  • Three Way “Cheese” Sauce

Posted at 9:09 AM by Brittany, on February 22, 2013

You know something is good when you use it not once, not twice, but three times in less than a week. I have found the most amazing “cheese” sauce recipe for my vegan friends, and those of you that enjoy vegan foods. I did not alter this recipe ONE bit, I left it completely alone..it is perfect. With that said you can find this nacho, movie theater like “cheese” sauce by clicking right here. Using water, cashews, nutritional yeast, red peppers, lemon, corn starch and spices…you get this.

    20130221-183520

OH my gosh I died. I seriously died. My vegan body died and was reborn, all at the same time. I enjoyed this recipe with chips the first time I ate it. The very next day I made some mac and cheese.

There are greens under these shells, but the shells steal the show.

I have no complaints about this sauce. Not a single one. The ingredients are amazing. The third time, I made an enchilada/lasagna like creation. I love Pinterest.

    20130221-190557

Before making that enchilada/lasagna, I earned my meal by going on my first hike of the year. It was COLD.

    Creeps

    Creep

Despite the cold, the views were gorgeous.

Maybe if we wore pants it wouldn’t have been so cold. Owell, I love my state!

Q: Have you started hiking yet this year?

      YUM.
I once ate so much nacho cheez (Mama Pea’s MMMmmm sauce) that I broke out into hives.
Still not sure if it was reaction to the nutritional yeast or just plain old excitement over the deliciousness.

Way to be inventive with that cheese sauce! All 3 meals look to-die-for!

I’m sad to say, I haven’t started an hiking yet this year. I’m hoping to change that in the upcoming month or so (NO way I could get away with shorts outside here! So I’m hoping for a slight warm-up in temperatures before we head out.)

WHAT I’m now where near vegan but that cheeeezeee sauce sounds so good. Must find nutritional yeast, STAT. Oh and I would LOVE to go hiking but in south Florida? Not so many places… unless I want to hike in the everglades with all the gators and pythons… hmmmm….

Okay, you definitely live out west somewhere. The only time I’ve seen trees like that is when I visited Portland, Oregon! Love it out there.

And THANK YOU for sharing that recipe. I’ve been trying not to eat dairy because my body can’t stand it.

YUM!! My mom rarely bought nacho cheese sauce for me when I was little, so I could only ever eat it at baseball and basketball games. Brings back good memories… And HOLY COW you’re so brave to hike in shorts in February!! I have goosebumps just looking at your pictures!

That looks like a beautiful hike! I have never tried nutritional yeast but have seen it on a few blogs. That and guar or xanthem gum are on my to try list! I am not a vegan but butternut squash pureed with some spices, almond milke and a little flour also makes a good cheese like substitute!

Oh, this cheese sauce looks awesome. I gotta bookmark this so I can make it soon and serve it when my Vegan friends come visit me next time. We have gathering at our place from time to time and I always need some vegan appetizer recipes that we can all enjoy. Thank you so much for sharing. 😉 What a hike, the views are stunning!

I’m not even a vegan, and I’m considering this cheese sauce. You’re right; the shells totally steal the show (fame hog) until we get to the scenery. Are you kidding with those trees?! That looks amazing and I’m jealous you get to still be in shorts.

Oh yes…seen similar recipes like this before! I’ve made Shira’s (From In Pursuit of More) red bell pepper cheese sauce before but I spruced it up with lemon juice and smoked paprika to really amp up the flavor. It was soooo good! I use nutritional yeast like it is air!! daily! I love the stuff. I make all kinds of sauces with it and even make a cheesy sauce over broccoli!
