      I love Valentines day..always have, always will. Maybe it’s because it’s the day before my birthday, maybe it’s because I love any excuse to get mushy, or maybe elementary school really set me up for success with positive emotions attached to the holiday. How can any child NOT love making their own mailboxes and getting a shitton of candy!?

      I may be single this year, meaning I don’t have a strapping young man to shower me with broccoli trees, and vegan chocolates, but that doesn’t mean I can’t still celebrate. If anything, that just means I don’t have to worry about buying gifts or being disappointed by someone that’s not as excited as I am. I kinda sorta like any and all holidays.

      This February 14th I’ll be spending my evening with one of my fellow single ladies for a vegan feast and a sappy movie, perfect. I wanted to give her a small gift, because any excuse to craft is a good excuse. I took some extra twine from this craft, some burlap bags I hoarded from Starbucks over the holidays, and bought myself a Mason jar.

      What you’ll need for this craft: 

      • burlap material
      • twine
      • medium Mason jar
      • heart cutout (or whatever else you want)
      • scissors
      • fabric glue
      • something to fill the jar

      My date just recently made the switch to a plant based diet, so buying her sugar laden chocolates from the grocery store wasn’t an option. Besides, store bought treats are simply unoriginal, and turn your rump into a semi truck. I’m making her some energy bites, because I am obsessed and lied in my last post when I said I was done talking about them.

      Of course I’ll be making her fresh bites, these ones were just for the photos..and for me.

      This craft was SO easy, and so much fun. I cut a small circle out of the burlap bag to fit the lid of the jar and glued it to the top of the lid. Then I wrapped some twine around the neck of the jar, and used the glue to connect the end strand to the middle of the wrap. This ensures the end is blended in and unable to be seen. The heart cutout was an up-cycle from a card my younger sister made, and it was the perfect addition! You can find similar items at Michael’s and punch a hole in the corner to stick the twine through it.

    • Enjoy Life: Dark Chocolate Morsels

      When Enjoy Life Foods messaged me and asked if I’d like to try and review their new dark chocolate morsels I didn’t have to think twice. This is the sixth product review I’ve done for ELF, and just like everything else I’ve tried, these morsels are delicious.

      I had to try them by the handful because, well…because I had to.

      Once I knew they were rich and decadent on their own, I wanted to try them in a tried and true recipe. SO, I made my coffee energy bites that I am obsessed with and added 1/2 cup of these chocolate morsels for an extra special treat. They were delicious.

      Next, I wanted to make a chocolate treat that started as brownies, then turned to muffins, and then turned to breakfast pucks. The texture and density changed throughout the baking process so much that I couldn’t call these a brownie or a muffin. They are gluten free, dairy free, and almost sugar free (the only sugar in these are from the chocolate morsels, giving each chocolate puck about 2.5G of sugar.) Boy oh boy were they tasty.

      Don’t let the word breakfast fool you, these are rich and pair perfectly with a scoop of ice cream for a decadent dessert. Otherwise, the flax seed, coconut oil, and nutrient packed GF flour make these an acceptable breakfast bite on the go.

      Dark Chocolate Breakfast Pucks

      • 1/2 cup coconut oil
      • 1/2 cup xylitol
      • 2 large flax eggs (2 tbsp flaxseed + 6 Tbsp water)
      • 1 tsp vanilla extract
      • 3/4 tsp baking powder
      • 1/4 tsp sea salt
      • 1/2 cup cocoa powder
      • 3/4 cup all purpose GF flour
      • 1/3 cup Enjoy Life dark chocolate morsels

      1. Preheat oven to 350F and spray 7-8 standard-sized muffin tins with cooking spray.
      2. Prepare flax eggs in a small bowl and let rest for 5 minutes.
      3. Melt coconut oil on the stove. Then stir in the flax egg, xylitol, vanilla, baking powder, salt and cocoa powder. Lastly, add the flour, then the chocolate morsels.
      4. Scoop batter evenly into 7-8 muffin tins until 3/4 full, and bake for 22-26 minutes, or until the breakfast pucks start to pull away from the sides and they spring back to the touch. Be careful not to overcook or they will get crumbly. Remove from oven and let rest in the tin for 5 minutes before removing to cool completely on a plate or rack.

      I love the visible flakes of flax seed in these. I use a flax and ancient grain GF flour mix that is a 1 for 1 swap, meaning I don’t have to use my brain while baking. The ingredients in the flour alone are enough to set your day up for success! I found this amazing flour at Costco!

      I tend to be a terrible judge when it comes to my baked goods, and can be a bit harsh on myself, but I shared these with my coworker and she loved them. I will eat just about anything, but have high expectations for my treats, so it was nice to know they passed the civilian (non limited eaters) test! While these tasted fine alone, I enjoyed them with a scoop of the cookie dough ice cream I had from my waffle creation. I had to finish it off somehow!

      Lately I’ve been reading a lot of blog posts that contain waffles. A lot of waffles. This leaves me craving a crispy, crunchy, waffle almost more than a cupcake. Almost. I love waffles, but I don’t usually eat them in the morning, I like them more..decadent.

      This may just be my new favorite dessert. The crispy texture of the warm waffle, with the cold melting sweetness of the (coconut milk) ice cream was delectable.

      I must confess, I am a digger..an ice cream digger. This cookie dough ice cream didn’t stand a chance against me and my spoon. I dig, and I dig, and I dig..until all that’s left is a mushy mess of milk and chocolate. Let’s be honest though, no one buys chocolate chip cookie dough ice cream for the chocolate chunks..it’s all about the dough!

      I know I’m not the only one that does this though, in fact it’s more common than you would think. I guarantee at least 2/3 of the comments I get on this post will admit to being a dough digger. No shame in our game! This cookie dough ice cream was the perfect balance to the waffle, but other great combos would be classic vanilla or chocolate, and fancier combos like chocolate brownie, or mocha almond fudge. MMMMM…mocha.

      Just like that..I have another post dedicated entirely to one tasty treat. When the treats are that good, they deserve their own post!! I’m also trying to figure out my camera on my own (I still haven’t opened my manual book.) I’m discovering what works best as far as locations, lighting, backdrops (for example: This light colored backdrop doesn’t work for the top half of this photo, and a darker color would have been better for the ice cream.)

      I don’t participate in blogger linkups…like…ever. More specifically I don’t participate in the ever so popular linkup “WIAW,” also known as, “What I Ate Wednesday.” I’ve never had a desire to snap photos of things I ate on days other than Wednesday, but then post them on Wednesday and claim to have eaten them on….Wednesday? Meh.

      I’ve been asked to participate in this link up to give more vegan options to the world wide web, but instead of linking up (because I’m too cool for school) I will post my own-singular- unattached post cleverly titled, “A Day in the Life of My Gut.” AKA what I typically eat. I like to pretend that all I eat are cupcakes and chocolate, but that’s just not true. Balance.

      In reality my “vegan” meals aren’t anything to be excited about. They are very simple and probably not what most people would opt for when cooking vegan. I am a bit of a minimalist, and simple is always better in my world. I like my food basic and “real.”

      Most of my meals are very mundane, and I rarely deviate from the simplicity of what I’m posting here, but it works for me. Sometimes when I am feeling wild I will prepare something more elaborate for breakfast like a veg scramble, or pancakes…but that’s rare.

      I have somewhat of a system. I tend to eat my grains and fruit early in the day, and work my way to the veggies in the afternoon and evening. I figure I use the sugar from the fruit more during my energetic days than I do at night when I am sitting at home.

      Lunch is always in a bowl. Spinach, kale, farro, wheat berries, beets, red pepper, and hemp seeds.

      I find that bowl messes are the easiest for me to take anywhere. I always start with a base of some kind of leafy green (or two) and build from there. That part never changes. The protein source changes from quinoa, to beans, to cous cous (much more rare these days) and so on. Then more veggies like beets or brussels are added to the top. Never too many.

      To add flavor to my meals I sometimes saute my veggies in coconut oil, and add mustard or salsa. I am very basic with my seasonings because I happen to like the flavors of plain vegetables. If you don’t swing that way, then finding a sauce you love can make it easier to eat a shitton of vegetables in one sitting. Also crackers or chips help add flavor.

      9/10 times I have something sweet after every meal, this helps me not to overdo it.  A chocolate covered handful here, a cookie there, a finger dipped into PB everywhere.

      Dinner is one of my meals that changes frequently. Sometimes it’s soup, sometimes it’s another bowl just like lunch, but with different protein and veggies (most of the time it’s this) and sometimes I use my evenings to make something more elaborate like black bean burgers, or BBQ tofu bowls. If I’m really lazy, it’s popcorn and an orange, but that’s rare.

      One thing that never, EVER changes..is my water intake.

      So there you have it, this is a typical day of eats for me. Lots of fruit, vegetables, and protein sources. I’ve cut out bread and only eat it once in a blue moon, but I opt for GF. I still feel like a big pile of dog turds if I have too much wheat…it’s bizarre. Obviously this isn’t set in stone, and things change around a bit, but you get the general idea.

      I say typical day because once in a while I get down and dirty with vegan butter heavy cupcakes, and I’ve been known to knock back a few rows of Oreo’s. All in moderation!

      All of these meals take no more than 10 minutes to prepare..whoever says you can’t eat healthy on a time crunch is WRONG! The key is food prep for things that take longer to make, like the quinoa. Making a giant bowl and using it throughout the week makes grabbing and going SO SIMPLE. Priorities people.

    • Just One Won’t Do…

      Sometimes I take so many photos that it’s impossible to choose just one.

      Each photo offers something different than the others. Even if the change is minuscule, it’s enough to change the photo all together in my eyes. Changing the position is enough to take shadows that were once there and erase them as if they never were.

      Note the subtle difference in these two photos. Both are taken from similar angles, however the direction of light has changed. The ridges of the frosting are much more apparent in the top photo, but the bottom photo has a softer overall feel to it.

      I tend to take an excess of photos, and then struggle when it comes time to post them. I can never choose just one, I’m a bit of a perfectionist.

      Long story short is that I simply needed an excuse to post multiple photos of a single cupcake..because it was that good. It could have been because I hadn’t had a cupcake in months, or because sometimes cupcakes just taste better when someone else bakes them.

      Either way, I enjoyed every last crumb of this delicious cupcake. Just one didn’t do!

    • Cardio Conundrum

      Over the last few weeks I’ve noticed some changes in my every day life. My mood has elevated, my hunger is under control, and best of all…my pants are fitting better.

      So what’s my secret? I’ve stopped doing intense cardio..and continued eating cookies and chocolate. OK so that is an exaggeration, but I do have a good balance with sugar right now, along with food as a whole. Intuitive eating has a whole new meaning for me.

      After my recent trip to Arizona I had somewhat of a small epiphany if you will. I was anxious about not having access to my gym, but instead of dwelling I focused my thoughts onto what I was eating. Hunger cues became my friend, and with no access to my gym I was forced to get outside and run. I ran short miles, and tried to run for the simplicity of the run itself. I was forced to step away from my routine. Hence my last post.

      I didn’t do any intense cardio workouts, instead I ran a few 3-4 mile runs, I hiked, I biked, and I listened to my body cues on when I needed to eat. I didn’t worry about burning calories and I finally just…relaxed. This is when I realized nothing I’ve been doing has worked. The intense cardio has not been working, and a couple weeks ago I decided it was time for a break. Are we noticing a trend with my constant breakups?

      The only problem was that I LOVE intense cardio. It feels like a waste of motivation, but with nothing to loose I decided to give it a shot. This has allowed me to eat smaller, more frequent meals which has helped my digestion and overall I feel better. With minimal cardio in my daily routine, it was time to start some new workouts.

      Along with casual runs I’ve been doing yoga, walking, hanging with Jillian, and Pilates. Let me preach for a moment..Pilates is a dirty demon that I can’t get enough of. My legs have never hurt so good. After a class I can’t walk right for days. The weight work that I’ve been doing through Pilates and my Jillian DVD have already started making small differences. I’m still doing intense cardio here and there, maybe once a week, but earlier in the day and I’m fueling accordingly.

      So why am I sharing all of this? Well, for starters it just feels good to purge all the chaos that swirls in my brain from time to time. As a devout cardio junkie…I am admitting to the world that cardio is NOT all there is to life, I’m officially a strength training believer. I honestly don’t feel like I was fueling properly for the workouts I was doing, and since I don’t want to change my intake, this was the solution I needed.

      As humans we are constantly changing and growing, reinventing and reevaluating. The trial and error with my workouts, and finding my perfect balance can relate to my personal life too. I am at a place of peace, and all the mental hurdles I’ve overcome within the last year have givin me the ability to switch my mindset when it comes to lower intensity workouts. It sounds ridiculous, and makes more sense in my head (per usual) but I’m saying it anyway! It feels good to start gaining back my confidence in a round about way.

      I’m not a natural born runner. When I first started running I got excited when I accomplished one mile without stopping, working my way up until I finally ran my first 5K race. I’ve also never been a graceful runner, more like a frantic monkey with an annoying tick on his rear. Everyone has to start somewhere.

      Then I ran my first half marathon, and my second..third…and fourth.. and suddenly 3 mile runs were a sad excuse for a workout. I started to believe that if I didn’t run at least 5 miles in one period of time it was a waste, and my workout would suffer.

      Not only did I worry about miles, I started to obsess about time. Always wanting to improve and get faster. Overall, I don’t see anything wrong with this. As humans we should want to improve and better ourselves in all aspects of our lives, but not at the expense of our happiness. I started to loathe my runs, and I stopped running all together.

      A few months ago I wrote a post about switching up my workouts, with hopes that I would fall back in love with running. While stepping away from running was beneficial, I ended up mentally stepping away all together and not fully enjoying any run I would do. Running felt forced, and relationships should never feel forced, in any aspect of life.

      Lately I’ve had a strong mental desire to run, but anytime I started I wanted to stop. I’ve decided it’s time to go back to the beginning, and run the way I did when I first started. 3 mile runs are better than no runs. If I enjoy the miles that’s what matters. Along with taking the stress away from the miles, I’ve forced myself to slow down my running pace. This is much easier said than done! Fellow runners can relate.

      Over the last couple years I worked my way from 11 minute miles..to 10 minute miles..to 9 minute miles, with a few runs in the 8 minute pace. I’m very proud of this, and I proved to myself with a bit of hard work and motivation the increase is possible. Now that I know I am capable of running “faster” it’s easier to settle back into a 10 minute mile and still hold onto my confidence as a runner, because we all know every runner thinks about pace.

      One day my comfortable pace may be a 9:00 min mile, but for now I only foresee quicker runs happening during races, and on days that I’m feeling wild. I’m going to listen to my body and base my pace strictly on how I feel -fast or slow.

      Long story short: my overall goal is to feel just as accomplished with a slower shorter run as I do with a shorter faster run, or a longer run. A run..is a run.. is a run. Plain and simple.

      When I was younger I never understood the necessity of researching a product before I bought it. I was naive and brainwashed by society’s impatient need for something NOW. Thankfully, my dad is a research wizard and although it took me a while, I fully appreciate everything he has done to help me research and purchase anything “large.” My latest and greatest technological toy that was fully researched before purchase is a dSLR camera.

      I knew what I wanted: a dSLR fit for a beginner, under $500, and with image stabilization. My main goal was to finally take photos without the blurry look I got with my iPhone. I Consumer Reported the hell out of each and every model within these three categories and finally narrowed the choice down to this one. Purchases are much easier this way.

      When my new toy finally came in the mail, I took it out for a spin. The three photos taken above were before I realized there was an auto focus button, and I had to manually focus these. Hence a bit of blurriness still. I also re-sized them, which I think affected the noise.

      That Frango canister was filled with chocolates from a customer given to my coworkers and I for Christmas. I saw the empty can in the corner the other day and promptly snagged it, what a perfect decorative jar! I adore the vintage look it has. I had more decorative ideas that I snapped photos of to try and get a feel for my new camera.

      My loyal readers know I have an obsession with wood products. This three sectioned wood tray was originally filled with three different succulents. The succulents died, but I kept the jars and the tray knowing I would reuse it someday. I finally figured out what to reuse it for. The typical coffee bean and vanilla candle, it smells like cupcakes. LOVE.

      I also filled a rose topped jar from with coffee beans, and discovered the camera flash.

      I sometimes have a tendency to not read directions. I’ve always been one to figure something out simply by playing with it. I think this will be the first time I have to actually read the manual because there are so many options and settings. These photos were all taken at random on random settings and they aren’t as crisp as I would like. I did take a few of my cats on the portrait setting that turned out great.

      So there you have it, some of my very first amateur photos with my new dSLR. These were all taken inside, while normally I go outside for natural light. These were also taken with the hands of someone that had no idea what they were doing. I look forward to coming back to this post a year from now and seeing if/how my photos have improved! I also can’t wait to start photographing some legit food porn.

      2. I’m trying to figure out new workout ideas in an attempt to maintain my weight. I’ve gained about 12 pounds the last year and would love to shed that. I’m thinking runs between 3-5 miles, walking, yoga, Pilates, and LESS cardio. Yes, I said less. Ideas?

      4. I haven’t been to the dentist in over a year. Did you guys know I was going to school in hopes of becoming a dental hygienist?! Not very hygienically savvy of me. Speaking of school, I have a new direction. More on that..in…the future. I do still love teeth though…

      10. I never updated all you loyal readers about my end of the year haul I found using my coin counter app (scroll to the bottom of that linked post, number 10.) From March-December I found a whopping $9.37. That’s $4.37 MORE than I predicted! SCORE!

      Side note: Rereading that post I linked to made me laugh because not only was it another confession post, but it included food I was obsessing over, something I finished reading, something about sitting in a coffee shop, and something about the coin counter app. At least I’m consistent…We won’t talk about the other things in that post…haha.

    • Sunwarrior Protein Powder

      When I first went vegetarian the question I got the most was, “so where do you get your protein?” All my veggie friends know what I mean, and I’ll spare you the boring details, but I do want to say that when I was a 17 year old-brand new vegetarian, my idea of good protein was dairy, dairy, dairy, and more dairy.

      Now that I don’t eat dairy, I still get the question, but my answers are a bit more refined.

      Proteins I eat anytime, and anywhere. Usually daily.

      • Beans
      • Nuts (and nut butters..lots of nut butters.)
      • Quinoa
      • Legumes
      • Spinach
      • Hemp Seeds

      Proteins I limit, and consume in moderation.

      • Sprouted Tofu
      • Field Roast Vegan Sausage
      • Vital Wheat Gluten/Breads *
      • Tempeh/Seitan
      • Protein Powders

      *I have noticed when I eat too much bread (ie. bagels, large sandwiches) I feel like a total bag of ass, so I have cut out A LOT of my bread intake. I’m eating as close to the earth as possible, with the exception of baked goods of course. Let’s not get too crazy.

      Protein powders have always been on my “in moderation” list simply because I want to get my main nutrients from real food. However, along with cutting down my wheat/gluten intake..I have been trying to up my protein intake, and I can only eat so many beans.

      Insert Sunwarrior Protein. Some of you have heard of them, some of you may have not. Before I tried Sunwarrior I used a basic rice protein. I still use the rice protein, but on the occasion that I don’t want to feel like I’m licking the inside of a cardboard box I use Sunwarrior..or Vega..but this post is about Sunwarrior. 🙂

      With an array of products listed aside from protein, you’re bound to find a product you love. My go to is the Warrior Blend. There are three different flavors, & I love chocolate. The Warrior Blend is a complete protein, which is vital for those of us that don’t consume meat. It also helps calcium absorption, boosts immune system, and helps build muscle.

      For a raw, natural vegan protein with excellent nutritional stats, Sunwarrior is definitely my go to choice over the rest. The flavor is great, and the benefits are greater. Fuel your body right, and it will last you a lifetime. No pun intended..well, maybe a little.
