    My soul feels rejuvenated after a full day of amazing eats, and even better company. You know your day is going to be great when it starts out with a view like this.

    Vegan cupcakes galore at my favorite bakery. I behaved and ate brunch before I got a cupcake, although my meal was more of a snack/treat.

    Corn cakes with the most amazing vegan cream sauce and fresh berries. I cannot wait to go back and get a real meal. Any excuse to get more cupcakes…and a ginger molasses cookie.

    After a walk, skip, and a jump it was already time for lunch/another snack before dinner. The last time I had a legit vegan pizza was almost three months ago. Vegan pizza by the slice? YES, sign me up. The only thing missing from this pizza was potatoes.

    I don’t think they could have squeezed anything else on there if they tried. This slice gave me just enough energy to partake in some shopping, and some berry picking.

    I need pie…now. OK OK, now for my favorite meal of the day..summer is almost over and I had yet to make burgers. Better late than never right!?

    Black Bean Sweet Potato Burgers

    • 15 oz black beans drained and rinsed
    • 1  med/large cooked sweet potato
    • 1/2 cup fresh or frozen corn
    • 2/3 cup finely chopped onion
    • 2 large garlic cloves, finely minced
    • 1/2 cup cooked quinoa
    • 6 tblsp rolled oats
    • 1/2 tsp salt
    • black pepper to taste
    • 1 tsp cayenne
    • 1 tblsp olive oil

    1. Preheat your oven to 375F, once you finish cooking your quinoa and sweet potato.
    2. Mash half of the beans in a bowl until paste-like.
    3. Add in the rest of the beans and give a very light stir/mash to combine.
    4. In a separate bowl, mash the sweet tater, but you don’t want it creamy.
    5. Stir in the salt, pepper, cayenne, and olive oil, until combined.
    6. Mix in the onion, garlic, corn, black beans, quinoa, and ground oats, until just combined.
    7. Taste, and adjust seasonings to your liking.
    8. Form into balls, between your hands and flatten into 1/2”-3/4” thick patties.  This should make 8 medium/large patties.
    9. Place on a pan lined with parchment paper [or lightly greased pan] and bake on each side for 15min, flipping once, half-way through. Finish and serve!

    I topped mine with tomato, roasted red pepper, avocado, swiss chard, and BBQ sauce. As always I make my burgers and sandwiches so tall I can barely fit my mouth around them.

    Oh and I saved the best for last..somehow I managed to save the cupcake I got at brunch for after dinner. Seven hours after purchase I sunk my teeth into the most gorgeous sight.

      Those burgers are great! I can never ever ever make a good veggie burger with ingredients that are nothing but good for me. It’s a me problem. I’m so jealous of posts like this!!

      I want to eat that pizza every day for the rest of my life. I can’t wait to try that burger too! I am going to have to just make it and serve it without telling the other half what it is. I know he will like it, I just have to get it in his mouth haha!

      The burger recipe sounds great. I love that it doesn’t seem like the type of veggie burger that just falls apart when eating. Those are the worst!

        I will say that these need to SIT for a few minutes after coming out of the oven to set up..I didn’t let mine set up and they did fall apart a bit, but I still HORKED down every last bite!

      I agree with the others, the pizza looks amazing! Sometimes a simple pizza is great but most of the time I want a pizza with heaps of topping. Must be the glutton in me 🙂

      Every time you post about cupcakes, my day just starts off right. ahhh, so glad I’m up at 5am reading this 🙂 You had the GREATEST days of eats and man, HOW did you save that cupcake for so long?! Definitely deserve a slow cap for that..really. I probably would have gotten two just so I could eat one right then and there AND have one for after dinner, but I’m also obese at heart. 😀 Burger looks delish and if you would cook for me everyday I would probably become vegan – YUM!

      That pizza looks redonkulous! And I’m going to guess the cupcake was a lemon lavender flavor? Am I right? A day of good eats is always a great recharger for me, too. There is just something about good, quality food 🙂

      Every time I go to Edible Perspective I remember how much I want to make these burgers, yet alas… I still have no made them. Whomp, whomp. THEY LOOK SO GOOD! I love the fact we both share a love for bite-sized cakes. Mmm nom nom. I never had anything lavender-flavored, though, because I am afraid it tastes like soap.

      Good food and good company always do it for me, -especially- if the good food involves cupcakes. Holy.snap do those ever look delicious. Although I’ve got to be honest here… I’m kind of giving you the stank eye for picking lemon lavender over something with chocolate. I’m all for trying fancy and exotic flavours, but… chocolate!

      Recharging for me usually requires some alone time in the kitchen. Nothing calms me down like a good baking session…and then eating everything I baked!

        Natural light and CLARITY in the photo is KEY! I seriously will take five minutes to get the perfect photo sometimes haha. I take like 10 pictures of the same thing and pick my favorites!

      What is the name of the vegan bakery, and is it in Seattle? It looks heavenly!!
      Sounds like you had an awesome day full of delicious eats!
      My favourite way to recharge is a leisurely walk with the hubby and pooch, and some delicious sweets doesn’t hurt either!

        This bakery is called, “The Bearded Lady” and it’s actually in Olympia! They offer vegan brunch options that are killer, and almost all of their baked goods are vegan and some are also GF! They do an amazing job!

      That cupcake lasted seven hours??!! My god, your willpower is amazing. I bow to you. I’d also curtsy for a veggie burger. It looks fabulous. I love the whole beans and corn kernels poking out.
