    I am a firm believer that a picture can speak a thousand words.

    Take these sky high pancakes for example. I don’t need to tell you that these were delicious, moist, decadent, amazing, FILLING, and some of the best pancakes I have ever eaten. The picture does an excellent job describing all of that to you on its own!

    I’ve been craving pancakes like crazy the past couple weeks. I haven’t had pancakes in months, and I consider pancakes to be the epitome of a lazy morning breakfast. In a good way. After discovering I had all the ingredients I needed, I finally made myself a tower.

    Classic Fluffy Vegan Pancakes

    • 1 cup whole wheat flour
    • 1 tbsp raw sugar
    • 2 tbsp baking powder
    • 1 cup vanilla almond milk
    • 1 tbsp olive oil
    • 1 tbsp apple sauce
    • 2.5 tsp vanilla
    • cinnamon

    Directions: Combine your dry ingredients in a large bowl and set aside. In a separate bowl combine your wet ingredients and then add them to the dry ingredients. Stir together until there are no visible clumps. I took cinnamon and completely covered the top of the wet mixture. No measurements, just a LOT of cinnamon! Stir the cinnamon in and cook!

    You can choose how big to make these, but once they start to form bubbles flip them over to cook the other side. Serve with bananas and maple syrup, or any other fruit/toppings you would like! All I was missing was some coconut whipped cream!

    I am almost ashamed to tell you I ate this entire batch by myself..almost. What can I say I was hungry and these were so good, but you already knew that from the pictures. 😉

    I do have a confession though, I like my pancakes a little…mushy. I LOVE pumpkin pancakes because they come out so soft and almost like they are under cooked. I took these pancakes off the griddle just a tad bit early to have some softness on the inside.

    That’s the joy of eating the whole batch, you can make them however you want! To really heighten your lazy morning experience, I highly suggest serving these with a cup of coffee.

    Q: Pancakes or waffles? WAFFLES for sure, but I don’t have a waffle maker haha. When it comes to waffles I like mine CRISP, no mush with the waffles.

      I just had chocolate chip pancakes for BFast! I have pancakes about 3 times a week 🙂 They are so simple to make and oh so filling. I LOVE using pumpkin.. I have a slight obsession. I like pancakes over waffles bc I like the bready texture and I feel like you get more for your caloric buck. And you better believe I had a cup (or 4) of Cafe du Monde with my cakes!

      I’m a firm believer that cinnamon should never be measured! These look amazing, but I’m with you that if given the choice, I love waffles!

      um WOW. Those look amazing. Pancakes are one of my favorite things to eat, for any meal really. Breakfast for dinner is a pancake-essential meal for me 🙂 I like mine kind of mushy-too, you aren’t alone on that one!

      I used to think I liked waffles more but there’s just something so satisfying about a giant stack of pancakes. That’s my ultimate breakfast food but I’m so lazy I pretty much only eat them when we go out to eat. Bagels win every time if it means I have to make myself breakfast

      holy sheeeeeeeit lady, I’m dying inside. I thought my avocado-toast and dippy egg breakfast was good, pictures of these just made me rethink my entire life. Probably making pancakes in the near future

      I love mushy pancakes, too! I used to request for my mom to half cook mine was I was a little girl. Yum. I really don’t know if I like pancakes or waffles more, but the one thing waffles have over pancakes is the ability to fill the little ditches with all things delicious. They’re like little containers. Lol

      Tough one but I think waffles. I guess it’s a hard choice though because pancakes with toppings are really great too 🙂 These look great Britt!

      YUM! I made banana pancakes the other day too and they were awesome. I was also a big loser and played Jack Johnson – Banana Pancakes while I made them. There is NO shame in eating an entire stack of pancakes… I did too because THATS HOW WE ROLL 😉

      Very impressive pancake stack… and even more so because the pancake in each consecutive layer gets a little smaller, adding nicely to the tower effect. Yes. These are important things to consider 😉

      I honestly can’t choose between pancakes or waffles – they’re both amazing. That being said, I hate making pancakes myself because I totally fail on the flipping front. But if we’re tlaking my mom’s buttermilk pancakes with a sprinkle of icing sugar on top? Ugh. Nothing beats those.

      Pancakes all the way, especially if they have chocolate chips in them. I hate to admit that I actually prefer the little Eggo frozen waffles more than fancy belgium ones. Sad, but true. This post is making my bowl of cereal look extra wimpy right now.

      I had a two ingredient pancake for breakfast this morning! I then topped it with lots of strawberries, coconut, almond syrup and pear slices. Almond ‘syrup’ is a new favorite of mine! It’s just almond butter and coconut milk stirred together.

      These pancakes sound amazing! I agree that I prefer mine with some mush to them, which is probably why I love adding naners into mine!

      These look soo good! Especially with the bananas! I like my pancakes a little mushy too. And i def would pick pancackes over waffles. Yum!

      If that was the leaning tower of pancakes, I would like to be the lucky sucker that the tower FALLS ON… Then I would eat myself out of that mess – Okay, so if that made no sense to you, I am sorry, but it makes PERFECT SENSE to me. WHEN THE HELLLLLLL ARE YOU & I going to meet up and film a GIGI EATS episode OMG…. More like 3947893748378437 episodes!

      So good! i LOVE pancakes but am just terrible at making them (I think I’m much too anxious). If I’m free on a weekend morning, I’ve been known to invite myself over to my parent’s house for pancakes! Kelly actually makes them pretty good, too. Maybe I’ll leave this recipe out for him to see!

      You know I am enjoying these guys. For me personally, I like waffles only because they take less time to make and I don’t have to physically watch the waffles so they don’t get burned…I can do other things…I know I’m constantly in a rush in the morning to make it work on time.

      Impressive tower of goodness you’ve got going there! And quite healthy as far as pancakes go. On the occasions (not many) that I make pancakes for my family it always feels great to have that giant stack ready for everyone on a Sunday morning.

      I’m not a huge fan of mushy pancakes, but that wouldn’t stop me from devouring this plate. It looks delicious and I love the symmetry on your tower. Very well done.

      When it comes to cinnamon I never measure…I always just jump ) I kid I kid (kind of). Either way these pancakes look incredible. When you say fluffy, you are not kidding, these sure are fluffy! Love that you aren’t scared to use sugar in your recipe!

      Oh… you ask such deep questions… I think I’m going to have to go with pancakes. But I am weird and don’t like butter and syrup and prefer PB (big surprise lol) and jam. So basically I like sandwiches!?!?

      These look yummy as usual. I hope you can come to the wedding and during your visit, perhaps the day before the wedding we can make breakfast together. Not the day of because I’m pretty sure if I ate pancakes I might regurgitate from nervs. And that is nassssty. I’m stickin to smoothies.

      These look so fluffy and delicious and HUGE! I love it!

      I am definitely on Team Pancake. My mini-OCD goes craaaazy with waffles because the little squares make it impossible for the butter/syrup/other topping to be evenly distributed. Some bites are really buttery and some bites have no butter at all…and that’s my treatise on the waffle 😛

      Those look yummy!! I haven’t been eating bananas because of the pain killers I was on and yea you know… This looks awesome. My kitchen is literally empty right now and I see a HUGE grocery shopping trip in my future today. Pretty jazzed to buy bananas, never thought that day would come.

      Hell yes Britt, these look divine! Especially like the idea of coconut whipped cream on the side – I like a little somethin’ somethin’ to dip the pancakes in 😉 I agree yes to waffles over pancakes, but I’m grateful I don’t own a waffle maker or else I’d turn into some giant waffle monster!

      Shut the front door…that pancake tower looks like all kinds of amazing.
      I’m pretty impressed with the fact you could stack those all up there.
      It’s tough for me to chose a favorite since I mostly pick the pancakes, considering I don’t know where my waffle maker is and that I don’t have many if any vegan waffle recipes. So I guess pancakes win by default.

      Because GIRL. LOL. I hope it is the latter. My “lazy breakfasts” are eaten like.. standing at the fridge..

        Ohh lawwdyy YES most definitely the latter!! Pancakes take a good amount of work and patience, so I cannot be FEELING lazy, but it does make the morning feel calm and casual! My lazy girl breakfast would be a peanut butter sandwich…even though it’s sooo damn good.

      Omg girl I’ve been eating pancakes all week!! I just made the yummiest fluffiest cinnamon pancakes this past weekend and posted on Facebook to tease everybody! Lol! I’ll post the recipe soon! I LOVE pancakes..they are a favorite thing for me to eat and just like you…I eat about 4 all at once!! No shame!
