      ..I had a love affair with a sandwich. Not just any sandwich..the sandwich. The mecca of all sandwiches. The peanut butter and jelly.

      Please just take a moment to reflect on how beautiful those chia seeds are. Like little eggs waiting to hatch rainbows in my stomach.

      The time has come where I no longer crave a PB&J. I am ashamed to even admit this. I have eaten a PB&J every day for what feels like a year. Some days I skipped out on one, but made up for it by eating two the next day. The past few days I have forced myself to eat one. Why am I tell you this? It’s a sad day in Brittanyville..I am officially taking a break from peanut butter and jelly. I have eaten the same thing everyday for weeks and am starting to feel sluggish and sick. I can’t survive off of PB&J all day. It’s time to start creating better meals in the kitchen again.

      Another depressing topic, I have no motivation to run. None. Not a single fiber in my body has said to me, “hey we should run, it makes you feel good and gives other people a good laugh.” Instead I continue to spin spin spin at the gym until my thighs burn. I’m drowning my sorrows on a spin bike and feeling shitty for not wanting to run. Someone please give me a push and convince me why I should go run right now. Otherwise I will revert to running 2 miles and calling it good. Wait didn’t I run a half marathon recently? Yeah, so much for that. Maybe I should break up with running for a bit too. I ate a lot of PB&Js when I ran, maybe they go hand in hand. I can’t do one without the other.

      Just in case you’re wondering what I’ve been doing with my time while I should be running, or reading, or doing something productive (because I know you’re all dying to know) I have been spending time with the two men in my life. Thing one and thing two.

    • Black Bean Blender

      What would you guess this pile of slop was meant to make?

      If I told you which setting I used would that help?

      What if I told you what was in the blender? Bananas, maple syrup, cocoa, cinnamon, vanilla, sugar, salt, oats, and black beans..yes..BEANS. What if I told you this combination made the silkiest brownies I have ever had? Would a picture help?

      Black Bean Brownies

      • 1 15oz can of black beans drained and rinsed (I used these ones because they are unsalted)
      • 2 ripe bananas
      • 1/3 cup maple syrup
      • 1/2 cup unsweetened cocoa
      • 1 tbsp ground cinnamon
      • 1 tsp vanilla extract
      • 1/4 cup raw sugar
      • 1/4 tsp salt
      • 1/4 cup oats
      • 1 cup chocolate chips

      Preheat your oven to 350. Grease your 8in pan. Combine all of your ingredients into a blender or a food processor and blend until smooth. Add chocolate chips and stir with a spoon. DO not blend the chips. Pour batter into your pan and bake for 30 min or until a toothpick comes out clean! SO easy! I also added a super secret ingredient for extra OOMPH..

      Instant coffee for extra flavor! Seriously, these brownies are SO silky. They don’t have the texture of regular brownies, but boy are they good!! High in protein, and high in fiber..I’m sold. Lets just look at that picture one last time.

    • Virtual Vegan Potluck: Chocolate Chip Cookie Dough Bites

      It’s that time of year again. Time to party til our tummy’s hurt with the Virtual Vegan Potluck! Big shout out to Annie for creating this amazing online party, and giving me another excuse to stuff my suck with sugar and chocolate!

      Who loves cookie dough? I love cookie dough so much, that whenever it comes time to make cookies I eat more dough than baked cookies. I usually eat myself sick, but it’s just SOOO good. Before I went vegan I still ate the dough!

      You can imagine my excitement when I discovered this deliciously easy recipe online!

      Chocolate Chip Cookie Dough Bites

      Ingredients:

      • 2/3 c raw cashews
      • 1/3 c oats
      • 2 Tbsp Agave
      • 1 Tbsp Maple Syrup
      • 1 Tsp Vanilla Extract
      • 1/4 c Chocolate Chips

      Directions:

      Blend the oats and cashews until they make a flour like substance. Then add the agave, maple syrup, and vanilla. Blend it again. When the dough starts to ball up and bang around your blender, you have the right consistency. Then add the chocolate chips and stir by hand. This makes a small batch, so I call it a personal batch. You may choose to share ;).

      I made these twice. Once with my blender, and once with a food processor. The photos I have are from the food processor which didn’t make the bites as smooth. I also stirred the batter by hand because the food processor was small, this also made for a lack of smoothness. When I used the blender I used honey instead of agave (which isn’t vegan for some of you) and this made the balls smoother, but STICKY! Either way this recipe is quick and delicious!

      The white chocolate bites were for a non vegan. She loved them ;). To get a better idea of what these looked like when I used my blender, this photo is from the source of the recipe.

    • Rain Run Fun

      Saturday morning my alarm went off at 7am. I woke up to the one sound I didn’t want to hear on the morning of a long run. Rain. I wanted so badly to stay in my warm bed, with my cat purring in my ear to lull me back to sleep. Instead, I got myself up, gathered my things, and set out for the hour drive to my race destination.

      I enjoy running in the rain. I run better, I run faster, and I run happier. HOWEVER, I don’t like starting a run when it’s already been raining. When it’s already raining that mean’s it’s cold, and it’s wet. Basically I need to already be running before the rain starts. I say this now, but always end up loving the rain runs regardless. Naturally I wore something to protect me from the elements.

      Gloves and a headband. Oh and a short sleeve shirt..because I am probably the only runner in Washington that gets hot on a 40 degree run. The wait before the run was cold, and wet. This was going to be my first solo long race. I arrived early, got my running number, and couldn’t help but want to go home.

      Umm..wtf is this? Had I known it would have been such a hassle to print off running numbers without any identification of the race, I would have taped a piece of computer paper to my chest to save them the 2 bucks. I paid almost $40 for this race, you’d think the running ID’s would be a LITTLE better than just a 5 and a 6 slapped onto a white sheet of paper. If I were in charge it would have looked more like this.

      Anyway, I grabbed my number and there had to be maybe 10 cars waiting with me. TEN..this was a race..WHERE were all the people!? It didn’t take me long to figure out this was a small race. I don’t like small races. I had over an hour to kill, and had to sit in my car watching the rain fall because it was wet, and there weren’t many people to talk to. Still kind of wanting to go home..

      I had one of two choices: I could either suck it up, run this race alone and be bored and soaked, or I could call and beg someone to come run with me, not be bored, and still get soaked. I chose the latter.

      My friend lives 4 miles from where the race was, and happened to have a free schedule for the day. He showed up and ran this race with me, and it was one of the BEST run’s we’ve had to date! I have to say, this was a very unorganized race..but we made the best of it and had a blast. Not only did we run 10 miles with a good amount of hills, but I cut 10 minutes off my previous 10 mile PR. We finished 10.2 miles in 1:45:46, and the 10 miles in 1:43:46.

      I didn’t care about the rain, I didn’t care about the hills, I didn’t care about the woman that had no idea how to run an aid station and had us pouring our own Gatorade, I didn’t care about the lack of organization, I didn’t care about the awful running ID, all I cared about was having a fun time.

      After the run we had to stop at the store to get food. I saw this meal on another blog and had my mind set on this post race carb feast. Please excuse the photo quality, I needed calories more than I needed a good photo.

      If you have access to a car, drive to the store right now. Buy a sweet potato and a can of baked beans. Your life will be changed. As if this meal wasn’t enough, I was later surprised with vegan ice cream and Oreo’s to make my own vegan friendly dessert. I swooned.  Whoa long post..almost done.

      So what’s the moral of this story? Don’t be a race snob like I was, a run is a run is a run. It doesn’t matter if it’s a huge event with 17,000 people (Disneyland Half) or if it’s a small run with 40 people. We are all coming together for a common hobby, and that is to enjoy a good, solid, hard run. Would I have enjoyed this race as much if I were alone? No, but I got lucky having someone right around the corner. Let’s be real though, this running number doesn’t really fit in on the running wall.

      Q: Have you ever been somewhere and wanted to leave, only to realize you needed to suck it up and either call for backup or enjoy the opportunity? I wouldn’t have left this race, but it wouldn’t have been nearly as fun had I been alone.

    • Solo Running

      Over the past year I have noticed a lot of differences between running alone and running with a partner. My running partner lives far away now..far far away..too far away. This means my runs are all done alone. It wasn’t so bad at first, in fact it was nice to get out with my thoughts and just..run. Then while I was on my latest run I thought about all the down sides to running alone.

      Running alone means..

      • No one there to talk with. I get bored easily, and who’s to say I wont dart into the road if a squirrel catches my attention?
      • No one there to laugh when you snot rocket all over your clothes. People driving by don’t count..in fact that’s more embarrassing when a stranger sees you.
      • No one to high five after the run. Running is great alone, but coming home to brag to my daily mile is nothing like accomplishing a great run with another person.
      • No one to save you from weirdos. OK this is seriously getting annoying. Every time I go running I get scared. I see weirdos in their cars honking at me, waving at me, smiling at me, turning their heads to see me. Then there’s the weirdos on the street. I need to get some mase. It’s like night and day my comfort level running with someone vs. alone.
      • No one to push you that extra mile. You mean I have to find my OWN motivation to keep going!?
      • No one to laugh at the other runners with. I’m not that mean I swear..
      • No one to brainstorm ideas for lunch with. ALWAYS think about what’s going to be consumed right after a run..well..after I cool down of course.
      • No one there to cry/hug when you achieve a new PR.

      There are still some good sides to running alone like feeling strong, accomplished, independent, letting your thoughts run wild, and being one with nature. Basically I have been spoiled by having a good running partner, and now that I don’t have one anymore..it sucks! If any of you runners need a slow, but fun running partner, I’m your girl! Seriously, I don’t want to envision a scene from CSI while I run anymore!

      Q: Do you prefer to run/workout alone or with others? I do like both, running I like with another person. Hiking I like with other people, but classes at the gym I can handle alone.

      Lately there have been a few things I have been loving. First and foremost would have to be my fall walks. I have been going on quiet a few walks the past few weeks, some with a partner and some alone.

      I don’t know what it is about the blog world, but I have never “met” so many people who love fall just as much as I do. It must be an unspoken rule that to blog you must love the season of pumpkins and crisp air.

      I went for a longer walk into town and back a couple days ago, and the walk was about 2.5 hrs. Nothing crazy, just another walk. The next day..I felt like I was hit by a bus. I can run 13 miles in 2.5 hrs and feel fine the next day, but walk for 2.5 hours and feel like I just gave birth out of my hips?? I have no other explanation other than I haven’t been eating/drinking enough. My appetite has been off so I haven’t been eating much, but there is no excuse for the water consumption.

      In an attempt to help with my energy levels I made myself a batch of the most amazing balls. I have been loving these for weeks, it’s damn near an addiction at this point. Please do yourself a favor and make these today. It takes 20 minutes of your time, and will “money back guarantee” balance your serotonin levels.       No Bake Energy Bites 

      • 1 cup dry oatmeal
      • 2/3 cup coconut flakes
      • 1/2 cup almond butter
      • 1/2 cup ground flax-seed or wheat germ (both turn out equally delish)
      • 1/2 cup chocolate chips (I tried Crasins too and they were great)
      • 1/4 cup honey
      • 1tsp vanilla

      *Note: Peanut butter also works in place of the almond butter, however both need to be creamy, and preferably store bought jars. While I love my self ground nut butters, they are much too dry for this recipe. If you must use fresh nut butters, try adding a little bit of coconut oil to ensure the end result isn’t too dry. Otherwise the bites won’t stick together!

      Stir all ingredients together in a medium bowl until thoroughly mixed.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep in the fridge up to 1 week..if they last that long!

      If you’re lucky, the last ball you roll will end up having twice the amount of chocolate chips. I am saving that one in the top right corner for last! These are great as bites on the go, but I have been eating them as a dessert as well. SO good.

      Sometimes if I am feeling really wild, I will make these with both chocolate chips AND crasins. Best of both worlds!

    • It’s Official

      As I finish out my last week at TJ’s, I have been lucky enough to be around for some of my favorite seasonal items to return. Nothing says fall like honeycrisp apples. It’s official, fall is here.

      Last year these apples sold for 99cents each..99cents!! That is unreal. I remember one time going to a different grocery store and paying around $3.00 for ONE!! This year, TJ’s is selling these apples for $1.19. I wish they were still 99cents..but it def beats $3.00! Even more important than these apples..are cookies. Cookies cookies cookies.

      I am obsessed with these cookies. Not only do I love Joe Joe’s..but anything Halloween related gets my adrenalin glands swelling with excitement. My inner 5yr old oozes for cookies with pumpkin faces. I may or may not have a box of these stashed in my locker to quell my hunger at 4am. I have worked 4am-1 all week, and then go to class tue-thurs. I will be ready for casual mornings.

      I have been doing a lot of snogging with my main man these days. Snog/study time is what I call it. I start out reading like a good student, but then become easily distracted by black fur and long whiskers.

      He’s so dark you can’t even tell he’s there.

      My best friend is moving about three tenths of a mile away from me this week. She used to live in the same neighborhood, but moved away when we graduated high school. I am so jazzed to have her in walking distance again for the days I become swarmed with boredom and need to laugh at funny videos online.

    • The Final Harvest

      I harvested the beets from my wine box garden. These were the last to be harvested.

      Baby beets. This was what my parents called me when I was a small drooling child. Beeters, beets, and on taco night–beaners. I have no idea where I get my odd quirks from. My favorite harvested beet was the largest of the bunch.

      They may be small, but I am still proud of these bite sized beets. I must admit, pulling these final veggies out of the final wine box was a bit sad. With the final harvest comes the complete reflection of the garden. It was a complete success, and I couldn’t have asked for a better first time. One last reflection…

      1. Swiss chard came first. This was eaten for months until finally the deep green faded from the leaves, and the stalks grew tall and frail.
      2. The onions were the next to be harvested, however the first harvest was simply to “thin” out the wine box to make room for some of the onions to grow larger. These were harvested over the course of a few months, and finally at the final harvest I had three giant onions that lasted for days!
      3. Next up were my carrots. These took their time to grow and were harvested twice. Once to thin them out, and one final harvest to finish off the box. I may have bragged about that carrot the size of my hand.
      4. Lastly, are the beets seen here in this post. Smaller than I hoped for, but bigger than the seeds they started as.

      I can’t wait to start another mini garden. Right now I am trying to grow jalapenos. I actually planted these a few months ago, and they are moving pretty slow. Stay tuned for the progress on this.

    • Pumpkin Lentil Soup

      The first pumpkin of the season has been consumed by my face.

      TJ’s pie pumpkin, whopping price of $1.99. This happens to be the same price as the canned pumpkin. Why buy a can when you can use the real thing? This pumpkin was sliced, diced, chopped, emptied, and eaten like it was my job. I was able to get three uses from this bad boy.

      Coconut oil and sea salt pumpkin seeds. Pumpkin seeds happen to contain a variety of minerals, vitamins, protein, fiber, and are low in carbohydrates. Ideal snack for my vegan diet.

      Half the pumpkin was saved for the next mornings breakfast, pumpkin pancakes.

      Early morning shadows

      I have missed my pumpkin pancakes. I do prefer canned pumpkin for pancakes because it’s much creamier than fresh pumpkin. My favorite part of this pumpkin was the deliciously spicy soup it was initially purchased for.

      Pumpkin Lentil Soup

      • 1 small red onion
      • 1 small cayenne pepper (or if you don’t like spice, a mild pepper works too)
      • 1tsp cumin
      • 1/2 pie pumpkin
      • 2 cups vegetable broth
      • 1 cup water
      • 1/2 cup red split lentils (I used the ones from TJ’s)

      –The first thing I did was cut the raw pumpkin in half (actually Manfriend did, I’m a wimp) and bake the halves at 350 until the pumpkin was pliable. When the pumpkin was done I set it to the side and started getting the other ingredients ready.

      –Dice up the onion and pepper into a pan to saute. Add the cumin and cook until the onions turn translucent. Once these are done you can then add the vegetable broth, water, pumpkin and lentils (make sure your pan/pot is big enough.) The lentils need a few minutes to cook. Once the lentils are done to your liking, pour the mixture into a blender and blend until smooth.

      This is the perfect fall soup. I knew I had to start the first day of fall the right way with pumpkin, pumpkin, and more pumpkin. I even tried my first pumpkin spice latte (soy) from Starbs! I hope to find plenty more fall inspired recipes over the next few months!

      I AM SO FREAKIN EXCITED!! Need I say more!? It’s happening folks, pumpkin is coming. I don’t think I have ever used the word folks before. Something about using it makes me feel like a mature english teacher. I am rambling..

      I purchased my FIRST pumpkin the other day. I literally squealed when I saw it, I probably would have peed had I not just emptied my bladder..too far?

      BABY pumpkin!!! I had to pose with it, and with other pumpkin decorations. My favorite decoration is my Mickey Mouse pumpkin head from Dland.

      I specifically bought this pumpkin to sit on my windowsill so I can stare at it all day. Soon I will buy a pie sized pumpkin to eat, and a large pumpkin to carve.

      I am so jazzed. Along with pumpkin comes..OTHER SQUASH!

      I am going to turn into a squash this year, you just wait and see. I want to find a vegan spag squash meal.

      Monday I did something I haven’t done in a while. I worked 4am-11:30, came home to change, got on a ferry boat, and went to Seattle to celebrate my best friends birthday.

      I even had a drink, WHOAAaaA there.

      My partying days have long been expired, so it was fun to put my party pants on and spend time with my homies. Needless to say on the 9:00 ferry ride home I passed out. It was a long day. That’s about all the wildness I can handle for now.
