yukon has more chocolate notes so this made complete sense.

      To conduct a proper tasting, each coffee should be brewed with high quality water, a proper grind for your brewing method, proper ratio of water to grinds, and your coffee should be fresh. Coffee should then be tasted in it’s pure form, without the addition of milks and sugars.

      Lucky for me I am a black coffee connoisseur so conducting tastings is naturally one of my favorite things to do. Tampering (or destroying in my humble opinion) with the coffee by adding milk or sugar hinders the natural flavors from being detected. Not a fan of black coffee? That’s OK, I don’t like beer..we all have our downfalls. 😉

      • Have you ever payed attention to how certain coffees can CLASH with certain foods? For example the orange quinoa salad would have been TERRIBLE with any of the other coffees I mentioned in this post.

    • Quality Over Quantity

      Over the last couple years I’ve become very content spending a lot of my time alone. This is nothing new, as I have been blogging about my solo adventures for quite some time now. To put it bluntly, I’ve found there are very few people I actually want to spend my time with.

      With that said, the rare times I do spend with other people I am very picky about who those people are. My time is valuable to me, and I don’t have the energy to spend time with people that don’t add anything beneficial to my life. We all deserve quality connections.

      I don’t say this to be harsh, I say it to be real.

      After visiting the Starbucks corporate office, my two gal pals and I headed North to hike Rattlesnake Ridge, a hike I’ve done multiple times now. Leave it to me to suggest a hike as part of our activities.

      I adore these girls to pieces, but they are both leaving me very soon. One is moving to another Starbucks about 15 miles away, and  the other is moving to another Starbucks (and school) in IDAHO! 😦

      I don’t have a lot of friends, but I have quality friends and that’s what matters most to me. The kind of friends that you can go months without seeing, and pick up right where you left off.

      It’s also necessary for me to spend my time with people that understand/accept my personality, and that share similar interests. Friendship is like dating – the ones that don’t mesh well, don’t evolve and end up in a split. It also helps when they’re equally as quirky.

      The point of this post was not to allow me to ramble, but simply to highlight the fact that like most things in life: quality over quantity.

      Q: Do you prefer spending your time in large groups with a lot of people, or being more selective on time spent with others? I don’t mean like a party, because that’s a different situation. Just in general everyday friendships.

    • A Few Pieces of Starbucks Knowledge

      I really enjoy my job. It’s the kind of job that you’re excited to go to and are constantly wanting to learn more about. There is something about coffee that inspires me and I can’t seem to get enough.

      Most people don’t know this, but Starbucks does a LOT for its communities, and even more for the countries where they buy their beans from. People often jump to conclusions about Starbucks because it’s such a big corporation, but really they are very passionate about what they do, and giving back is huge.

      Did you know that Starbucks pays for employees to volunteer? I don’t mean the employees get paid, but the places where we volunteer get money for the hours we put in. #extrashotofgood

      Did you know that in an effort to ensure a transparent purchasing process, Starbucks developed something called C.A.F.E practice?  This ensures that quality of life for coffee farmers is ethical, pay is accountable, quality is high, and all environmental needs are met.

      Did you know that on top of paying a premium price for ethical sourcing (giving them high quality arabica beans) Starbucks helps coffee farmers with financial support when funds are low?

      IMG_1954I finally took the time to visit the Starbucks Center in Seattle, also known as Starbucks Headquarters. It’s kind of a big deal. I’m fortunate enough to live in the area where Starbucks first started, and visiting this location was just a hop, skip, and a jump across the water.

      Unfortunately without being an employee of the actual corporate building, I had limited access to the inner offices. I did get to explore the Starbucks shop, and enjoyed a free cup of “visitor” coffee.

      I’m still very much of an equal opportunist, and I adore local and small coffee shops too. I think trying local coffee is one of three great ways to explore new areas, and while I love Starbucks I don’t always go to one when I am traveling somewhere new. Local coffee usually wins.

      Seattle is a different story though, being the birthplace of Starbucks.

      It was a great experience to visit the place where all the magic happens so to speak.  Maybe one day I’ll have the opportunity to venture behind the “badge entrance only” doors.

      Until then I’ll continue making coffee I’m proud to sell, and educate people on the details that go down “behind the scenes.”
