    • Early Morning Confessions

      1. As per usual I fell off the face of the blog for a month. Not because I didn’t have things I wanted to share, but I just couldn’t muster the motivation. I have two more summer hikes I want to share (because this is my online diary and I like to refer back to my posts after time has passed), but I cannot be bothered with those right now.

      Instead all the things in between.

      2. I’ll start with my most funny tidbit…for Halloween this year I decided I would go to my coworkers party. And by “I decided” I mean Duncan wanted to go. This is out of character for us both, but I happily agreed to go. I knew I wanted to do a couples costume, but after I couldn’t figure anything out Duncan suggested something I couldn’t say no to.

      The party was meh, I wouldn’t do it again, and I likely won’t dress up again for a while, but this costume will go down in history as my favorite.

      “Come play with us Danny…forever, and ever, and ever.”

      I also dressed up at work this year because I was able to recycle the costume I bought last year for a Halloween themed 10K run. Can you find me?

      3. I am stoked to report I have a new vet for Little. If you’ve been here for a while you will know my most recent vet left the clinic we went to, and I was planning to ride the wave for a while without a vet. Duncan ended up helping my coworker/friend with some plumbing a few months ago, and my friends wife happens to be a vet.

      We were able to hang out for a full afternoon and she later offered to do a home visit for him in order to legally prescribe him drugs. Little is an absolute tyrant at the vet, so this was such a blessing. She did want us to come in for some blood work (we did that this past Wednesday and she was so good with him), but she is willing to do simple stuff in the comfort of his own home.

      This is a huge weight off my shoulders as I was worried what would happen next after he ran out of his meds.

      4. Speaking of the black fur ball, I bought a window bird feeder over the summer specifically for him to watch the birds. He barely noticed it until just recently, and watching him watch the birds brings me so much joy. My friend Caitlin is a big bird fan, so I have been able to ask her to identify birds for me along the way, and I can now identify a handful on my own. This is adulting.

      5. I recently discovered the “the five year stranger theory” which says something along the lines of: “in five years, most of the people you see every day will be strangers again.” I can’t stop thinking about this, and I often find myself thinking about people who have come and gone in my life. While this is a normal part of existence, sometimes I find it sad.

      I’ve also been thinking a lot about friends I had when I was young, and how I no longer talk to any of them (I often miss my high school best friend, but I wonder if we would have anything in common these days.) I can’t remember the last time I talked to some of them, and of course in the moment we never realize it will be the last time. I look at some of my coworkers right now who I greatly enjoy being around, and I know in five years the reality of us still speaking is low.

      Unless of course I am still working where I am working…

      6. Which leads to me to this…I have been working at REI for five years. What in the world happened. When I moved back to America from Germany in 2020 I wanted a job that I would work for maybe 6 months while I figured my shit out. Five years later I am still there, and still figuring it out. LOL. In all reality I don’t want to move my cat, my job is flexible, and I get the workdays/hours I want. So it just works.

      It was a bit of a running joke with two other girls who were hired with me that we were all going to hang on until we got our five year pin. We got our pins…and we are all very much still staying for a bit. LOL

      7. Over the summer Duncan and I went to see my favorite artist Gregory Alan Isakov play beautiful music. During this concert we discovered a new to us artist named Dean Johnson, who happened to be Gregory’s opener for the night. We enjoyed him, he is local to Seattle, and my friend Caitlin adores him. Dean was playing a concert in Seattle recently so Duncan, Caitlin, and I went because tickets were cheap.

      The concert was great, but he had way too many openers (three of them.) This caused the concert to run into the late hours of night, and we didn’t get home until after 1 a.m. I think it took me a full 24 hours to recover from being awake that long. This is also adulting.

      8. I don’t frequent Goodwill, but after a recent visit I found two items I could not pass up. It was as if they were placed there just for me to find. Ironically I had to debate if I really needed them, because I don’t like having too much stuff, but in the end I am so glad I bought these.

      I lived in Garmisch for two years, so these had to come home with me.

      9. If you are a Trader Joe’s fan I suggest you run, not walk, to buy yourself a bag of their Maple Brown Sugar flavored almonds. These are some of the most delicious almonds I have ever had. The experience of eating them reminds me of the scene from Willy Wonka where Violet chews a piece of gum that tastes like a full course meal.

      The almonds taste like I’m eating a waffle. At first chew I taste the butter, and then the flavor morphs into pure maple syrup. Thankfully I don’t turn into a stick of butter like Violet turning into a blueberry…

      10. Duncan and I ran a Turkey Trot this year. Last year I ran it solo, but this year I wranged him into doing it with me. He’s not a runner, but he did great! He insisted we take our photo after we ran, and the rain mixed with sweat had us looking like swamp creatures.

      After we ran we of course ate a feast for dinner courtesy of Duncan’s mom. This was the first year in as long as I can remember where I didn’t cook 50% of the meal myself. It was a treat having someone else cook, and Duncan’s mom could give Gordon Ramsay a run for his money. All right, ta ta for now.

      Q: What’s your confession? I think I need to start asking: “what’s your tidbit?” Doesn’t need to be a confession, most of my “confessions” are just random blobs of thought.

    • So Long Spoooooooky Season

      As we say goodbye to October, my favorite month, I want to share a few highlights. October is my favorite for many reasons. The transition to autumn warms my soul, the weather changes to cooler days, and spooky season sets the tone for month after month after month of celebrations. For the last four October seasons, Duncan and I have made a habit (along with many others) of visiting a pumpkin patch/corn maze. To me this signifies the official change from September to October.

      We have two main rules when it comes to this pumpkin patch tradition: the patch must ALSO have a corn maze (no maze, no go), and we must go to a new patch/maze each year. No repeats.

      This year, my first October highlight (and our new to us pumpkin patch/corn maze) brought us about an hours drive away to Carpinito Brothers Farm. At first glance I wasn’t sure I would like this one because it was right off the freeway. Thankfully we were able to feel like we were tucked into the farm without hearing the cars driving by.

      We chose to start with the corn maze, and thankfully Duncan is directionally savvy, because I am not. I tried to read the map at the same pace he did and I have no idea how he walked so fast knowing which way to go. I am someone who likes to have control over most of my situations, but this is one I’ll happily pass the baton with. Let me be the wandering corn troll over the fearless leader.

      After Duncan finished finding each location within the maze, I needed a snack.

      Plain roasted corn without anything on it allowed me to scour the pumpkin patch for this years chosen gourd. It didn’t take long, partially because I was boiling due to my mistake of wearing a sweater on the last 72 degree day of the year, and partially because the corn wasn’t sitting well. We both found our choices and completed another successful early October adventure.

      This adventure gets me into the spirit of my favorite month, but it didn’t quite feel like enough. I haven’t participated in anything Halloween related for a while, and I felt like this year I needed a physical goal after a long season of hiking. For October highlight number two I decided to sign up for a Halloween 10k. I spent a month getting myself from hiking shape back into running shape.

      I had no expectations for this race, I just wanted to show up and have a good time. I wanted to dress up, but also wanted to be able to comfortably run, so I settled on an easy classic.

      This race was so much fun, and there were hundreds of other costumed runners. Surprisingly I only saw two other Waldo’s (I expected to see a lot), but I saw a TON of Forrest Gump varieties. I hadn’t been running much at all since my half marathon back in May, and I was hoping that 27 days would be enough time to get me into shape for a 10K.

      Each of my training runs I dragged, and I was certain I would have to walk at some point (or at least run verrryyy slow), but not only did I manage a 10:02 pace for this run, I placed third in my age group! This will never happen again, and I credit this to the fact I was running a themed race amongst many who might not run much, but I will take the win where I can get it.

      My Garmin captured a 10:02 pace as I went a bit off course and had more than 6.2 mi.

      I didn’t notice the award winner section until after I was home, many hours after the race. I discovered I was supposed to pick up a 3rd place ribbon and I was bummed that I missed this, so I sent an email to the company. The race director wrote me back saying he would mail it to me, and when I say this made my week I am not exaggerating.

      This is a small victory for average runners alike. LOL.

      The race just so happened to be about 2 minutes by car from my current favorite GF bakery (this was soooo not planned), and Duncan and I promptly went after I was done running. We had a feast of treats, and I can’t think of a better way to finish running 6.2 miles.

      I’m still in a coma from those beautiful baked goods. Pumpkin is the theme for October, cliche or not I go all in. To round out all the October highlights, Duncan and I carved our pumpkins from the patch just before Halloween. We decided to carve surprises and not tell each other what we were doing. Imagine how hard I laughed when we revealed our masterpieces.

      Duncan said mine (the big one) looked somewhat like a red panda, and he thought his (the small one) had a neck that looked like it spent too much time in the gym. Because of this he wanted to put a ribbon on the neck, and I think it looks great. I was happy with how they both turned out, and they looked even better illuminated on Halloween.

      While I was sad to say goodbye to October, I look forward to settling into the slower pace of life that November and December will bring. November brings a special birthday for Duncan, and the restlessness that I will inevitably feel will encourage me to do something impetuous. Like sign up for a spring half marathon to give me a winter training focus. Who knows…

    • Early Morning Confessions

      1. I have one last hike I want to share from the beginning of October, but it’s been so long since I’ve popped on here that I think an Early Morning Confessions post is in order. Somehow it’s already mid November, and almost time to scarf down pounds of turkey. It’s also almost time to be thankful Duncan is nearly one year older. Confession: I’m older than my sweet, young, boyfriend.

      Any guesses on how much of a gap we have?

      2. Speaking of the almost birthday boy, we managed our annual trip to a pumpkin patch just before Halloween. The pumpkin pickings were slim at this patch, and it looked as if a tornado had ripped through the farm leaving rotted gourds in its wake. We managed to find two small rejects that we turned into starry eyed puke faces.

      3. One of my coworkers is constantly recommending off the cuff movies to me. I have watched most of the ones he has suggested, some I have ruminated on after watching, but none more than the one I watched most recently. I wanted to watch Midsommar since first hearing about it, but I had no idea what I was getting myself into with that movie.

      It was one of the most disturbing movies I have seen in years, and yet I obsessed over it for a week.

      I don’t watch scary movies. They are absolutely not for me. I will envision scenes for far too long causing extensive fear of the dark as a full grown adult. This was a horror movie of sorts and although I cannot handle true horror, the psychological thriller aspect of this movie captivated me. However, I was thankful my coworker warned me of a specifically gory scene, I don’t like gore either.

      Has anyone else seen this movie?

      4. My cat is doing much better these days. I think I have dialed in what he needs in his geriatric stage of life. He is playful and eats well, seems to feel ok, and loves to snuggle. Now that the colder months have arrived he is a sucker for the space heater. He sticks his paws right under the vent that blows hot air, and the image kills me every time. I also bought him a heating pad because he is spoiled and he is my child.

      5. My dad came to visit at the end of September and spent a few days falling in love with my cat. He loves my cat so much he almost stuffed him in his duffle bag to take back home with him. He also went into full dad mode analyzing my car to ensure it was in top shape (I have driven the same car since 2008, and I absolutely love it.) One of these statements is true, and the other is not.

      Any guesses?

      6. My friend Sam and I took a day trip to Oregon the weekend before Halloween. Our goal was to visit Halloweentown, aka the town of St. Helens. For my fellow millennials who grew up in the 90’s you might remember this Disney channel movie. We rewatched the movie before going to Oregon and it was just as terribly great as I remembered.

      It was fun to see the filming location right in the center of town, and movie aside this was an adorable place.

      7. On this trip to Oregon we also stopped in Portland for Sam to visit Powell’s Books. I knew Portland would have some gluten free goodies, and I found a bakery around the corner from the bookstore. I was flabbergasted by the prices of the goods, and although I do better with gluten free than gluten full, I was not about to pay copious amounts of cash to feel like crap. I settled on a $6 scone that thankfully blew my socks off.

      It was worth every single repercussion.

      8. My friend Caitlin and I have been staying active despite the rainy weather. I am thankful to have a pal like her who is always up for an outdoor adventure. She has the sweetest adventure pup, and that means a lot coming from a cat lady.

      9. Staying active in the fall and winter months is imperative for my mental well being. I have started running more regularly again in an attempt to mitigate any seasonal sadness that is inevitably coming my way (I run year round, but only 1-2 times a week when it’s hiking season). Last year I did a run streak starting on Thanksgiving where I ran everyday for 39 days.

      A handful of those days I only ran one mile, but it was enough to keep my spirits high. I have decided to start the streak early this year, and this year my goal is to run at least two miles most days. I won’t be upset if there are days I only manage one mile (hello PMS week, I’m looking at you), but I’ll shoot for two.

      I’m on day 8, wish me luck.

      10. This year I got back into reading and it has been an enjoyable way to avoid too much time on social media. Social media does little to no good for bettering my life, and while it can be fun to scroll mindlessly once in a while, I do my best to not be on it too much.

      I tend to obsess over stories that haunt me, and the book that destroyed me most this year was: A Little Life. There are so many trigger warnings for this book, and I found it to be a sad story along the way, but it wasn’t until the end that it broke me. I sobbed for probably 10 minutes straight, and I was sad for a week. I don’t recommend this book because it’s filled with trauma, but I have never read a book where the main character stuck with me long after reading.

      I am glad I read this one. Books and movies that make me feel things are usually worth it for me. Real life is messy, I need messy stories. Sometimes.

    • DIY Halloween Costumes

      Anyone who knows me knows I LOVE Halloween. October is the superior of all months, fall is the only worth while season, and autumn changing leaves quite literally give me life. I also adore black cats, pumpkins taste like cake when cooked right, and corn mazes make me feel like an explorer.

      However, all that said I don’t typically love to dress up. I don’t love parties, I don’t love the attention wearing a costume brings, and I get an odd anxiety when I’m one of the only people in a room who is not in costume. Like when I am working somewhere that advocates for Halloween participation.

      I recently and somewhat unexpectedly got a job at REI. I have always wanted to work for REI, and when I saw the store in my town was hiring I decided why not. I needed something to do while I figure out what’s next for me, and traveling isn’t an option right now, so I’m currently getting paid to research about my hobbies.

      Every job I have worked in the past has encouraged employees to dress up for Halloween, but REI decided to take it one step further and encouraged us to dress up for Halloween…for an entire week. I initially thought I would sit out on this game of participation, but when more and more people were dressing up I decided I needed to play too.

      Especially when there were such awesome prizes at stake…

      Participation alone earned you an extra 10% off coupon. As an employee I get 30% off, and with this coupon I can get 40% off most anything in the store. I have my eye on a Yakima FullBack that I’d save $100 on with this coupon! Then there were the prizes for the best costumes: a full paid day off work, a half paid day off work, a $25 TJ’s gift card, and two $25 Starbucks gift cards.

      Game on REI, I’m in.

      Now, I am a frugal human. I always have been and likely always will be. So I knew spending a lot of money on a costume wasn’t going to happen. I also didn’t want something uncomfortable or high maintenance as I was going to be working 8 hours in whatever I chose to wear. I decided on two costumes for the week, one to wear on Halloween, and one to wear the day before.

      First up…the Domino.

      This was by far one of the easiest last minute costume I could have possibly chosen. I spent a whopping $4.17 to make this costume, and I will 100% be doing this again. I went to Michaels and bought white felt with a sticky backing, cut circles using a standard masking tape roll as my template, and slapped them onto some already owned black clothing.

      And of course the mask, don’t forget the mask.

      This costume was fun, easy, and most of all COMFORTABLE. I accepted my first extra 10% off coupon after a full day of work, and made my way home to make costume number two. My choice for the next costume I wore on Halloween was a bit of a surprise, not only for myself, but for my family.

      I chose the scariest costume I could have possibly worn – my real life phobia on my back and on my head. I bought brown craft paper, masking tape, yellow ribbon, a headband, yellow cotton balls, and superglue. I then made myself into a human snail. Oh, and don’t forget the Saran Wrap slime trail.

      I have a legitimate fear of slugs and snails, stemming back to my childhood (if you follow me on Instagram, you likely read my more detailed caption regarding this phobia), but when I saw an adorable little girl donning this creative DIY costume I knew it would be the perfect fit.

      This costume took me a couple of hours to make and all together cost me about $8-$10 (I spent more on the supplies, but I still have a ton of left over tape and ribbon accounting for less on the actual costume cost.) I had a great laugh putting this all together, but if I’m being honest the antennas freaked me out a bit.

      Old fears die hard.

      As proud as I was of this creative project, I only managed to wear this for 2 hours at work. The backpack shell hurt my shoulders and upper back more than I expected, and I decided to take it off. I was also quite warm with the thick sweater and the extra baggage made me uncomfortable.

      This costume is a good option for a quick night of trick or treating, or perhaps a very short Halloween party, but definitely not for a full day of work. Carrying your home on your back ain’t easy! Ultimately this snail costume won me fourth place, and a $25 Starbucks gift card.

      I just can’t seem to escape Starbucks.

      While I originally didn’t plan to participate, REI dulcified dressing up by offering prizes, and at the end of the day it was a lot of fun. Winning a gift card was just an added perk. As for the new job, I have no idea how long I’ll be with REI, but I know it’s a great “right now” job for me.

      I welcome a company who respects their employees and encourages them to get outside.

      HAPPY HALLOWEEN! I love October. October is my favorite month of the year, and Halloween is one of my favorite holidays. I can’t say why I love Halloween so much, I don’t even dress up (boring alert, boring alert!) but there is something about this time of year that gets my waterwheels turning!

      October is not complete without a trip to a pumpkin patch/apple orchard/corn maze or if you’re lucky a farm with everything wrapped into one. Better yet, the farm NEEDS to have multiple activities wrapped into one. Before the month came to an end I made sure to venture to Hunter Farms in Union Washington to partake in their festivities.

      I should have known when I drove into the mud laden parking lot that my choice of footwear was not going to be appropriate for the days adventure, but I’d have gone barefoot through those corn fields if I had to. The mud was thick and slogged, and my only words of wisdom would be: don’t wear sandals to a farm.

      Let the adventure begin

      Hay Maze

      The adventure starts inside an old barn filled with holiday decor. Giant hay bails stacked upon each other make up a maze that has you winding corners and ducking under tunnels. The decorations were perfect, and the creativity was delightful.

      Enter if you dare is right, those tunnels were dark, and quiet. Like close your eyes and stand in the woods quiet. I bow to those small children that venture into those dark corners without a care in the world. It’s tough being an adult and having complete access to the news, or watching too many horror films.

      I’ve officially discovered a new area to add to my list of “places I don’t want to be alone at night.”

      Tractor Rides

      A large farm machine known as a tractor waits outside the hay barn to take us princesses to the field in style. Heaven forbid we walk in the mud with unprepared feet.

      Going to a farm on a weekday ensures automatic VIP status, and it was just my family and I in the tractor. The bumpy road took us past old rusted trucks into miles upon miles of pumpkin littered rows. It was a fall lovers paradise.

      I seem to have done something right this month, because my karma stick has been slapping me with amazing weather. The sun was shining and only a handful of passing grey clouds washed over the sky.

      Pumpkin Patch

      I liked this pumpkin patch. Like a lot. It was nestled in the heart of quiet country and the surrounding mountains made for a serene environment. Not like hay bail tunnel quiet, but very quiet. The pumpkin patch even came equipped with a furry tour guide.

      I could have stood in that field for hours. The wind was the only sound I could distinguish passing by my ears, and the quiet air gave opportunity to pause for a moment with my thoughts. No pumpkins were purchased, but walking the rows of round plump squash gave me my field fix.

      Corn Maze

      The only “negative” words I have for this farm would be regarding their corn maze. The paths were just too muddy, and many of the stalks had been trampled on. My sister referred to the brown sludge as chocolate ice cream, but I had a different brown mush in mind.

      I had to laugh when my sister trudged through the center of the path and completely lost her shoe. We decided to skip the rest of the maze for fear of being sucked into the brown abyss.

      So there you have it. This farm gets a gold star. Just don’t go in the corn maze without your shucking boots.

      Halloween has come and gone, but it seems fitting to share my Halloween adventures on Friday the 13th. I’d cue the spooky music, but my Halloween wasn’t spooky at all.

      For as long as I can remember Halloween has been one of my favorite holidays. I’m not one for dressing up, and parties aren’t my thing, but Halloween has always solidified the change of summer to fall and fall is my favorite season.

      It’s also no secret around here that I’m a big Disneyland fan, and ever since I ran my first half marathon through the park a few Septembers ago I knew I had to get back during October. It just so happened that Disney recently had a birthday too.

      I’ve seen the park decked out in pumpkins, but the one ride I had never experienced was the tricked out Haunted Mansion. Each year the ride shuts down during September to prepare for a Nightmare Before Christmas theme.

      This year I decided to go ON Halloween to get the full experience.

      The sun was hot (bizarre sensation at the end of October, my PNW brain couldn’t quite compute), but the only long line was the first ride we went on.

      This post is nothing more than an excuse to share my photos, my excitement, and the joy that comes with the magic of Disney. Even the bathroom signs are fun.

      I finally broke into the box of Halloween Joe-Joe’s I’ve been hoarding for the last four months. As I stated on my Instagram, I’m a self proclaimed minimalist. Clutter makes me anxious, and if I’m not going to “use it” then it’s time for me to “loose it.” However, there are almost always exceptions – like this box of Joe-Joe’s.

      Halloween in January never tasted so good. Real talk.

      I finally got a waffle maker. I’ve used it twice, and both times I got something other than waffles. What’d I do wrong? Coconut flour. I love the stuff, but it can be tricky to play with. Thankfully despite my non waffle like waffle, this mush tasted so good.

      Sometimes ugly food tastes the best. Real talk.

      **UPDATE** I gave up on waffles for a few days and tried my hand at scones. They were PERFECT. So perfect I settled for mediocre iPhone photos.

      I finally found a Starbucks Reserve coffee that I love. The last five blends I’ve tried have been MUCH too bright and acidic for me. My boss bought a bag of Sulawesi Pango Pango from the roastery when we visited last week. I had three coffee tastings.

      Coffee is more fun when you talk and write about it. Real talk.

      Talk about fresh, roasted on 1/18 and consumed on 1/23.

      I finally made my first batch of pico de gallo. I know, I know…it took me far too long. My “dressing” of choice on all my salads/grain bowls is salsa. All the salsa. I was about to buy some locally made pico at the store when the light bulb finally went off.

      Pico so good I ate over half in one sitting. Real talk.

      I finally got myself a cupcake..or two. Actually my mom did. She wins everything.

      I finally branched out of my ice cream bubble. 99.9378% of the time I buy ice cream I get vanilla. Why? Because it’s a universal flavor. I can pair it with any and everything. I decided to try something new and bought Almond Dream Praline Crunch.

      I took one bite and had a revelation. Pretzels + praline =  Real talk.

      Halloween – You either love it or you hate it. I happen to love it, but not for the reasons that most people do. I associate Halloween with October, and October with fall, so when these are all wrapped together I love Halloween just by fate. I also don’t complain when there is a holiday dedicated to candy.

      I’m not one for dressing up, and parties aren’t my thing. The last Halloween party I attended was in 2009 and I was a pepper shaker. I know, I’m wild. The year after that I dressed up as my cat. Last year I wore a mask and went trick or treating. Yes, I am 25.

      No, not “a cat,” but “MY cat.” There is a difference. A regular cat is too cliche.

      These days I stay home and try to earn the title of “best house” by giving handfuls of candy to undeserving children. Whatever it takes to get the candy out of my house. Not that I am tempted by it, we usually buy candy I don’t like anyway. Plus, Halloween candy is usually filled with milk and other junk so I don’t eat it.

      Or so I thought…

      I stumbled across these two vegan friendly Halloween treats and about lost my marbles. I bought both bags. While everyone is out strolling the streets for free candy, I’ll be tucked inside my house with too much candy to handle, and a box of Halloween Joe-Joe’s I’ve been patiently waiting to open. I should probably go for a run today…

      On a somewhat related note, Halloween is the one time of year I haven’t been to Disneyland, but MUST. I missed the start of all things Halloween by ONE DAY this year!! I still got to see pumpkins everywhere, but the main Halloween celebration didn’t start until the next day. That’s OK..just another excuse to go back.

    • Early Morning Confessions

      1. This book is totally giving me a science high. With a combination of nature talk and scientific facts ABOUT nature, I get lost in the text. I even read the chapter about snails.

      If you've read my blog for a while you'll know I have an odd fear of slugs/snails..this was a big deal to read that chapter!

      2. I was on a runners high for a solid week after my last half marathon. Thank you for all the kind comments I received on that post. I just want to say that I officially hate hornets, and I will make it my life mission to stay away from them. My stings got so itchy I wanted to GNAW my damn leg off. I have had a huge red ring of death around the entry hole for over two weeks, and I am convinced something is breeding inside my leg.

      4. I have only run a handful of times since my race, and after a much needed break the last couple weeks I am ready to get back to a schedule. I also miss spin class..like..a lot. I ran my fastest 5K a couple days ago with a time of 26:44. That’s an 8:37 pace. I was elated.

      6. I finally downloaded the new iPhone update, but only after seeing it improved picture quality. I resisted for weeks, but I am a sucker for a good photo. I need a real camera…

      7. I want this chair at my table. This chair would give me permission to eat my food as if I were a tornado. Who says only kids get special high chairs?

      8. I went trick or treating last night (no, I do not have kids..) The quote of the night was when asked for our ID’s and my friend said, “we’re 13….plus 13.” I died. I’ll stop when I am 30…maybe. I gave all my loot away though, no milk chocolate for me.

      9. It’s November, and Starbucks is preparing for the holidays with a super awesome sale! I got this mug I have been lusting over for only $5! I had a partner discount too, but still!

      10. I am so in love with fall. I just can’t get enough of the colors, the smells, and the baked goods. I know one person that doesn’t want summer to end, but she is craayyy.

      Happy Halloween everyone! In spirit of today’s holiday, I have a recipe to prepare you for the NEXT holiday! Too soon? At least I don’t have any Christmas music playing…

      It’s no secret that I love to bake. I also happen to love almost everything I bake, but I have found that my taste buds are accustomed to flavors that some people would call bland. I enjoy the flavor of plain grains and veggies, my meals don’t get extra seasonings, and I am a coffee and tea purist to the max. I don’t add cream or sugar to either.

      I’ve been wanting to attempt a gingerbread cookie recipe for a while now, and finally gave it a shot. As per usual I LOVED them, but I wanted to see what the civilians thought (non vegan eaters.) Most people I know are skeptical of my treats before they try them, and I get a total baking high when I introduce my friends to the better side of vegan baking.

      I wanted to make all these cookies into maple leaf shapes, but had too much batter and not enough patience, so I made some circular cookies as well. These are perfect for those of you that enjoy a simple cookie that’s not overpowering in the sweet department. I LOVE extra sweet treats, but these mild cookies were delicious. Perfect along side a cup of black coffee.

      Super Soft Gingerbread Cookies

      • 2 1/4 cups whole wheat flour
      • 2 tsp ground ginger
      • 1 tsp ground cinnamon
      • 1/2 tsp ground cloves
      • 1/4 tsp salt
      • 1 tsp baking soda
      • 1 1/2 tsp of a chia or flax egg (I used chia)
      • 1/4 cup coconut oil
      • 1/2 cup Earth Balance vegan butter
      • 3/4 cup xylitol
      • 1/4 cup raw sugar
      • 3 tblsp vanilla almond milk
      • 1/4 cup molasses
      • a couple more pinches of raw sugar

      1. Preheat oven to 350F
      2. Combine your flour, spices, salt, baking soda, and chia or flax egg in a medium sized bowl.
      3. In a separate bowl, mix together your xylitol, sugar, coconut oil, and Earth Balance vegan butter. Then mix in the vanilla almond milk and molasses.
      4. Slowly stir in the dry ingredients until mixed
      5. Form into small balls (or shapes), sprinkle the top with sugar, and bake for 8-10 minutes.

      A few notes: I used part xylitol, and part sugar because I wanted to lessen the amount of sugar, but you can use all sugar if you want. I also ran out of coconut oil, so I used part oil and part butter, but you can use all of one or the other. I liked the combo of both.

      This was my first time baking with molasses and I have to say I was scared of the smell. Thankfully it tasted nothing like it smelled, and I already have requests to bake a second batch! Oh how I love seasonal baked goods, bring on the eggnog cupcakes!
