There is nothing quite like having a sweet, sugary, crumbly treat along side my morning cup of coffee. It takes my entire coffee savoring experience from an 8 to a 10. Mornings are my favorite, but mornings with coffee and cake are mornings started right.
This recipe was a bit of an experiment. After combining all of my ingredients and making a dough that looked more like a cookie, I was hesitant and expected the worst. Thankfully, as things usually do when I expect the worst, these coffee cake muffins turned out great.
Blueberry Coffee Cake Muffins
- 1 cup vanilla almond milk
- 1 tblsp apple cider vinegar
- 4 tblsp melted coconut oil
- 2 cups GF flour (I used this one)
- 1/4 cup sugar
- 1/2 cup xylitol
- 3 tsp baking powder
- 1 tblsp cinnamon
- 1/2 tsp salt
- 1 cup frozen (or fresh) blueberries
- Preheat oven to 350 degrees.
- Mix almond milk and vinegar together and set aside to sour/curdle. Do this first!
- Combine your flour, sugar, xylitol, baking powder, cinnamon, and salt together. Combine well.
- Pour melted coconut oil into your vinegar/almond milk mixture, and then pour into your dry ingredients.
- Fold in blueberries.
- Pour into muffin tin and top with sugar crumble (recipe below)
- Bake 20-25 minutes, or until a knife comes out clean.
Sugar Crumble
- 3 tblsp GF flour
- 1/3 cup brown sugar
- 2 tsp cinnamon
- pinch of salt
- 2 tblsp melted Earth Balance vegan butter
- Mix dry ingredients together, and then add vegan butter.
Notes: I used a 1 to 1 wheat flour replacement, which means I didn’t need to add anything alongside my GF flour. If you are using a different GF flour for the muffins, add 1/2 tsp xanthan gum. If you don’t have, or don’t want to use xylitol swap it out for regular sugar.
A word of advice: These are best eaten in some kind of bowl, or plate with walls. This ensures maximum crumble consumption, and provides an excuse to be paired with ice cream. As with most of my treats, these tasted better as time went on!

That muffin looks SO good! I love a good doughnut…from a local shop that has some kind of interesting flavor! We were on a trip in Charleston, SC and walk almost a mile from our hotel just to go to a doughnut shop I saw the night before. They had a raspberry glaze and a bacon apple fritter totally worth it 🙂

I’m not sure if I could eat these muffins and only have one or two. They look SO good. Sugar crumble = yes, please. I love to eat a bagel with my coffee (though I actually haven’t done this in a couple of years.) I had been so restrictive on what I ‘allowed’ myself to eat but have recently realized that I was being too strict and wasting moments of my life by not indulging every once in a while. I’ve finally gotten my peanut butter binges under control (random, I know) so if I indulge in a bagel once a week – who cares! Anyways, I digress. These muffins look great Brittany 🙂

I can agree with you on SO much in this comment. I have been through the “restrictive” phases, usually I don’t let them last more than a couple weeks..just enough to reset myself and “try” to gain control over things LIKE PEANUT BUTTER! I actually haven’t had PB in my house for a couple months now because I will literally eat the entire thing in one sitting. I do have almond butter though, and sometimes get a little wild with that.
I do agree though that life is WAY to short to restrict, and it’s all about the balance..which will ALWAYS be a work in progress for me. This is why I run…I HAVE to, or my pants won’t fit. 🙂 Long story short – I totally get it.

Drooooling. I completely agree that pairing coffee with a baked good takes the experience to a whole new level. I usually go with something like a slice of banana bread, but coffee cake sounds all sorts of amazing… especially since it’s been forever since I had any.

Blueberry coffee cake has ALWAYS been my favorite morning splurge!! But when it comes from my favorite brunch restaurant, it’s a humongous splurge. They use the good stuff — butter, sour cream, the works! Your muffins look way healthier, and still have my favorite part: the generous sugar crumble on top! (Well, besides the juicy blueberries. 😉 ) I’m loving all of your baking and sweet treats lately; they’re all right up my alley!
