    1. I often struggle with the idea of being still. A day off from work usually means I must do something productive, find a mountain to climb, or even embark on an unplanned long run. Heaven forbid I actually use the day off to relax.

    2. Thanks to an overwhelming urge to bake, I took one of my days off last week and enjoyed the simplicity of a calm morning with good coffee and freshly baked muffins.

    3. Despite being sweetened with nothing but the natural goodness of dates, apples, and sweet potatoes, I ate half the batch for breakfast which left me maxed out for bread consumption. This meant getting creative with snacks.

    Bread-less PB&J. Mixing coconut oil into freshly ground peanut butter is a total game changer.

    4. My coworkers are seriously the best. I’ve never worked at a place where there is literally ZERO drama and it’s fantastic. When our bananas get “too brown to sell” they save me giant piles to take home because they know I love alllllll the bananas.

    5. For St. Patrick’s Day I ate all the greens. That’s actually a semi lie, I always eat all the greens, regardless of small men in green tights.

    6. As I write this post my cat is practicing his stair sprints. He’s fast, and I’m impressed.

    7. I was convinced there was a pine cone hanging from my tree by naturally occurring circumstances. When I got closer I realized it was hung by man. Dreams shattered.

    8. I didn’t run a half marathon I was registered for. I skipped it for a few reasons, one being that I didn’t want this to happen again. I got sick, stopped running, and despite training for two months I felt wildly unprepared. I had no regrets.

    9. I’ve been craving pizza so hard lately, and Pi day was THE day.

    My crust was a total random mash up of two zucchinis, gluten free flour, baking powder, olive oil, and salt. My sauce was blended edamame, kale, garlic, basil, olive oil, and pepper. Topped with none other than my favorite roasted root vegetables.

    Finished with sprinkles of rosemary from my garden.

      Breadless PBJ, bravo.and I completely laughed out loud when I saw it because I would have been in the same boat with those muffins, as in, eating at least half, but I don’t know if I could have limited the carbs later in the day. NICE ONE. And amen to coconut oil and PB. I love that combo on popcorn.

      So funny about the pinecone!!! Oh, that duped feeling. Boo.

      Best confession ever. I’m the same with my days off – I must do all.the.things. This past weekend I finally had enough and just decided to let the weekend pan out in its own way. I’m so glad I did because it was really an amazing weekend. Reminder to do that more often! Otherwise, the rest of this post = amazing. Your pie looks delicious and I’m a little jealous of your work environment… Mine is – unique.

      Very admirable that you decide that the race would be a no-go. Listening to our bodies can be hard, sometimes! And, that is the yummiest looking pizza. I’ve never seen one packed with so many delicious veggies!! Hope your Tuesday is fantastic ❤

      See what I mean about your adventurous eats? That pizza though. And mixing coconut oil into nut butter… MUST try! As for actually taking a day off. I did this weekend and it was horrible. I was so bored outta my mind I felt bad for Todd. My confession… I look forward to 7 PM everyday- for reasons I’ll share later 😉 Man, that’s just mean of me.

      Aww your coworkers are the best!! That’s really sweet of them! One time at my old job, my friend and I found an entire bunch of really brown, speckly bananas in the break room, and she told me to take them home. I felt bad since we didn’t know whose they were, so I baked cupcakes with them and brought those back to the break room in exchange. Win-win! 😉

        When it comes to regular eats (aka non sweets) it’s usually based off of whatever I have laying around. This kind of pizza came about years ago when I randomly threw these types of veggies (especially the potatoes, MUST HAVE POTATOES) onto my pizza. I was sold. I never make pizza without the potatoes now.

      I hate the too brown to sell bananas. They’re still edible and delicious! I wish I could take them home, but we’re not allowed to do that. All your food looks so good! I’m jealous.

      Zucchini pizza crust?!?! I need a recipe. I’ve tried the cauliflower crust, and it was good! Not typical “pizza”, but still really good! I’d love to try the zucchini to really spice my life up!

        I wish I had a recipe for you….but it was a total mash up of things. I started with two blended zucchinis and maybe 1/4 cup coconut flour. TOTAL fail, so I had to save it by adding another cup or so of regular gluten free flour, some olive oil, and some baking powder. This made it much better, but definitely unique.

        There are a few recipes online that use eggs and such you may want to try!

      That’s a really creative pizza! My confession is that since St. Patty’s Day my work has had green velvet cake and I had a piece the other night…and then the next day, my bowel movements were a very vibrant color. Gotta love that gallon of green dye they must’ve put in the cake =P

        I think my favorite thing about you is your openness about…everything. This is how I know we would be real life friends. I legit laughed out loud at this comment. It reminded me of when I was a kid and would eat this colored powder candy. My poo would always be CRAZY colors and I thought it was totally entertaining.

      Free brown bananas? Eeeee! I would -love- that kind of hookup! But I’ve got a pretty sweet deal going with the manager at one of my local natural food shops. I’ve been going there for years and buying so many bananas that he saves the spottier ones for me and let’s me have them for crazy cheap. Love, love.

      Breadless PB&J = YES! Also, that pizza looks great, too! I can relate to struggling with rest. I get so bored and constantly need to be doing something. Don’t get me wrong, I can sit and watch Netflix in the evenings for far too long; however, I hate to waste daytime hours just sitting around!

      A good chuckle as usual 😀 that pizza is beautiful! And the image of your fast cat is now in my head for the evening. Oh and don’t let your dreams be shattered by men, I fully believe that string flew in with the wind and caught the pine cone in time, rescuing it from shattering to the ground. It’s a natural circumstance.
