      The last of the onions from my wine box garden have been harvested. I decided to pull the last three today. Their box is now empty, just waiting to be occupied by something else! More onions perhaps? I am amazed at the transformation of the boxes. They are definitely nearing their end.

      I am very pleased with how the onions turned out. I pulled the first few to make room for the others to grow bigger, and they did just that.

      I’m like a proud mother sending her child off to college. Except I don’t have kids..I just attempt to grow good produce. Yay. I hope to have another update on my carrots and beets soon. The Swiss chard is just about finished, but I was able to harvest quite a bit of it!

      In random news: I have been getting weekly massages to help my back My insurance covers all but my copay, which is only $20 each visit. $20 for a massage is like finding Nemo in your bathtub. I’ve noticed that after my massage I feel better, until the very next day I am at work and get sore all over again. I think I need a new job. I wish I could hire my cat to massage me, but he only massages my stuffed animals.

       

      Don’t mind the awful music, just focus on the natural movement of those kitty arms. So jealous of that stuffed animal.

      Q: Do your pets do anything weird? My little black man kneads at my stuffed animals all the time, and “barks” at laser pointers.

      I ran 7 miles on Sunday. I ran 7 miles. I ran one more mile than my longest distance to date. I ran 7 miles.

      Days have since passed, and I am still on a high from this run. I ran from one town to another, and this run FLEW by. This was one of the best runs I have ever had. Lately I have upped my carb intake BIG time. I am really focusing on eating a lot of carb heavy foods on my run days, and so far I haven’t felt the usual fatigue I was used to feeling! This was the first run where I genuinely felt like I was ready for my half marathon.

      My only complaint on this run was towards my running shorts. There is a band of elastic around the bottom of the leg holes, and it’s never bothered me on my shorter runs, but this  time around mile 6 I felt it…the rash!

      Ewww..seriously…so gross (name that commercial.) This is nasty, and it hurt like whoa. I had a hard time focusing the last half mile because my shorts were grinding on my skin. I will def be needing new shorts for the longer miles. Anyway, to end on a positive note I am looking forward to my 8mile run this Sunday!

      A warrior meal was needed after this run. I channeled my inner frat boy while preparing this meal. Manfriend found some awesome vegan dogs, and I found this vegan macNcheezzee.

      Do you know where this is going..oh yes. Macaroni and hot dogs!!

      I couldn’t completely abandon my vegetables. Plus, I don’t know how to eat macNcheese of any kind without spinach. It makes the meal. I felt rebellious eating a meal almost completely packaged. It literally took 10 minutes. Needless to say I could run 10 marathons, sweat out all of my sodium molecules, and still have enough left over to go about my daily tasks after these packaged meals. Whooaa sodium!

      In random news: Lately I have been enjoying some coffee shop blogging.

      There is something about drinking tea, free wi-fi, and people watching while blogging that makes it feel like an adventure. I think next time I will bring a bed sheet to make a fort and my Buzz Lightyear cape to disguise me. Whenever someone drops a crumb from their muffin I will swoop in for the kill.

    • Good Eats

      It’s a shame I wasn’t more attentive in my 11th grade food science class. We routinely watched Alton Brown on Good Eats, yet I was always working on other homework, goofing off with my friends, or making chewbacca noises in the corner. These days Good Eats comes on, and I am alert with pen and paper ready to take notes on a new science related food project. This post has nothing to do with Alton, or with his show, but it does have to do with some VERY good eats.

      After my 8K last Saturday, I went to the farmers market to check out the goods. I’ve been to plenty of farmers markets, but I had never purchased any of the items being sold..until now. I immediately focused in on the giant fanning leaves that the Egyptians used for their royalty. I also noticed the bowel color changers in a bundle of 4.

      That would be giant swiss chard leaves, and beets..which well..change the color of your bowels. It’s hard to tell the size of these leaves from the photo, so allow me to compare my stub hand for a size reference.

      Seriously..huge leaves. Both of these items were $3 each, there was no way I was leaving without them. I knew right away what I wanted for dinner that night. It ended up being so delicious that I had the same dinner two nights in a row.

      Beans and rice, all wrapped up in the chard taco! This was SO good, and SO easy. Despite the deliciousness of this meal, it is definitely not first date worthy. Be prepared to make a giant mess.

      The bundle of leaves came with 8 giant fans, and they were gone in two days. I hope the farmers market by my house has these because I need more. I’m twitching at the thought of them. The second night I had these, I paired them with a random kitchen creation. Who likes jalapeno poppers? If you’re like me..you can easily throw away 20 poppers in one sitting. Sadly enough..this was a common trend throughout my youth. It’s no wonder I was a chunky child. These days I don’t find myself eating poppers all that much, especially now that I eat a vegan diet. Enter idea: vegan cornbread popper muffin..things.

      This was crazy easy. I used Bobs red mill corn meal mix, and followed the recipe on the bag to make the cornbread. Cut up a few jalapenos stuffed with vegan cream cheese, and baked them until they were brown! If you’re not vegan, make em with regular cream cheese!! They turned out great!

      And that..is what I call good eats!

      Yesterday I ran race number eight of the year. My first 8K race, which is just .03 miles shy of 5miles (which is the most common distance I have raced thus far). An 8K for the eighth race, how appropriate. The course ended up totaling 4.9miles according to my Garmin. I once packed myself some Starburst to eat during a 10K, but found out there is gelatin in the ingredients..gross. This time I tried something different.

      To be honest, these jellies are so delicious I need any excuse to eat them..including a mere 5mile run. I stuck these in my pants for safe keeping.

      I love the secret pocket my running pants have. Some people might use it for their keys, or money. I most definitely need mine for some kind of edible item. I didn’t even care that I had a giant bulge protruding from my left hip.

      Look close, right under the 7 it looks like I am packing a silver bar.

      The race course was great. The inclines and declines were mild, and the temperature was ideal. Not to mention I was able to run next to a total hunk near the finish line.

      I’m not sure how or when, but 4554 ended up pulling ahead of me in the last stretch…… and beat me. I don’t know this for sure, but I am going to guess this guy is a heart doctor. You go mystery-coco.

      I finished the race in 49:20 at a 10:04 pace. My only complaint was about the girl running so closely behind me that her breathing sounded louder than a jackhammer, and her running number was flopping all over her shirt which annoyed me. I wished I had that silver bar to throw at her.

      Post race I stuffed my face with free watermelon, and my pockets with free builder bars. Aside from being manufacture on machines where dairy “may be present in traces”, these bars are vegan friendly and oh so delicious.

      I grabbed six, but couldn’t wait to eat one. I’ll give you one guess as to which flavor is my favorite. Another race down, and one race away from Disneyland! Next week is my first 7miler..acckk!

    • Carrots & Goats

      It’s time for another garden update. I have posted about my onions, my swiss chard, and now it’s time to show you my carrots.

      The beets and carrots both needed to be thinned out again. The carrots that were thinned are shown above. I salvaged the bigger ones, and gave the runt carrots to the neighbors goats.

      Who needs a compost bin when you can have goats!? New life goal: not only do I want a flock of chickens, (is this what they’re called? a flock..a herd..a bundle?) but I must own two goats. Not one, not three..but two. I can feed them my leftover food, and train my cats to ride them like horses. The carrots were stored in a mason jar for a day, and then they were turned into a delicious meal.

      There on the left..are my precious baby carrots from my garden! Along with an onion from my garden, fried purple potatoes, butternut squash, roma tomatoes, all surrounding tricolor quinoa. This meal was perfect.

    • Vegan With Benefits

      In 2006 I took the plunge and became a vegetarian. Well, more like a “carb-o-tarian” because although I wasn’t eating meat, my vegetable intake was quite pathetic. I was a senior in High School and nutrition was important to me, but it took a back burner to the chips, cookies, and late nights with my friends.

      My reason for going vegetarian wasn’t to loose weight, or better my lifestyle/eating habits, I became a vegetarian simply because I was an avid animal lover. My best friend and I took the plunge together (she is with me in the picture above) which made it easier. The smell of burgers was taunting in the beginning, but having someone with you through the process made the burger smell disappear..almost.

      It was easier to remember why I chose this lifestyle when someone else was with me throughout the journey. Regardless of whether my tiny voice made a difference in the world, it made a difference to me knowing I was following my heart and respecting my animal friends.

      He loved this coat..I could tell by the way he dug his claws into my arms while trying to escape.

      Don’t get any ideas, I actually hate tongue to the face.

      For about three years I continued with a carb-o-tarian diet. It wasn’t until 2009 when I started working at a smoothie shop that I reevaluated what I was eating. I was 20 yrs old and my passion for healthy eating was developing. I was in that shop every day. I became the store manager and was able to work endless hours while attending school.

      I was taking science classes learning about nutrition, anatomy, and the inside of the human body. All of this new found knowledge fueled my desire to learn more. I loved this job more than any job I have ever worked. I had smoothies everyday packed full of fruit, vitamins, supplements (safe ones I promise) and more fruit! Wheat grass became my new favorite shot to take.

      Management didn’t take my personality.

      After almost two years with this company, the owners tried to transition to a smaller business under their own name, and ended up shutting down. Saddest.Day.Ever. I couldn’t bare living without my beloved blender, so I bought my own. He wasn’t cheap, but he was one of the best investments.

      Fast forward about 5 months after being “laid off” due to the business closing. It was now January 2011, and I stumbled across a blog that I began reading religiously. This led me to another one..and then to another one..and then to one more. Eventually I became so infatuated with reading blogs that I started my own.

      This is when my inner foodie escaped and began to thrive. My fruit intake was spot on thanks to smoothie work, but my veggies still needed help. I started roasting, steaming, and sauteing veggies every day. I fell in love. My plates turned into rainbows. 

      I was officially health conscious. I ate an “official” vegetarian diet (lots of vegetables) for two of the five years I had claimed to be a vegetarian. Within these two years I had a few spurts of vegan experimenting, but nothing that lasted more than two weeks. In March of 2012 all of that changed.

      I decided to try a vegan diet again. It was time for a change, and I was ready to be challenged with my culinary adventures. So this was the plan..go vegan for two weeks..see how I like it and then decided what I want to do next. Within those two weeks I noticed my appetite increase (or so I thought.) I felt like I was eating twice the amount I was eating before when I was still eating cheese. At this point my running had increased as well, and I devoted more time to bettering my athletic abilities. After two weeks of eating more, but not gaining any weight I realized this vegan thing might be a new lifestyle change.

      I felt my options grow wider. I noticed how much dairy (cheese) I consumed during an average meal. I ate cheese just like most Americans eat meat, almost every single meal! It was ridiculous! Cutting cheese out forced me to expand my meal options and forced me to experiment! More grains, more vegetables, more fruits, more beans, more legumes, more raw, natural, REAL food. Unprocessed foods topped the list of my go-to’s at the store. I was eating enough food for a football team, but maintaining a healthy weight.

      So where does the “vegan with benefits” title come to surface with all of this? Here’s how I see it. I enjoy eating vegan. I like the way it makes me feel, but most of all I LOVE knowing exactly what I am putting into my body..down to every last ingredient. Being vegan forces me to read labels diligently and effectively. If I don’t know what something is..I won’t buy it. I am eating as close to the earth as possible.

      Does this mean I will never eat dairy products again..possibly not. I want to travel in my lifetime. I want to visit Italy, Australia, Europe..everywhere. When I make it to Italy I want the option of tasting the culture through the food. This is where I am at now, I eat a vegan diet, but don’t give myself the label. If I choose to go forever without any animal products, so be it. I also eat locally sourced honey, so..yeah. #notarealvegan.

      I feel healthier and more alive than I ever have before. I love creating new meals, and trying new foods. The past year has allowed me to grow into my foodie title and expand my resources. I still eat cookies, candy, carbs, and everything in between, but they are all made without dairy or eggs. I don’t feel deprived whatsoever. Should I feel as if I physically and mentally miss cheese, I will have a piece..but I don’t see that happening.

      As for being a vegetarian, this will be something I always do 100%. I will never willingly eat a piece of meat as long as I am alive. There is no “benefit” with this lifestyle choice, animals always come first. I am aware of the inhumane practices used to get milk, cheese, eggs, etc..therefor I will try to purchase from local farms, respectable stores, and stay away from unethical companies should I feel the need for animal products. I’m a work in progress.

      That’s my story, and I’m stickin to it.

    • Quick and Easy Meals

      I love making food. I love the entire process that starts at the store, and ends with a sigh of contentment after eating my meal. I can spend hours making a meal, but there are those days where I just want something quick, easy, but still full of nutrients. I made two meals this past week that were just that-quick, easy, and nutritious.

      First up was my marinated fried tofu and bok choy, served over a bed of brown rice, quinoa, and roasted Brussels sprouts. Sounds fancy right?

      This was my first time using bok choy, and I loved this vegetable!! It was delicious and paired perfectly with the entire meal. It tasted delicious alone, but the marinade was what stole the show.

      Everyone needs to try this once before they die. That is all.

      I am drooling just thinking about this meal. I sauteed the bok choy in coconut oil, fried the tofu in coconut oil, cooked the rice/quinoa as directed, and put the Brussels in the oven until they browned. Once everything was complete I combined the bok choy and tofu in a pan and poured the crack marinade over the top to let the sauce soak in. Combine everything onto a plate and admire your masterpiece.

      Next up was Israeli cous cous with mixed greens, tomatoes, Brussels sprouts, carrots, and broccoli. This was even easier than the tofu mix. I cooked the cous cous as directed, and while that cooked I sauteed the veggies in coconut oil until they softened.

      So.Good. Little pillows of heaven.

      Of course no meal is complete without something sweet, and I have two easy treats for you as well. Starting with an ice cream ball.

      Select your ice cream of choice, roll it in to a ball (using a spoon or ice cream scoop) and place onto wax paper. Set this in the freezer while you prepare your coating. I used pretzels, but next time I am using cookies. Take the balls out of the freezer and roll them in whatever coating you choose!

      Next was 5 minute baked peaches! I have baked a lot of apples..A LOT! Apples never get old, but peaches are in season so it was time for something new! Cut the peach in half, stuff with brown sugar, and bake for about 5 minutes. You don’t want the sugar to burn. If you add butter you can bake it longer. No butter for me though, this would defeat the 5 minute bake time. Pair these with ice cream..or ice cream with crumbled pretzels!

    • I Think I Can

      Saturday morning I accomplished something I had never done before.

      I put on my running gear, and ran up a mountain. I had completed six races prior to this one, all ranging between 3-6 miles. The mileage varied, but the terrain was always similar. Road runs with inclines and declines. It was time for something new.

      Before starting this race my only concern were the slugs. I hate slugs, in fact I loathe slugs. Most people are afraid of spiders and heights..well I am afraid of slugs. I don’t exactly live in an area that accommodates this fear. By the end of the run I could have shared a Snuggie with all the mountain slimers. They were the last thing on my mind.

      The weather was decent upon arrival. It wasn’t raining, but it wasn’t sunny. Typical weather for a Washington day.

      I love my hot pants.

      I am a big fat weenie when it comes to running up hills. I would rather donate blood.  The hills I normally run up are tough, but don’t last more than a mile. This mountain had over three miles of straight incline. We climbed and climbed with a few small teasers of rest. I might have whined.. OK I whined. The run was 5.3miles total and 3+ miles were STRAIGHT uphill. My time was sLOooOwww, but I finished. The run looked something like this.

      Obviously 3rd grade paid off when all I could draw was one type of NW native tree. This is what the trail looked like..I think. I didn’t see much trail because my slug radar was on, and by the time I got to mile 3 I stopped caring about the slugs and started thinking about where on this mountain I wanted to die. I was sure my heart was going to give out at any moment. I was comforted by the amount of people I saw walking up the hills. Including the marathoners. These hills were NO joke. “I think I can, I think I can, I think I can.”

      5.34 miles later I was done. The decline was great, though it wasn’t enough. I don’t know how it was possible to climb up more than we came down..but I swear that’s how it worked out. I am proud of my accomplishment, and can now add “trail runner” to my resume..maybe. I partied with the trail runners, these people are a different breed. I tried to fit in by getting muddy, but I am sure they laughed at my rookie attempt.

      After the run it was all about refueling.

      My first trip to Chipotle. A veggie bowl with rice and beans. Swoon. I must admit the run was enjoyable when the terrain was flatter, and the views were of mountains and tops of trees. I don’t see another trail run anytime soon in my future, though someday I will give it another go. For now..my focus continues to be on the Disneyland half-marathon training!! 2 weeks down, 10 weeks to go!

      Q: Who out there has completed a trail run? Did you hate/like/love it? I hated the hills, liked the decline, and loved when it was over! I’d like to give a big fat thank you to my boyfriend for putting up with my complaints and pushing me to keep going.

    • New Digs

      I have been a frugal frump for about a year now. I refused to purchase proper running/workout gear because I swore my cotton t-shirts were perfect for covering my sweat laden body. With that, I also never had much success finding running gear that looked good. I already run like a pregnant tortoise, and I don’t need tacky clothes making me look worse. The bottoms are always too snug, highlighting the no no spots. The tops are awkward fitting and my lady parts hang out too much. I am running, not shaking my tail feather for money.

      I set out the other day to purchase an arm band for my iPhone/music because I was being frugal with this as well. I have been putting my music player in my sports bra for the past few years, and it was time I upgraded and stopped looking as if I had a botched boob job. While at the store, I decided to check out the workout clothes just to pass time. Lo and behold I found a black tank top to run in that would be perfect for summer (I have run in this top three times now and love how comfortable it is.) This sparked a fire inside of me to keep going. I wanted more. I got in my car and headed to the mall where a miracle happened.

      Thumbs up is a good sign..I tried on multiple tops and bottoms. My goal was to find a pair of running shorts that didn’t make me look like I had bulging elephant trunks coming off of my hips. These shorts in the picture are my new obsession. I am in LOVE! I’ve run in them, cross trained in them, and worn them around the house. I can’t take them off!

      I came home with FIVE new shirts, a new pair of shorts..and the most amazing running pants. Seriously..prepare yourself.

      O.B.S.E.S.S.E.D! I am wearing these tomorrow for a trail run! I’m hoping the green will help me blend in and look as if I am the speed of light. I have wanted hot pants like this for so long.

      I will no longer be wearing heavy cotton shirts that soak up sweat like a sponge. I had fooled myself for far too long, these new clothes are heavenly. My only embarrassment now will be the cheesy grin on my face while running in these light weight clothes. Something like this..

      Perhaps now I can get a better running photo.

    • DIY: Compost Bin

      Wasting food is worse than nails on a chalk board..almost. I shed a small piece of my heart each time I throw food into the garbage. I still have my entire heart because I refuse to waste, I will save even the smallest morsel of a meal to incorporate into the next. So what do I waste then? Scraps of food that I deem inedible: think watermelon rinds, lemon peels, garlic skin, wilted leafy produce. Rather than throw these away, why not compost them!

      Compost bins these days can be expensive, and take up a lot of space. There are plenty of DIY projects all over the internet, from digging holes in the ground to getting an old garbage can and filling it with left over food. I know someone who recently made a compost bin out of milk crates. It’s worked out well for left over scraps!

      DIY Compost Bin 

      You wont need much, just some milk crates (3 of them for a good rotation system), weed blocker, paper bags, and a hot glue gun. 

      These are the crates that were used. There are three, but I started with two to get the compost going. You won’t need the third one for a bit.

      Oh surprise, I used a TJ’s bag. You’ll need a sturdy paper bag to lay on the bottom of the bin. Eventually this will compost into your soil, but it will take time and lets the food break down first.

      You will take the weed block fabric of your choice, and hot glue it to the four side walls of the bin. Do not put a layer on the bottom, the bottom is only for the paper bag. You don’t want weeds growing into your compost, they taste like intruders.

      Glue glue glue. This part is dangerous, I couldn’t risk burning my clumsy sausage fingers.

      Voila, repeat these steps on the other two crates and you are almost ready to start spoiling food for fresh soil.

      Add a little bit of soil to get the bin started.

      The lid helps to keep the soil dark and moist, but you will need to let the bins have sun and water occasionally.

      Now for the rotation process: To make this easier to understand we will call the crates A, B, and C (eventually you will need three crates.) The top crate is A, middle crate is B, and bottom crate is C. Once crate A is 3/4 full you will swap it out with crate B. Crate B then comes to the top. Once crate B is 3/4 full, you will take whatever is left in crate A (which should be partially broken down by now) and POUR that into crate C. You will then put crate A back on top, and crate B back into the middle. This will begin your cycle. Crate C is there basically to collect the leftover waste that needs more time breaking down.

      This compost bin is strictly veg friendly. No meats or animal products will find their way into the bin. With meat you have to worry about other breakdown methods. If you want a meat friendly bin, this is the wrong blog for you.
