You know something is good when you use it not once, not twice, but three times in less than a week. I have found the most amazing “cheese” sauce recipe for my vegan friends, and those of you that enjoy vegan foods. I did not alter this recipe ONE bit, I left it completely alone..it is perfect. With that said you can find this nacho, movie theater like “cheese” sauce by clicking right here. Using water, cashews, nutritional yeast, red peppers, lemon, corn starch and spices…you get this.
OH my gosh I died. I seriously died. My vegan body died and was reborn, all at the same time. I enjoyed this recipe with chips the first time I ate it. The very next day I made some mac and cheese.
I have no complaints about this sauce. Not a single one. The ingredients are amazing. The third time, I made an enchilada/lasagna like creation. I love Pinterest.
Before making that enchilada/lasagna, I earned my meal by going on my first hike of the year. It was COLD.
Despite the cold, the views were gorgeous.
Maybe if we wore pants it wouldn’t have been so cold. Owell, I love my state!
Q: Have you started hiking yet this year?

Pants would help I am sure but so over rated!
Great shots for the hike…makes me want to get out there! Can not wait till spring…
Alex @ therunwithin

The Savvy Sister
I haven’t started hiking but I started eating vegan nacho cheese sauce so your post is perfect!
natalie @ will jog for food
I wanna make that cheeze sauce!
I love hiking! I’m so lucky to live in an area with tons of good hikes.
Alisha's Appetite
I’ve seen that sauce around the blogsphere before but wondered how it realllyyyy tasted?! I’m convinced I need to try it no! I love eating my pasta over greens!

I want your jacket. Also, I fully support mac and cheese. Best food ever invented.
An Unrefined Vegan
What is it about mac and cheez this week?! A few days ago Somer was trying to sabotage me with one of her cheezy sauce recipes and now this! I guess I must submit. Cheez, come to me!
spectacuLAUR
You both look like such creepers in that picture hahaha. love it!
And you made me really hungry for macaroni and cheese. Please come make me some and play with my hair.

YUM.
I once ate so much nacho cheez (Mama Pea’s MMMmmm sauce) that I broke out into hives.
Still not sure if it was reaction to the nutritional yeast or just plain old excitement over the deliciousness.
Alex @ Cookie Dough Katzen
Ah this is brilliant. So less fat since there’s no cheese? I’m on board with that!
Choc Chip Uru
No cheese with cheese? LOVE it 😀

Way to be inventive with that cheese sauce! All 3 meals look to-die-for!
I’m sad to say, I haven’t started an hiking yet this year. I’m hoping to change that in the upcoming month or so (NO way I could get away with shorts outside here! So I’m hoping for a slight warm-up in temperatures before we head out.)

WHAT I’m now where near vegan but that cheeeezeee sauce sounds so good. Must find nutritional yeast, STAT. Oh and I would LOVE to go hiking but in south Florida? Not so many places… unless I want to hike in the everglades with all the gators and pythons… hmmmm….
Angela @ Health's Angel
Okay, you definitely live out west somewhere. The only time I’ve seen trees like that is when I visited Portland, Oregon! Love it out there.
And THANK YOU for sharing that recipe. I’ve been trying not to eat dairy because my body can’t stand it.
Brittany
I live in Washington state!! I loveeeee Portland too, and I love that it’s only a three hour drive away! I hope you love this recipe as much as I do!

That “cheese” sauce looks GOOD, especially with nachos. Yum! 🙂
HollieisFueledByLOLZ
Wow that cheese. I literally just dumped about half a gallon of cheese onto my pasta the other day. LOL. Love love love cheese. I’m not vegan obviously but dang that looks good.
Melissa @ Mouthwatering Morsel
oh wow!!! my sissy would like that cheese!! as for the view … holy mackerel!! so gorgeous!! jealous of your beautiful hikes!
foods for the soul
YUM!! My mom rarely bought nacho cheese sauce for me when I was little, so I could only ever eat it at baseball and basketball games. Brings back good memories… And HOLY COW you’re so brave to hike in shorts in February!! I have goosebumps just looking at your pictures!
Luv What You Do
So jealous of your hike! There aren’t a lot of great places to go hiking in the great plains : )

I hike all year round! With my honey bunny the monkey named Gwendolyn! Love love love to hike. In fact, my friend spotted a coyote in the woods just last week, but it hasn’t stopped NicoleAndGwendolyn! We just carry weapons. And your legs look fabbb. 😉 xo

I’m not even vegan and I want to make that cheese.. it looks so good! And your pictures make me miss living in Alaska. I used to go walking with my husband all the time.. and now we’re in Kasas, which is not so pretty.
Simply Life (@SimplyLifeBlog)
yum! that sauce does look incredible!
di @ life of di.
Love the views – I really wished I lived there! I haven’t been hiking yet this year (but that is partially because there are few places to hike in Ohio 😉 )
kaityscooking
id totally wear shorts too ! you guys look so cute tho…and i have seen that cheese sauce around blogs lately but since you like it i trust your opinion and def gotta get on it! btw i love using only shells when making mac and cheese.. its the best
Nicole @ Fruit 'N' Fitness
That looks like a beautiful hike! I have never tried nutritional yeast but have seen it on a few blogs. That and guar or xanthem gum are on my to try list! I am not a vegan but butternut squash pureed with some spices, almond milke and a little flour also makes a good cheese like substitute!
Amy Tong
Oh, this cheese sauce looks awesome. I gotta bookmark this so I can make it soon and serve it when my Vegan friends come visit me next time. We have gathering at our place from time to time and I always need some vegan appetizer recipes that we can all enjoy. Thank you so much for sharing. 😉 What a hike, the views are stunning!
Khushboo Thadani (@KhushbooThadani)
So I’m totally okay with eating cinema cheesy sauce with a spoon alone..I don’t need the nachos! That being said, this sauce sounds BOMB- your opinion is credible enough for me to believe that it steps up to mark :)!
Brennan
What a beautiful place to hike! I’m so jealous! And that sauce… Yum. I’ll definitely do that!
Meghan@CleanEatsFastFeets
I’m not even a vegan, and I’m considering this cheese sauce. You’re right; the shells totally steal the show (fame hog) until we get to the scenery. Are you kidding with those trees?! That looks amazing and I’m jealous you get to still be in shorts.
The Healthy Flavor
Oh yes…seen similar recipes like this before! I’ve made Shira’s (From In Pursuit of More) red bell pepper cheese sauce before but I spruced it up with lemon juice and smoked paprika to really amp up the flavor. It was soooo good! I use nutritional yeast like it is air!! daily! I love the stuff. I make all kinds of sauces with it and even make a cheesy sauce over broccoli!

Mmmmm…cheese sauce….
I went hiking for the first time this weekend! I tried to go hiking….after about 1/2 mile the trail was closed…so I went “hiking” around a local park and downtown instead.
Megan
Great pictures of the hike!! I have a few times, it’s been a couple weeks though, need to get back out there!
Amy @ A Desert Girl
That cheese sauce looks amazing. Yummmmmmy.
And I love Washington state! I’m getting married on San Juan Island this upcoming summer and we’re spending our honeymoon in that area as well. I’m definitely looking forward to the hiking!
Ally
How did I miss this?!
I’m checking out the cheese recipe, for sure.
Great photos too 🙂
