Fact: A good human being gives you food. Lord help them if I get hangry…
These CORE bars are complete meals on the go, and they are SO good! My favorite part? They perish. 1 week on the go, 1 month in the fridge, and 9 months in the freezer: Real food goes bad. Perfect for hiking, biking, or running late to work.
These were gifted to me, but you can find them online or at a select handful of Whole Foods locations. Eat good, feel good.
Fact: Potatoes are the essence of life. I cannot stop eating them. All of them.
Fact: I’ve become the Mary Poppins of pet sitting. Four pets in the last 2 months.
Maybe I’ll quit my day job….
Maybe not. I did just get promoted after all. #ifinallysaidyes
Fact: Summer is coming. I’ve started prepping for minimal clothing season by partaking in a running “challenge.” 100 mile May. Amateur stuff for those ultra runners, but it keeps me running daily even if just 3-4 miles.
It helps balance out the potatoes…
Fact: Bananas are under-appreciated. I’ve been dipping mine into a mix of seeds: hemp, sunflower, and pumpkin. Or with a Core bar…or both. 😉
Scratch that…fruit in general. I’m literally eating at least 6-7 servings a day right now.
Fact: I sometimes change out of running clothes, but it’s rare.
Fact: This post was nothing more than a giant excuse to purge random photos I’ve taken the last two weeks in a format other than my usual Early Morning Confessions.
I’ll leave you with a photo of some of the worst coffee I’ve consumed in months. Tasted like foot soaked bath water. I still drank it.
Q: What’s your fact for the day?

Congrats on accepting the promotion!! Those CORE bars sound awesome. Love foods that are perishable 😉

Love your super healthy meals. They look delicious!
familyrulesbyplainjane
Should we be concerned that you know that a foot soaked in hot water tastes like? LOL! I enjoy your blog so much. Your fun spirit shines through.
Brittany
I love that you commented about that, and thank you for your kinds words. ❤

My fact of the day: If you forget the oven-mitt in the oven and then turn on said oven, you’ll get a lot of smoke.
Also, the insides of the oven-mitt melted together. Fortunately I discovered it BEFORE the fire alarm went off. This was at 5 am in the morning and I don’t think my neighbours would have appreciated the early wake-up call.
Dannii @ Hungry Healthy Happy
Congrats on the promotion. I honestly couldn’t give up potatoes. And why would I want to? They are awesome!
Appalachian Philosopher
Love the blog! I’m not gonna lie, that cash was gorgeous!!! lol
Hayley
I am obsessed with potatoes lately too (slash always). I ate a sweet potato with every meal yesterday. No shame.
Britta
Fact of the day: I get to see your days in FIVE DAYS! FINALLY!!!
I freaking love potatoes too… so much. Mainly in chip form. Jk, last night I made boiled potatoes and they were so dreamy and ahh, yum. You have an awful lot of colourful bows B. Willy! I hope you put a different one in your hair errday. And I hope you wear one when I meet you. 😀 hahah again, just kidding.
Love your face and I can’t wait to see that face for REAL!! xx

Potatoes make the world go ‘rouuuuund. I actually haven’t had one in a while maybe I’ll go to the market today and get some…yeah, that’s what I’ll do.
Also I love how you ended your post with the worst coffee bahahah ❤ genius.
Amy @ A Desert Girl
The potatoes with spinach and asparagus look really good! I love that you’re the go-to person for house sitting. If we lived closer to one another, I’d enlist you to watch our cats!
Congrats on the promotion!
Jessica @ VEGGIE RUNNING MOMMA
Veggies look so fresh and tasty.! broccoli and cabbage sounds soo good.
bananas are my go to fruit. I love that I can just grab them and go.
Congrats on the promotion 🙂
globalrunnergirl
Hey, great idea about dipping the banana !
Heather @ HeatherRunsFast.com
Congrats on accepting the promotion Ms Thang! Sweet potatoes are the bomb- sweet or savory, they are delish. I’m impressed(?) you drank the foot bath coffee. Work had the worst coffee for a while and I refused to drink it. I rather go without than suffer!!! I miss living in running clothes!
Ashley @ A Lady Goes West
Fact: I eat ONE sweet potato and ONE banana every single day of my life. I have to include them in a meal or I’m not a happy camper. And YAY for rolling in the dough and real food, you go Brittany!
50statecanuck
I wish I was rich and could afford a personal chef…sigh.
LOL
Arman @ thebigmansworld
Eat all the potatoes all the time! Im craving some now…
Kelsey
Woo for the promotion! And yes to potatoes, always. =) I could go for a good sweet potato right now! Fact: work is hard when its slow, and makes me think they should just send me home. #help
Amy
Ohmygaaahhhhhhh… Gimme ALL the potatoes!! Especially french fried ones. I’ve been on a binge recently… Like, baking french fries (so they aren’t quite so bad) every night. It’s why I run. Well, that and cookies. And chocolate. And food in general. Okay, so I run to eat. I guess that’s my fact for the day! 😉 And congratulations on your promotion!!!
semisweettooth
Hhah – I love this! My fact: sweet potatoes are my crutch right now. They fit with every meal! It’s magical.
Another fact: Love that 100 mile month idea! And I hate running, so that’s saying something…
Rebecca@RunningFoodBaby
Congrats on the promotion! Exciting!
Fact: I’m doing another marathon in the fall!
Leslie @ TriathleteTreats
Those core bars look delicious! Sweet potatoes are awesome!!
Congrats on the promotion!!
Fact: I am getting a massage today and can’t.wait!!!
Aja
Potatoes are the best. Bananas are very under appreciated. I eat like 2 a day. 100 mile May sounds awesome! I’m lucky if I find the time to hit 10 miles in a week. I tried running today but my body was not having it. Also, I live in workout clothes. I’m considering getting rid of all my normal clothes. Congrats on the promotion!
Pamplemousse
Must try those Core bars!! I live perishable foods that taste great! And happy running!! For a non runner like myself, that’s slot of running!! Congrats on the promotion! You are so enthusiastic about your job it’s just seems to make sense 😊
Amanda @ .running with spoons.
The worst coffee I ever tasted straight up tasted like tomato soup. Well, it had that tomato soup aftertaste anyways. But I drank it anyways because coffee is coffee. And I love you for loving bananas. I heart them so bad (good?).
Ellie
I love potatoes! I notice that you say “potatoes with veggies” like potatoes aren’t vegetables themselves 🙂 I’ve heard people don’t consider them a veggie. I agree that when they are in the fried form from a fast food chain, they aren’t a veggie, but other than that, studs are totally a vegetable! Tough break on the coffee 😦
Brittany
You are totally right, and I DO consider them a vegetable!! Which is why I have no shame eating 4-5 at once haha. Good point with my wording though. 🙂
dolthack
Dipping bananas in hemp hearts sounds like something I MUST do after my next long run. FACT: I will run a 50K next year! But first I have to get through three more marathons and at least 4 more half marathons, that will keep me busy. Maybe after my next I will eat something as awesome as the stuff you take pics of – you’re an undiscovered food writer! Also it’s nice to see the Hawkeye dog again, and your five fingers – I will run at least one of my half marathons this year either in five fingers or barefoot (another fact – went over my quota).
Brittany
Your 50K goal is inspiring, I am still trying to muster up the courage (or even figure out if I want to) to run a full marathon. We shall see. Love your comments, they always make me smile. I must say switching to 100% five finger running has been wonderful.
themauritiangeographer
Because you know what a foot soaked in hot water tastes like? Do I want to know? But oh those potatoes ❤
Jane
Yummy, yummy food pics, Brittany. Congrats on the promotion too. One fact about me: I like to wear running clothes a lot too. They are comfy and make me feel more active. 🙂
An Unrefined Vegan
Wait, what promotion??! Did I miss something? Congratulations :-)!!
Brittany
Nope, you didn’t miss anything. This was the first time I spoke of it. 😉
wheremyfeetare
Love sweet potatoes, coffee and running too! Have never heard of Core bars, thanks for the introduction. I just ran a marathon 2 weeks ago and haven’t been very motivated to run, but I like the goal of 100 mile challenge. My month will start today! Thanks.

Ooooo I love a good, healthy bar! I’ll be on the lookout for those at WF for SURE!
So tell me, coffee guru, in your opinion, what is a good, decently priced French press?? I’ve been wanting one to try this coffee at home, but not sure what to get – I’m guessing the $20-$30 ones are, “you get what you pay for”?
I’ve been trying to change out of running clothes more. It has helped now that I purged half my closet, believe it or not! I mean, I didn’t get rid of any workout/running clothes…haha…but giving myself LESS option in the “regular clothes” section has made it easier to pick something out to wear that ISN’T running related…baby steps. Lol
I have a goal to run 1,000 miles this year, which averaged to about 84 miles a month, but I’m not doing so hot…lol. Maybe I should have set a smaller-scale goal like,…the 100 miles a MONTH…
Brittany
My French press cost me $17, does that answer your question? HA! In all honesty though you don’t need to pay more than $20-$30 for a solid press, the important part is all about the beans. The press is simply designed to be a place for your grinds to sit, steep, and extract full bodied coffee flavors. With the right filtration you could essentially do this in a jar on your kitchen counter…which I have.
Bodum makes great French presses, and I’m a tried and true believer of their products. You’ll want to ensure your coffee is coarse enough for the press, so having the beans specifically ground for a French press will ensure you get the flavors that go hand in hand with this style of coffee making. The same beans made in a press will taste different when made in a drip coffee maker. I hope that helps, happy coffee making!
willrunforpizza
Awesome! Thanks for the tips!!! 🙂
Lucie
Fact – that sweet potato plate looks way too good to eat! I need to start eating sweet potatoes with peanut butter (if I can ever stop demolishing it all before its all gone out of the jar with a spoon!)
amysrecipefordisaster
I completely agree bananas are under appreciated. I also think they are one of the most fragile of the fruit family. They are delicate! Potatoes are a true love of mine and those are great miles!
The Vegan 8
You KNOW my love of potatoes and all of this food looks simply amazing! I also died laughing at the foot soaked in hot water coffee! GROSS. It’s special occasion if I order a coffee somewhere and it royally sucks when I’m so eager for it and the coffee tastes horrible!
P
Those veggie plates though…so beautiful!!!
Melissa
Lol at that coffee description. Great pictures!
Meghan@CleanEatsFastFeets
Congratulations on the promo at work.
I’d paid you to watch my cats. They’d love you, almost as much as I love seeing all these glorious veggie and potato pictures. You never need to balance out the spuds though. They are nutritional powerhouses. Mighty mouse in tater form. 🙂
Jayda (@theavocadogrove)
GAH, that food all looks so good! I love that the Core bars expire…food that doesn’t expire is so concerning! And congrats on the promotion at work 🙂
kim
Never heard of Core bars!! Gonna have to give them a try!
katalysthealth
“Real food goes bad” AMEN!
And my father in law and I just had a chat about potatoes at work today. We talked about mashed taters, baked stuffed taters, potato skins….it got a tad bit out of hand to be honest. In the end I was grumbling about the stir fry I had packed for lunch. 😉
di @ life of di.
Our food obsessions are similar – sweet potatoes are the best! I ate one every day for a good year or so until about a month ago. It was then that I realized I was eating around 400-500 calorie worth of sweet potatoes a day (the sweet potatoes were HUGE) so I cut back! My new obsession is cabbage + broccoli. Nomnomnom.
Lauren @ ihadabiglunch
Yay for 100 Mile May! So many things to love about this post. 1) I could eat potatoes every day of my life and never get sick of them. If I had to choose, it would be whole roasted sweet potatoes and greasy french fries. That would be my perfect diet. 2) I love under-the-table cash jobs like house sitting/ animal sitting/ waitressing etc. They really spoil you haha 3) I thought of you this past weekend when the hotel buffet breakfast had the sickest coffee I’ve had in awhile. You would have dumped the cup out on the floor. Only if you were hangry, though! 4) “Real Food Goes Bad.” AMEN.
Melanie
Oh, all of your food pictures are gorgeous!!! I want a sweet potato NOW. It looks like you put mustard on your broccoli/cauliflower. If so, that looks/sounds awesome! I love all of your cute pets and I love that 100 mile May thing! So awesome!
Brittany
I sure did!! Mustard and salsa are my two condiments. HA.
jennifer prod
so you know you’re funny, but you’re also so so pretty – that pic of you is gorgeous 🙂 (the food looks good too, but ya already knew that as well)
Brittany
D’aawwww, you’re too kind to me my friend. Thank you. 🙂
Rach @ This Italian Family
Congrats on accepting the promotion! That’s exciting! Also, all your sweet potato pics are making me hungry!
Megasaurus
EAT ALL THE POTATOES! heehee I love them sooo much. FACT: I killed two huge bugs in one day and had my dad on the phone in case they got me.
Shonalika
Hey! Congrats on the promotion! Yess potatoes of all sorts are the salt of the earth, or rather, the potatoes. I’ve yet to have sweet potato on TOP of a regular potato in one meal, but I can tell. It’s going to happen soon.
Brittany
Genius idea!
stateeats
LOL, this post made me crack up. Fact of the day: If you start making chocolate chip cookies and then realize you have very little chocolate chips leftover bec your husband has been pilfering them, make the cookies anyway. Still delish. – Kat
