There is something magical about a morning cup of coffee.
Not just any cup, a morning cup. The cup that allows for relaxation with the paper, the internet, a book, or with a friend. The cup that allows last nights dinner to be safely excreted from your body. The cup that gives that morning pick me up after a long night of work, school, or llama wrangling.
While I love coffee in its more common form of a liquid, the beans and grounds are becoming a quick favorite of mine when it comes to baking. I made my basura cookies last week, and they didn’t stand a chance lasting more than 2 days. The coffee grounds in these cookies really stole the show. Here’s another favorite with the addition of some coffee grounds.
Energy bites SHOULD have coffee grounds in them, don’t you think?
Coffee Ground No Bake Energy Bites
Ingredients
- 1 cup dry whole grain oatmeal
- 1/2 cup ground flaxseed
- 1.5 tblsp fresh ground “unused” coffee beans *
- 1/2 cup creamy almond butter *
- 1/4 cup of honey
- 1 tsp vanilla
- 1/4 cup chocolate chips
- 1/4 cup dried cranberries
*Notes: Peanut butter also works in place of the almond butter, however both MUST be creamy, and preferably store bought jars. While I love my self ground nut butters, they are much too dry for this recipe. When I say coffee grounds I mean take fresh beans, grind them, and use those grounds in the recipe. DO NOT brew them, and make sure your coffee is FRESH, old coffee will result in minimal coffee flavor. Also, the finer the grind of your coffee beans, the better the texture will be. If your coffee is too coarse you risk developing a cat like sandpaper tongue.
Directions
Stir your oatmeal, flaxseed, and coffee granules together in a medium bowl until thoroughly mixed, then add your almond butter, honey, and vanilla. Once well combined fold in your chocolate chips and cranberries. Stir well! Let chill in the refrigerator for 20 minutes. Once chilled, roll into balls of whatever size you would like, I usually make 10-12 balls. Store in an airtight container and keep in the fridge for up to 1 week…if they last that long!
These are some of the best balls I’ve made yet. The addition of fruit, chocolate and coffee made for a flavor explosion. They won’t last a week.
These pair perfectly with..guess what..a cup of coffee!

No no no the coffee candy is shit!! Do not let that be your judge factor!! I drink my coffee black to really get the flavor!! I love Starbucks Pike Roast, Starbucks Blonde Roast (a bit lighter flavor), Peets Major Dickinson, Paul Newmans, right now I am drinking Starbucks Christmas blend!! Head into Starbucks sometime and just try a small one of your choice! If you hate it, then now you know! You may just like it though! I haven’t tried many blends I didn’t enjoy.

I’m a bit intimidate to go by myself to order coffee because there are so many different blends to choose from! It’s like chocolate: there’s milk, bittersweet, and so many types of dark (68%, 72%, 85%, or 99% for the hardcore fans). Maybe I’ll go with the Blonde Roast first… Although I think my dad loves the Major Dickinson from Peet’s too. Ahh decisions!!!

As a barista (from Starbucks no less) I would recommend the blonde roast for a first timer! Put some milk (or soy milk/almond milk if you’re non-dairy) in it and enjoy! Brew carefully, because the way you brew it can have an effect on the overall taste. Enjoy!

Yes! I only use a French Press. They’re relatively inexpensive. I use 4 tablespoons of coffee ground for French Press (your baristas at Starbucks can grind it for you) then fill it up with slightly less than boiling water (leave the kettle for 30 sec – 1 min after it finishes). Let it steep for 4-5 minutes and then push down on the press. Voila! Coffee 🙂 the cheap and inexpensive way!

I had no idea! My dad always had the stereotypical coffee maker sitting on the countertop, although it recently died and he upgraded to something extremely nice and spiffy… But I don’t have the counter space or money to do the same!

Exactly! I actually hate drip coffee makers (or they hate me). Regardless, we don’t get along! I can’t make coffee to save my life on those. But a good French Press (you want one that will keep the coffee warm for a while, because they don’t have the hot-plate feature of a coffee maker) plus a little coffee can have you drinking your morning joe for under 50$!

Do you have a french press? Or a tea press? I use that a lot too. Or possibly even one of those things that are used to steep tea without a tea bag. Amalia might have a better suggestion!

My boyfriend is a coffee drinker! and he loves it iced most of the time. He got a french press from a friend and decided to research and if you want cold coffee he puts the coffee grounds in and just uses cold water. he puts the grounds in the fridge overnight and then when he wants to drink it in the morning he presses the grounds down. he loves it!!

Organic coffee isn’t standard Starbucks fare, although some carry a few bean types. With all the pesticides, well, get organic for first time and always. There are some delicious organic light coffees out of Mexico – Whole foods has them. Delish with this recipe! Yom yom.

I LOVE coffee! I got a Keurig for Christmas and enjoy it so much more. I use sugar and coconut milk creamer. I get cranky if I don’t get to relax for a little while with my morning coffee. It just makes the day better. I don’t need coffee, I need that time with coffee though. There is just something about holding a warm mug in my hand and slow sipping away that takes me to a happy place.

I LOVE this post. I agree – there is something so magical about my morning cup of coffee. I go to bed every night looking forward to the next morning so that I can wake up and relax with my morning cup.
Another thing I love to do is to visit a coffee house while it’s still dark in the morning (around 645-7AM.) The first pots of coffee are brewing and the scent of fresh baked goods are in the air – Ah! Perfection.

Is it ironic that I am sipping on some java as I read this? I LOVE my coffee and since I started drinking it without sugar/sweetener, I feel that much more of a legit coffee drinker haha…I can’t believe I just admitted that! Seriously though, I try to limit myself to one cup in the morning & 1 in the evening and both make my day on a daily basis- yum! That all being said, it’s probably no surprise I am all over those balls (no TWSS jokes please ;))!

Yes, the morning cup of coffee is something special! That first whiff, and then the taste…none of the subsequent cups can measure up. I do like chocolate covered expresso beans. But who thought up iced coffee drinks? Cold coffee is never a good idea.

yummy!! i definitely think the better quality the bean the better quality the baked use of it will be. a lot of recipes call for “instant coffee” and there are some good ones, but there are a loooooooooot of nasty ones! if you wouldn’t drink it, i say don’t eat it!

“Coffee grounds” are typically defined as “the dregs remaining after brewing coffee.” Might the recipe be re-worded, perhaps, to say freshly ground coffee or coffee granules or maybe even add the word un-brewed? “Fresh” isn’t enough to signify uncooked. I thought it was odd that out of all these comments only a couple people seem to have made them. Perhaps that’s why? I’m going to make them now but am certainly glad I didn’t use “fresh coffee grounds” as called for!

Can I use raisins instead of dried cranberries? And does it matter what kind of chocolate chips I use, or the brand? I’m thinking of selling these to pay for a school trip, but I want to iron out all the kinks before I try.

You could definitely use raisins, or sometimes I even leave the crasins out all together and just add more chocolate chips! As for the type of chocolate chips just use your favorite. I use semi sweet or dark chocolate chips because I don’t eat dairy! They have a better flavor than milk chocolate anayway! 🙂 I’d love to hear how they turn out for you!

I just made them, and they turned out pretty good! I didn’t have any chocolate chips, so I just used raisins. My brother said they were good, but he’ll eat anything. I’m thinking of giving out a couple in individual little bags to some friends, to see how they would like it.

The chocolate chips are really what balance the coffee and nut butter flavor for these!! You can get by without them, but they do make the recipe complete! I would definitely try them again with the chocolate if you can. 🙂 Glad your first batch turned out OK!

Hi Lila, thank you for your comment. You are correct about Starbucks not having “certified” organic beans as a standard (aside from a few like you said), but they have developed their own practices designed towards ensuring quality coffee with minimal pesticides. The beans Starbucks purchases are also arabica beans, which are grown at a higher elevation where many pests do not live, resulting again in minimal pesticides. In order for all of Starbucks beans to be certified organic, outside parties would need to be involved which would take a lot of time away from the farmers that rely on Starbucks purchasing their beans for income. I would love for more of their beans to be certified for my own peace of mind, but for now I’m OK supporting the company and their choices. When given the option, I’ll always choose organic. 🙂

How would these hold up in the heat, say in the back of a bike jersey? Any one try that yet?

I’ve had them mashed into my pockets before, had them sitting in a hot summer car, and they held up great! It all depends on the nut butter you use and sticking to the recipe. Also making sure you take the time to roll the balls into compact pieces!

I have a batch of these chilling in the fridge right now. I had to do some work to figure out the nutrition facts for these and they sure do pack a punch. I will try to make my balls really small and have one as a snack. Have you thought about incorporating nutrition facts with your recipes?

While I know some people enjoy knowing the stats on food, I don’t find that to be beneficial. As long as something is made from whole foods (I’ve since cut down the sugar added to these and don’t make them all the time-they’re more of a treat) I find that eating intuitively works best for me. If something makes me feel good I eat it and vice versa. I hope you enjoy them regardless and thanks for giving them a try! 🙂

I just made these with a couple of substitutions. 1) I used tart dried cherries instead of cranberries and 2) instant espresso instead of ground coffee and they are great! Thanks for the recipe!

How many calories are in these bad boys? And how many is in a serving? 1, I assume?

I don’t calorie/serving count my recipes, but if you punch the ingredients into something like My Fitness Pal it will break it down for you. They aren’t low calorie, but a much better snack than potato chips.

Do you measure the coffee before or after you grind it? And are there any other fruit suggestions that might work? I’m not a big fan of cranberries.
Absolutely love coffee. Don’t like coffee candy. Haven’t had much luck with coffee ice cream.

Excellent question, AFTER you grind it. Any dried fruit will work, raisins, dates, blueberries, cherries. 🙂

I love everything coffee flavored, except coffee! Whenever something candy wise is offered coffee flavored, I take it. I never actually fully tried coffee drink until today. I put some grounds into a cup, added water, sat it by three campfire until it started to bubble and then I took it off and let it sit a bit. By the time I came to drink it, it was disgusting… I love dark chocolate 70-100% and 100% coffee sucks! I added some honey and cinnamon, it didn’t do the trick, then I added half and half until it looked like a cappuccino from Starbucks (at least what I see on the shelf at Walmart) then I tried and it was better. Now it’s in the fridge to chill and I’ll see how I like it….. and that’s why I came here, to make something I could eat in coffee form. I’m going to try this the moment I get the chance and will probably add more coffee than listed to get the full energy boost I want. I love PB and eat it everyday, so this is perfect for me. I don’t have fresh coffee or even fresh ground, I just have a store bought can of it, not sure what it is other than original lol and if I come to like black coffee I’ll carry unroasted beans with me on camps so I can get the fresh experience. Thanks!

If you lived in my neck of the woods I’d make us cups of coffee until you found one you enjoyed! Making coffee is an art and there is also science to it! I don’t blame you though, I’m not a fan of wine or beer and am convinced I just haven’t found the right one. Either way I think you’ll love these bites, they are fantastic! Great recipe, thanks! I’ve just done a second batch for snacks at work this week. To keep them together and make sure they don’t cry le if warm-I dipped in 85% melted chocolate and sprinkled some extra coffee on top for a double kick. Love love love them!

I absolutely love coffee. Sadly it doesn’t agree with me too well. So I sometimes try to not drink coffee anymore, get terrible headaches for two weeks and then feel good for a few months not drinking coffee. But then I crave the taste so badly, that I will drink it again … it’s an addiction! 😉
At the moment I drink a cup of coffee every morning while learning Swedish (the Swedish love their coffee, too, they even have a verb for “taking a coffee break”: att fika) and I will definitely try these lovely energy bites of yours.
