    For the past few months, I’ve had a jar of coconut butter staring at me each time I open my pantry. I go into that pantry around 4 times a day, do the math..that’s a lot of stares.

    It took some time, but I finally figured out what I wanted to make. Something rich, something creamy, something chocolate! This recipe took some twists and turns, but I finally settled on something worth posting. I started out making these…

    …but quickly decided they needed some help. I love coconut oils and butters, but the flavor is VERY strong. The texture of these fudge squares was perfect, but the flavor..too strong. There is only one flavor I’ve been completely successful with when it comes to toning down the almost overwhelming flavor of the coconut, and it just so happens to be a classic flavor.

    Chocolate has a way of covering up the coconut flavor like nothing else! This experiment reminded me of the time I tried to get wild using coconut oil in a vanilla frosting, but was reminded why I always go with chocolate. I still haven’t figured out how to make it work!

    Double Chocolate Cocoa Melts

    • 1 cup softened/melted coconut butter (should be well combined, soak your jar in hot water and stir well before adding to the mix)
    • 1/2 cup almond butter
    • 1 tsp vanilla
    • 2 tblsp maple syrup
    • 3 tblsp unsweetened dark cocoa powder
    • 2 tblsp tiny dark chocolate chips
    • handful of large dark chocolate chips

    Instructions

    1. Combine coconut butter, almond butter, vanilla, and maple syrup into a sauce pan and stir until well combined.
    2. Once combined add in the cocoa powder, stir, and then add in the tiny chocolate chips.
    3. Heat on low until the chocolate chips are melted into the mix.
    4. Once combined, pour into a wax paper lined 8×8 (or something similar) dish and sprinkle (as many as you want) the large chocolate chips on top.
    5. Place dish into the freezer until hardened.
    6. Enjoy!

    Not only do you get to satisfy your sweet craving with these rich and smooth melts, they’re JAM packed full of HEALTHY fats AND minerals from the cocoa. Sure, there is some sugar in the chocolate chips/maple syrup..but we can just highlight the benefits! 😉 Besides, these are SO rich, you’ll be completely satisfied with just one square. I know..who am I!

      So I have found that using refined coconut oil vs. unrefined is a good option for trying to eliminate the coconut flavor. Made a “cheeseball” from Somer at Vedged Out (which was so good!) and she made that recommendation. Worked great! Your treats look divine!

      Oh yummy!! Yes, working with coconut stuff is A LOT, and a little goes such a long way! I don’t know if I could ever even try coconut butter – seems like too much for me. 🙂 Your chocolate concoction, however… very enticing!!!!

      Have you tried refined coconut? It has barely any flavor. It may be good for baking. Those look Delicious!

      I just made an incredible chocolate cake yesterday which called for a buttermilk merengue filling and buttermilk chocolate frosting. It was DELISH but I was appalled at the amount of butter it required. I need a butter substitute. Is coconut butter a good substitute?

        Your cake sounds deliciously dangerous…thank God I am a vegan because I would do some serious damage to a cake like that. Coconut oil actually works really well with chocolate flavored cakes as a butter substitute. Also, applesauce works, avocado, and there are also tons of ideas online.

        I’ve never experimented with subbing coconut butter for actual butter, but I don’t see why it wouldn’t work. I say GO FOR IT!

      I love coconut butter! I have never made fudge but these sound really good. I wouldn’t have thought that fudge would seem so simple to make. I’ll have to try this.

      oh brit, my favorite food posts are always the ones that start with a recipe that’s not so good, cause it shows the honesty and thought that goes into the post that you’re claiming *is* good 🙂 wish i could come over and have a mega-bite!

      These are basically how I make my brownies, I just add oat flour! They are to die for! Oh, and YES, I do have an awesome fudge recipe and wouldn’t you know, it has coconut butter in it. I love coconut butter because it is a whole food and not oil. I’m not a fan of coconut oil…too greasy. Here is the link to the fudge since you asked and it’s only 3 ingredients.       You make me laugh. I’ve always wondered if using coconut oil gave things an air of coconut, like for example coconut oil rosemary roasted potatoes might taste a little off.
      These squares sound amazing, especially if I could get by with just one a sitting, although I might take two just to be a rebel.

      Girl, whenever we meet (and hopefully that’s soon!), I really really really want one of these!! You know how much I adore chocolate… And fudge… And more chocolate… And more fudge… These look phenomenal!! So rich and decadent — yum!! And I have the same problem with a certain jar of PB and a certain bar of dark chocolate in my pantry. And since I run a food blog for a living, I open my pantry doors more than 4 times a day. Pure torture! 😉
