    I read a lot of blogs, but only a handful of them are vegan blogs. I read running blogs, I read lifestyle blogs, I read random adventure blogs, and I read carnivorous steak eating blogs…I don’t discriminate! With that said, I rarely make any recipes posted on the blogs I read because while they may look good, they are definitely not plant based.

    Some recipes are easy to veganize, and others not so much.  When I’m inspired by a recipe I love turning it into my own, but once in a while it’s nice to let someone else do most of the work. I found a recipe on one of my go to blogs that I knew I just had to make. Only one small tweak was necessary in order to make this a Brittany approved recipe. 003a

    She called them muffins, I call them brownies. These are so simple, but SO delicious. With a prep time of no more than 5 minutes, there is no reason not to make these! Unless you don’t like bananas or chocolate, but in that case we can’t be friends. Kidding..kind of.

    Double Chocolate Banana Brownies

    Ingredients  

    (these will be listed in the order I think works best in your blender)

    • 1 tsp vanilla
    • 1 ripe medium sized banana
    • 1 flax egg (1 tblsp fresh ground flax seed + 3 tblsp water)
    • 1/2 cup creamy almond butter ( self ground would not work here )
    • 1/4 cup unsweetened cocoa powder
    • 1/4 cup raw honey (sub maple syrup for a true vegan recipe)
    • 2 tblsp fresh ground flax seed
    • 1 tsp baking soda
    • 1/4 cup chocolate chips & then some to top

    Directions

    1. Preheat your oven to 375F. Spray or line a muffin tin with 9 spots, and set aside. OR pour entire batter into an 8 x 8 pan for more of a “brownie” look.

    2. In your high speed blender or food processor combine the vanilla, banana, and flax egg and pulse until combined. Then add the remaining ingredients (except for the chocolate chips) in the order listed. Use the same measuring cup for the cocoa powder and the honey, the cocoa powder will coat the sides of the cup and the honey will slide right into your blender. Like magic. Blend until well combined, and then fold in the chips by hand.

    3. Pour batter evenly into the 9 spaces prepped. Don’t get overzealous or your brownies will be huge. I learned this the hard way.

    4. Bake for 10-15 minutes until the tops of your brownies spring back to the touch, or a toothpick comes out clean. Let cool for 10 minutes after removing from the oven.

    These are bursting with chocolate/banana flavor, and the texture is perfect. Soft yet sturdy and holds its shape. To see the original recipe, and Amanda’s amazing photos, click here.       Haha, I never make recipes from bloggers because I never cook… And if I do, it’s something ridiculously easy that my simple mind can handle. THESE LOOK SO GOOD! And noisy pictures what?       I bookmark some recipes with good intentions, but honestly, if the recipe doesn’t come with the blogger to make them for me, it’s doubtful I’ll do it for myself. Your brownies look bomb, especially with bananas… I love all things banana, so throwing those in chocolaty brownies?? Maybe I’ll actually make this one (I’ll let you know when I finally get around to it, in a year or so 🙂

        OH my gosh, I am ALWAYS on the look out for willing participants to taste my treats!! Some people are SO skeptical because I don’t use eggs or milk…SO CLOSED MINDED I swear!! If you lived near me, I would PUSH my treats onto you hahaha.

        I almost don’t know how to reply to a serious comment from you…but I’ll try.

        I use stoneware a lot, and this is what I use for muffins/brownies and stuff like that.

        I spray it with coconut oil and very rarely does my stuff stick. I will soak the tin usually overnight if I am feeling lazy, or suffering from a chocolate coma. Then I just use a sponge and water and any leftovers come right off.

        If you are using a metal tin, I would soak it..but…I don’t know why you’re having problems .HAHA. Stop getting mayonnaise on it.

      Ohhhh my goodness. Those gorgeous melted chocolate chips on top have my tummy swooning!! Nothing beats fudgy chocolate brownies with chocolate chips. SO good!! And your photos look amazing too! Perfect exposure. You’ve really gotten the hang of your new camera! 🙂

      It’s not often you find a recipe that’s made in one bowl, never mind in a blender. That’s so quick and easy for clean up! And.. you get lots of chocolatey brownies in single servings, so much easier than a big sheet pan of them. As you know, I’m big on vegan these days. I still have to cook meat/fish for my family but love adding more and more of these recipes into my rotation. It’s such a clean way to eat!xx

      holy guacamole. i know i say this every time i’m on your blog, but you always make me want to be a vegan. do you want animal documentaries? ie, have you seen blackfish? i know you would love it. anyway, i keep thinking vegan vegan vegan and then i see all the deliciousness coming out of your kitchen and i kick myself and think how sweet and easy you make it – why not get started?

        OH MY GOSH BEST COMMENT EVER! Seriously…I can’t imagine my lifestyle being any other way. I LOVE eating a vegan diet, it’s so liberating. It’s powerful having total control over everything you nourish your body with, and picking the best foods to thrive and grow! If you EVER have any questions, or concerns please don’t hesitate to email me!! I would love to pour my brain out onto paper! If you enjoy making food, you’d be JUST FINE! I say try it for a week or two (that’s what I did..I went vegan for a month and loved it so much I never went back!) and then go from there!

        I have seen bits and pieces of some documentaries, but I actually can’t handle a lot of them. They are too graphic at times. I haven’t seen Blackfish, but have heard all about it! I do want to watch that one though!

          i’m honestly going to try and work up the courage! i was vegetarian while i volunteered in mexico (they slaughtered the animals on the street and seeing it made me stay far, far away) but i started eating meat when i got back to the states. i regret it because we shouldn’t eat meat (or other animal products) just because we can’t see the process, right? most of my friends and my husband are really big meat eaters, so i think it’ll be a big lifestyle adjustment. good thing i like tofu 🙂
