    • So Long Spoooooooky Season

      As we say goodbye to October, my favorite month, I want to share a few highlights. October is my favorite for many reasons. The transition to autumn warms my soul, the weather changes to cooler days, and spooky season sets the tone for month after month after month of celebrations. For the last four October seasons, Duncan and I have made a habit (along with many others) of visiting a pumpkin patch/corn maze. To me this signifies the official change from September to October.

      We have two main rules when it comes to this pumpkin patch tradition: the patch must ALSO have a corn maze (no maze, no go), and we must go to a new patch/maze each year. No repeats.

      This year, my first October highlight (and our new to us pumpkin patch/corn maze) brought us about an hours drive away to Carpinito Brothers Farm. At first glance I wasn’t sure I would like this one because it was right off the freeway. Thankfully we were able to feel like we were tucked into the farm without hearing the cars driving by.

      We chose to start with the corn maze, and thankfully Duncan is directionally savvy, because I am not. I tried to read the map at the same pace he did and I have no idea how he walked so fast knowing which way to go. I am someone who likes to have control over most of my situations, but this is one I’ll happily pass the baton with. Let me be the wandering corn troll over the fearless leader.

      After Duncan finished finding each location within the maze, I needed a snack.

      Plain roasted corn without anything on it allowed me to scour the pumpkin patch for this years chosen gourd. It didn’t take long, partially because I was boiling due to my mistake of wearing a sweater on the last 72 degree day of the year, and partially because the corn wasn’t sitting well. We both found our choices and completed another successful early October adventure.

      This adventure gets me into the spirit of my favorite month, but it didn’t quite feel like enough. I haven’t participated in anything Halloween related for a while, and I felt like this year I needed a physical goal after a long season of hiking. For October highlight number two I decided to sign up for a Halloween 10k. I spent a month getting myself from hiking shape back into running shape.

      I had no expectations for this race, I just wanted to show up and have a good time. I wanted to dress up, but also wanted to be able to comfortably run, so I settled on an easy classic.

      This race was so much fun, and there were hundreds of other costumed runners. Surprisingly I only saw two other Waldo’s (I expected to see a lot), but I saw a TON of Forrest Gump varieties. I hadn’t been running much at all since my half marathon back in May, and I was hoping that 27 days would be enough time to get me into shape for a 10K.

      Each of my training runs I dragged, and I was certain I would have to walk at some point (or at least run verrryyy slow), but not only did I manage a 10:02 pace for this run, I placed third in my age group! This will never happen again, and I credit this to the fact I was running a themed race amongst many who might not run much, but I will take the win where I can get it.

      My Garmin captured a 10:02 pace as I went a bit off course and had more than 6.2 mi.

      I didn’t notice the award winner section until after I was home, many hours after the race. I discovered I was supposed to pick up a 3rd place ribbon and I was bummed that I missed this, so I sent an email to the company. The race director wrote me back saying he would mail it to me, and when I say this made my week I am not exaggerating.

      This is a small victory for average runners alike. LOL.

      The race just so happened to be about 2 minutes by car from my current favorite GF bakery (this was soooo not planned), and Duncan and I promptly went after I was done running. We had a feast of treats, and I can’t think of a better way to finish running 6.2 miles.

      I’m still in a coma from those beautiful baked goods. Pumpkin is the theme for October, cliche or not I go all in. To round out all the October highlights, Duncan and I carved our pumpkins from the patch just before Halloween. We decided to carve surprises and not tell each other what we were doing. Imagine how hard I laughed when we revealed our masterpieces.

      Duncan said mine (the big one) looked somewhat like a red panda, and he thought his (the small one) had a neck that looked like it spent too much time in the gym. Because of this he wanted to put a ribbon on the neck, and I think it looks great. I was happy with how they both turned out, and they looked even better illuminated on Halloween.

      While I was sad to say goodbye to October, I look forward to settling into the slower pace of life that November and December will bring. November brings a special birthday for Duncan, and the restlessness that I will inevitably feel will encourage me to do something impetuous. Like sign up for a spring half marathon to give me a winter training focus. Who knows…

    • Autumn Has Arrived

      I have been making a habit of visiting Trader Joe’s about once a week in the last year, and on each visit I was counting down the days until I saw the sign. The sign that indicates the changes of seasons, the Holy Grail of the modern day basic American woman, and the source of a multi month giddiness I know I am not alone in…

      Hello. My name is Brittany, and I loose my marbles over the beginning of pumpkin season.

      The thing is, I don’t actually consume most pumpkin items. I’ve never even had my own pumpkin spice latte (I have had sips, but it’s not for me for a handful of reasons.) For me seeing this sign is an indication that calmer days are coming my way. The busyness of summer adventures are coming to an end, the rainy days are on the horizon, and the much needed rest my body seeks is more acceptable to my go, go, go mindset.

      I love fall. This time of year always feels cleansing to me. A time to appreciate the changes of colors in nature, heartier seasonal foods, and there is a sense of joy that fills my soul when I see pumpkins sitting outside every grocery store. What can I say, I am a sucker for large orange spheres. Walking into Trader Joe’s with the smells of cinnamon brooms and the sights of every gourd imaginable makes me feel like a kid again.

      I don’t care what this says about me, I will take any source of excitement I can get.

      Pumpkin season also starts my adventurous attitude with food. I typically keep things strict with what I eat, but I let my hair down this time of year through Christmas to taste some forbidden fruits. There are a handful of seasonal treats I avoid, but there are a handful I don’t avoid. I had been waiting 365 days for Trader Joe’s to bring back an item I discovered last year, one I consumed many times.

      And in typical Trader Joe’s fashion they did not bring back my beloved this year.

      As my luck would have it anytime I find a decent gluten free item, it’s limited. I fell in love with a local muffin company a handful of years ago and they no longer exist. I fell in love with Trader Joe’s gluten free pumpkin bread and it no longer exists (at least not at my local store.) This bread was hands down one of the best store bought loafs I have ever eaten. It’s hard for me to find a treat that not only tastes good, but doesn’t leave me feeling like I consumed an entire fifth of vodka the night before.

      Alas, I must move on and continue to seek a new seasonal treat. There are some items that are seasonal, but they’re items I would eat on a normal basis. Add a seasonal flavor to something and I am all over it. Sometimes they are a win, and sometimes they are such a huge loss that I wish teleportation existed so I could speak face to face with whomever created such an abomination.

      Absolute win, I look forward to this flavor every year.

      Biggest loss of all the losses. I’d like to sue for the anguish this brought to me. I’m not sure I will ever recover.

      Tasty treats aside I also look forward to an annual visit to a pumpkin patch/corn maze. The weather has been a bit finicky in Washington, but I hope to get lost in a maze soon. I last all of 15 minutes before I stop trying and begin allowing Duncan to guide me out. I just like to wander. The pumpkins, the flannels, the boots, the corn, the leaves changing – all of this is the beginning of a magical few months of holiday seasons.

      I never used to be big on holidays, but as I get older I look forward to them. I don’t care for the consumeristic aspect of them, in fact I abhor that correlation with holidays, but I love the sense of togetherness it brings. I love the fun activities available, the foods, and sometimes even the weather. I savor October and November and I look forward to many pots of homemade applesauce, nights of wool socks and movies, stormy afternoons while I snuggle with my cat, and all the decorated porches.

      Another Trader Joe’s win. Technically I bought this in August, but it fits the theme.

      If anyone out there knows of a good gluten free item I must try (yeah yeah I know I can just make my own and I DO, but sometimes a girl just wants to buy an unhealthy treat), please let me know. Or just share with me your favorite fall treat you like to consume.

    • Early Morning Confessions

      1. I have been home from Sweden for about a month now, and readjusting to regular life was hard at first, but I finally feel settled. Work has been slow, so hours have been cut, but I am not complaining. It gives me time to do more important things, like help my mom clean her house and look for other jobs. LOL.

      2. I took my cat to the vet recently and it was the most horrific experience. He never does well at the vet, and I have to drug him before I go (which is very stressful for us both), but this most recent time was the worst. He could not calm down even with the drugs, and while they were trying to get his blood pressure I could hear him SCREAMING in the other room. I had a hard time keeping it together. The good news is that he seems to be “anti-aging” and all prior concerns are under control.

      3. I have been enjoying too many late night fika’s since I returned from Sweden. Before I left I bought the gluten free pumpkin loaf from Trader Joe’s, and I am onto my fourth loaf of the season. It is SO GOOD. Even better with coffee…my anxiety doesn’t thank me for the excess caffeine at times though. Reel it in Brittany…

      4. It felt like summer lasted forever here, and it was still smoky into mid October. I was ready and longing for fall, yet it seems we have skipped straight to winter overnight. It has been SO cold. I was lusting for fall, but now I would give anything to go back to my last hike to Mount Rainier with Duncan in the September sun.

      5. Few things make me more uncomfortable than an overly stuffed fridge. I would not survive long in a food shortage because I hate having excess food. Food waste is one of my biggest pet peeves, and when I see a fridge stuffed to the brim I need to organize it. I like to eat what I have, and then buy more as I need. Pantry items I give a bit more leeway to, but I do not like having excess there either.

      6. Back in 2015 I bought my second pair of Vibram Five Finger Bikila’s. I had a few other Five Finger models prior to the Bikila, but once I slipped my foot into the Bikila it was like Cinderella’s slipper. Naturally this shoe was discontinued relatively quick, and when I found that second pair I was elated. Fast forward to 2022 and that pair has been run into the ground. I have worn them despite the holes in the left shoe, but I recently found a pair on eBay for $35. Unheard of.

      They fit like a glove. Literally.

      7. My blog storage is nearing full capacity. I can either pay more money to have more space, or I can stop blogging. Orrrr I can start a new blog. New blog new me kind of thing. I have always sort of disliked my blog URL, it’s so corny. Someone once told me that it even sounded like a porn website. Yikes. However, blissfulbritt has been with me through aaalllll the up’s and down’s of growing up. Ohhh life dilemma’s.

      8. The weekend before Halloween Duncan and I went to a murder mystery game night with some friends. I happened to choose the character that died first, but I soon discovered that there was little to no organization with the game. I ended up spending most of the evening alone. I was a bit salty, but I’m over it now. Mostly. I still had fun, and the next morning I went to a lovely coffee shop where I met my new family.

      9. Last Tuesday our water heater shit the bed. Not only did the behemoth have to be removed ASAP, the entirety of the flooring surrounding it needs to be replaced (it was dripping for who knows how long.) We cannot get a new water heater until the flooring and dry wall is replaced, which is proving to take some time. I have been taking cold showers ever since, and I am officially a member of the Navy Shower gang. While this new method of cleaning myself has been an adventure, and I exit the bathroom feeling refreshed, I cannot wait for warm water again.

      You have not felt discomfort until you have felt frigid water on your skin in the middle of late fall/early winter. I like to call this character building.

      10. Duncan and I went to a new to us pumpkin patch this year before Halloween hit, and it was ridiculously expensive. Each day that passes I feel more and more like a crotchety old woman. We spent $50 for two people to walk through the corn maze and find a pumpkin (which was a separate fee.) Call me crazy, but that’s just too much. Thankfully, we found two small and fun pumpkins that did not break the bank.

      We even wore matching forehead pimples, how sweet.

    • Early Morning Confessions

      1. I went for the most glorious bike ride recently with my favorite human, and I am still riding the high. We biked nearly two hours through the woods and my soul will be swooning for many days to come. I rode the bike I bought in Germany for the first time since March, and it was like having coffee with an old friend.

      2. Somehow I have been at REI for a year now. I told myself I would get this job until I figured out what was next, but it appears the world is still in proverbial flames, so for now this continues to be what’s next.

      3. We have approached the most wonderful hiking time of the year. Fall is my absolute favorite (along with most people I speak to), and the cooler weather, crunchy leaves, and autumn colors fill my cup in a way that cannot be done by summer rains.

      And of course we’ve got the hikes that are worthy of their own blog posts.

      4. I have recently been introduced to “walking in…” videos on YouTube. Basically you can find most any city you want to see someone walk around, and it is oddly satisfying and meditative. The first one I watched was the town I lived in DE, and it was a mixed bag of emotions. Highly recommend.

      5. Running has been so good to me. I continue to surprise myself by how far I have come with regard to this sport. For many years I ran for all the wrong reasons, causing burn out and overwhelm. I now run for my mental health, and watching my pace slowly get faster is just an added perk. I used to think anything above a 10 minute mile was slow, but I am humbled as it has taken me six months to find this pace again.

      6. Last September I moved back into my childhood home, and I was determined to only stay a short while. I have had moments of motivation to find my own space, but they continue to be fleeting. I find such comfort in staying with my mom and my sister, and I currently need this comfort more than I realized.

      7. Before I moved back to America I made a list of things I was going to miss about Germany, and a list of things I was looking forward to about being back in my home state. One thing I was looking forward to was taking a bite of my favorite muffins, muffins I hadn’t had since 2017 or 2018.

      It took me a full year, but I finally indulged in a muffin…twice.

      8. Ever since I hurt my back a few months ago it has never been the same. I have had the most obnoxious and annoying sciatica discomfort for weeks, and the only thing that helps is vertical movements (ironically running helps shake it out the most), and horizontal resting. Sitting down on my bum is a sure fire way to a game over.

      I have never felt more my age than I do now.

      9. After eight years of (comfortable and content) singledom I guess my heart isn’t as black as I thought, and after six months of dating I guess I am ready to properly introduce Duncan to blogland. Time spent with him in a corn maze, and picking out pumpkins is time well spent. ❤

      10. Every year when fall rolls around I feel twinges of grief with regard to my “former life.” Life before food sensitivities and autoimmune disease, life before anxiety and overthinking, life when I didn’t have to meticulously plan out my daily activities or meals. I have moments of jealousy towards those who can indulge in all the pumpkin and cinnamon treats without repercussions, but at the end of the day I am reminded why I choose to live the way I do. Feeling well far surpasses a pumpkin bagel with cream cheese. Alas, sometimes a splurge is necessary.

    • The Worlds Largest Pumpkin Festival

      Anyone who knows me, knows I have an immense love for all things fall. This includes, but is not limited to: colored leaves, cold crisp mornings, sunshine on the skyline and frost on the grass, apples, halloween, and of course PUMPKINS! The moment I see pumpkins I turn into a 6 yr old child seeing Santa at the mall.

      All that said, I didn’t expect to see many fall themed activities in Germany. The locals here don’t really celebrate Halloween, they don’t really have pumpkin patches like we do in the states, and corn mazes? Forget it. Then I heard about a pumpkin festival north of me in Ludwigsburg, that claimed to be the largest pumpkin festival…in the world!

      This festival has a theme each year, and this years theme was fairy tales. There are creations made out of pumpkins littered all around the grounds of Ludwigsburg Palace, which is a sight all on its own. The location is beautiful, and the pumpkin art was jaw dropping. After visiting the tower above the trees in the Black Forest, my friend and I drove about an hour to get to Ludwigsburg.

      We arrived just in time for lunch. 

      The pumpkin festival also has all things pumpkin like: pumpkin prosseco, pumpkin spaetzle, pumpkin soup, pumpkin bread, pumpkin pasta, fried pumpkin balls, pumpkin burgers, pumpkin seeds, and pumpkin strudel. I had my heart set on the strudel, and although it tasted more like apple than pumpkin, it was delicious!

      Here I was thinking Germans don’t get down with the pumpkin trends like we do in the states, but I was wrong. They just have a more isolated event. I can appreciate this, it makes it that much more special. Instead of pumpkin patches, a lot of farm areas here in Bavaria will have pumpkins for sale on the side of the road. Like most things here, they use the honor system when selling pumpkins.

      After enjoying a treat, we wandered around the festival admiring the many creations.

      I will never look at an acorn squash the same. We spent about three hours at the pumpkin festival, enough to get our pumpkin fix both visually and gastronomically. I didn’t buy any pumpkins, but I felt complete in my fall adventure. This pumpkin festival even had a corn maze, albeit quite small.

      The first snow has fallen where I live in Germany, and my bike rides have officially begun to freeze my fingers and toes. I was thankful to have this experience in order to savor fall before it is quickly taken over by winter. Fall in Germany is so grand I almost considered staying for another one…almost.

      HAPPY HALLOWEEN! I love October. October is my favorite month of the year, and Halloween is one of my favorite holidays. I can’t say why I love Halloween so much, I don’t even dress up (boring alert, boring alert!) but there is something about this time of year that gets my waterwheels turning!

      October is not complete without a trip to a pumpkin patch/apple orchard/corn maze or if you’re lucky a farm with everything wrapped into one. Better yet, the farm NEEDS to have multiple activities wrapped into one. Before the month came to an end I made sure to venture to Hunter Farms in Union Washington to partake in their festivities.

      I should have known when I drove into the mud laden parking lot that my choice of footwear was not going to be appropriate for the days adventure, but I’d have gone barefoot through those corn fields if I had to. The mud was thick and slogged, and my only words of wisdom would be: don’t wear sandals to a farm.

      Let the adventure begin

      Hay Maze

      The adventure starts inside an old barn filled with holiday decor. Giant hay bails stacked upon each other make up a maze that has you winding corners and ducking under tunnels. The decorations were perfect, and the creativity was delightful.

      Enter if you dare is right, those tunnels were dark, and quiet. Like close your eyes and stand in the woods quiet. I bow to those small children that venture into those dark corners without a care in the world. It’s tough being an adult and having complete access to the news, or watching too many horror films.

      I’ve officially discovered a new area to add to my list of “places I don’t want to be alone at night.”

      Tractor Rides

      A large farm machine known as a tractor waits outside the hay barn to take us princesses to the field in style. Heaven forbid we walk in the mud with unprepared feet.

      Going to a farm on a weekday ensures automatic VIP status, and it was just my family and I in the tractor. The bumpy road took us past old rusted trucks into miles upon miles of pumpkin littered rows. It was a fall lovers paradise.

      I seem to have done something right this month, because my karma stick has been slapping me with amazing weather. The sun was shining and only a handful of passing grey clouds washed over the sky.

      Pumpkin Patch

      I liked this pumpkin patch. Like a lot. It was nestled in the heart of quiet country and the surrounding mountains made for a serene environment. Not like hay bail tunnel quiet, but very quiet. The pumpkin patch even came equipped with a furry tour guide.

      I could have stood in that field for hours. The wind was the only sound I could distinguish passing by my ears, and the quiet air gave opportunity to pause for a moment with my thoughts. No pumpkins were purchased, but walking the rows of round plump squash gave me my field fix.

      Corn Maze

      The only “negative” words I have for this farm would be regarding their corn maze. The paths were just too muddy, and many of the stalks had been trampled on. My sister referred to the brown sludge as chocolate ice cream, but I had a different brown mush in mind.

      I had to laugh when my sister trudged through the center of the path and completely lost her shoe. We decided to skip the rest of the maze for fear of being sucked into the brown abyss.

      So there you have it. This farm gets a gold star. Just don’t go in the corn maze without your shucking boots.

      A few weeks ago I purchased “all the squash.” I wanted to do something fun with each of them, and I think I accomplished just that. Below are the random creations I came up with for five different types of squash. I don’t have recipe measurements because I usually just throw things together, but this will give you an idea of different flavor combinations to experiment with!IMG_3039-0You’ll see I used the outer “shell” of each squash as my bowl. Eating directly out of the squash shell is almost more fun than tormenting small children. Almost.

      Spaghetti Squash

      Named for its string like consistency, this squash is a fun substitute for noodles.

      In the mix: olive oil, nutritional yeast, pepper, jalapenos, broccoli and cauliflower.

      Butternut Squash

      The squash with a funny name and an equally funny shape. Borderline inappropriate for both…

      In the mix: Sauteed kale, cubed/roasted butternut squash, cranberries, cashews, olive oil, salt, pepper, and (un-pictured) quinoa.

      Leftover butternut squash was consumed for dessert with almond butter.

      Kabocha Squash

      The squash I want to wear as a hat.

      In the mix: Quinoa and gluten free penne pasta with tomatoes and brussels sprouts, topped with a vegan “cheese” sauce.

      For the sauce

      • 1/2 cup almond milk
      • 1/4 cup nutritional yeast
      • 1 tblsp gluten free flour
      • 1/2 tsp yellow mustard
      • 1 clove (chopped) garlic
      • pinch of salt

      Combine all ingredients into a sauce pan and heat on low for about 4 minutes. Stir often until sauce becomes thick. I paired this with 1/2 cup (precooked) quinoa, and 1 cup (precooked) penne.

      Acorn Squash

      A squash that resembles an acorn. Ever seen a squirrel try to eat one of these?

      In the mix: Cinnamon topped honeycrisp apples baked right into the center of the squash. Drizzled with a dash of raw honey to bring out the sweetness of the apples.

      Pumpkin

      October would not be complete without pumpkin, the quintessential fall squash. Pie pumpkins are perfect for making a meal or a treat. Naturally I chose treat.

    • Not My “Standard” Deviation

      My typical daily eats look a little something like this: nut buttes, fruits, veggies, nut butter, cayenne pepper, tempeh, beans, nut butter, cinnamon, and nut butter. Basically I eat the same foods day in and day out, and the only deviations I usually make are for treats. I like to think the wicked healthy diet I eat balances out the treats I allow myself once in a while.

      Sometimes my deviations take me away from my standard treats of just cupcakes and cookies. Sometimes I enjoy being wild. I’m not talking “see you on the 5 o’clock news” wild, I’m talking straying from my clean eats for season themed treats wild. When it’s fall and pumpkins are everywhere, I trip into the genius marketing traps faster than a mating rabbit.

      Let’s take a look at last weeks “pre long run” dessert of choice. FOUR pumpkin Joe-Joe’s, at least 2 tblsp cashew butter, and a solid serving of vanilla coconut ice cream. Twice…in two days.

      I thought I had it under control with the pumpkin themed treats by keeping it at one simple and happy box of cookies, but then I began to see pictures online of pumpkin this and pumpkin that…so after my 10 miler I went to Trader Joe’s…again.

      With a sweaty face, and a determined spirit this is what I walked out with…

      Breakfast Foods

      I use the term “breakfast food” loosely because I don’t actually eat these for breakfast. I need something of solid substance and these two just aren’t solid in my book. I used the cereal for multiple desserts, and the bagels for a snack. The cereal was good, but the bagels knocked my pants off. I’m talking clear across the room off. Topped w/cashew butter and cinnamon.

      If you take anything away from this post let it be this: get these bagels in your life right now. Don’t even look at the ingredient label, just put them in your cart.

      Snack Foods

      Fortunately for me, most of the snack items had dairy in them which made them easy to stay away from. These pita crisps however, did not. I basically had to wrestle my own arm to keep it out of the bag. This is not a safe scenario while driving. These.Are.Un.Real. Get them. Now.

      Dessert Foods

      Also known as, the most important meal of the day. As you already know I snagged a box of the pumpkin Joe-Joe’s, which took me all of two days to consume. I did have a little help. Those Joe-Joe’s were festive and fun, but Halloween would not be complete without at least one box of Halloween Joe-Joe’s, the one cookie I immediately turn into a 12 yr old child after purchasing.

      Plus, I can’t deviate toooo much from my standard treat “norm.”

      Fun Fact: This photo of Joe-Joe’s is from this post, where I first shared my love for pumpkin faced cookies as I finished my last week working at Trader Joe’s in 2012! I still miss that job…

      Pumpkin Pie Cereal Cluster

      • 2 cups Trader Joe’s “Joe-O’s”
      • 1/4 cup raw pumpkin seeds
      • 1/4 cup raw honey
      • 1/4 cup cashew butter
      • 1/4 cup pumpkin puree
      • 1/2 tblsp cinnamon
      1. Mix together cereal, pumpkin seeds, and cinnamon.
      2. Heat on low to combine honey, cashew butter, and pumpkin puree. Once smooth pour over cereal.
      3. Set in fridge for 10 minutes. Serves three-four.

      These were meant to be cereal bars, but didn’t hold together as well as I had hoped. The flavor was TOO GOOD not to share though, so make do with a cluster.

      There you have it, my version of “PUMPKIN EVERYTHING.” I’d also like to note I did purchase substantial food items too like all this squash, pounds of honeycrisp apples, enough vegetables to power a mini van, and enough beans to (gas) power a tiny home, but these are wayyy more fun.

    • Footsteps Through the Corn

      Thank you everyone for your input on my last post! If you’re at all interested in self hosting your blog, check out some of the comments! I know self hosting is my next step so stay tuned because I’m not sure exactly when it will happen! Now, onto today….

      I went to a corn maze. It’s not officially fall until you visit the corn maze/pumpkin patch. Sadly, no ninja moves were allowed so I kept my nunchuks in my pocket.

      Throughout the maze there were pumpkins with random paintings on them. My favorite was a self portrait of my child, equipped with a device for eating cereal, or ice cream.

      The objective of the maze was to solve a riddle. Random letters were sprinkled all over the maze and we were to write the letters down onto a sheet of paper, and then unscramble.

      Any guesses? I couldn’t figure it out and had to resort to Facebook for help. I don’t know how I passed third grade. After finding all the letters, I enjoyed the sun through the corn.

      The farm also had chickens, goats, sheep, and one lone llama.

      To wrap up my trip, I searched the pumpkin patch for the perfect pumpkin to bake.

      When I went to pay for my pumpkin, the man did not know how to use the mobile device required for payment with a card. After asking him to find someone to help me, he asked me if I could wait a while. So I put the pumpkin back and I left. UGH I was so upset. Looks like I’ll just have to visit another pumpkin patch to get my pumpkin to bake!

      Q: Have you been to a pumpkin patch or corn maze this year? Now I want to go apple picking!! I just don’t want to find any larva in my apples….eww…

    • Vegan Pumpkin Pie

      A few of you (5 to be exact) asked for the pumpkin pie recipe I made a few days ago! I sadly have no idea where this recipe came from, and since I made some alterations of my own I think it’s safe to post it!

      Vegan Pumpkin Pie

      Ingredients:

      For the crust

      • 1.5 cups whole wheat flour
      • 1/4 tsp salt
      • 1/4 cup coconut oil
      • 4-8 tablespoons almond milk (vanilla)

      For the filling

      • 1 (15oz) can of pumpkin (I ended up adding more as the taste testing went on before baking, not much maybe another half of a cup)
      • 15 oz firm silken tofu
      • 3/4 cup raw sugar
      • 1 tablespoon cinnamon (and then some!)
      • 1/2 tsp nutmeg
      • 1/4 tsp salt
      • 1/4 tsp ground ginger
      • 1/4 tsp ground cloves

      Directions:

      For the crust

      Preheat oven to 400F and get your pie plate out. In a large bowl sift mix together the flour and salt. Add in the oil slowly bit by bit stirring with a fork until it’s all added in. The flour should resemble coarse sand. Sprinkle in the almond milk 2 tblsp at a time and mix with your hands until you form a solid dough. Be sure not to over work the dough. Form the dough into a ball and set on a piece of wax paper. Place another sheet of wax paper ontop and toll out the dough until it’s in a wide enough circle to fit your pie plate.

      The directions then say to poke all over the dough with a fork, and bake for 12-15 min before adding the filling. I did not do this step. I actually didn’t see this part until right now as I type this..oops. The pie turned out fine, but you may choose to include this step.

      For the filling

      Empty silken tofu into your blender of food processor, I used my blender. Blend until smooth. Add the rest of the ingredients and blend until everything is combined well. Pour the filling into the pie pan lined with your crust and bake at 375F for one hour, or until a toothpick comes out smooth.

      I did have a piece right as it came out of the oven, and found that this texture holds up better when it’s cooled overnight or for a few hours. Once left in the fridge for the night, it solidified enough to be an exact replica of non vegan pumpkin pies. The tofu blends in well to the myriad of other flavors and adds some great protein to accompany the fiber from the pumpkin. Who said eating pie was bad!?
