Lately there have been a few things I have been loving. First and foremost would have to be my fall walks. I have been going on quiet a few walks the past few weeks, some with a partner and some alone.
I don’t know what it is about the blog world, but I have never “met” so many people who love fall just as much as I do. It must be an unspoken rule that to blog you must love the season of pumpkins and crisp air.
I went for a longer walk into town and back a couple days ago, and the walk was about 2.5 hrs. Nothing crazy, just another walk. The next day..I felt like I was hit by a bus. I can run 13 miles in 2.5 hrs and feel fine the next day, but walk for 2.5 hours and feel like I just gave birth out of my hips?? I have no other explanation other than I haven’t been eating/drinking enough. My appetite has been off so I haven’t been eating much, but there is no excuse for the water consumption.
In an attempt to help with my energy levels I made myself a batch of the most amazing balls. I have been loving these for weeks, it’s damn near an addiction at this point. Please do yourself a favor and make these today. It takes 20 minutes of your time, and will “money back guarantee” balance your serotonin levels. I’d like to thank Gimmie Some Oven for this amazing recipe. For a coffee kick version of these click here.
No Bake Energy Bites
- 1 cup dry oatmeal
- 2/3 cup coconut flakes
- 1/2 cup almond butter
- 1/2 cup ground flax-seed or wheat germ (both turn out equally delish)
- 1/2 cup chocolate chips (I tried Crasins too and they were great)
- 1/4 cup honey
- 1tsp vanilla
*Note: Peanut butter also works in place of the almond butter, however both need to be creamy, and preferably store bought jars. While I love my self ground nut butters, they are much too dry for this recipe. If you must use fresh nut butters, try adding a little bit of coconut oil to ensure the end result isn’t too dry. Otherwise the bites won’t stick together!
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep in the fridge up to 1 week..if they last that long!
If you’re lucky, the last ball you roll will end up having twice the amount of chocolate chips. I am saving that one in the top right corner for last! These are great as bites on the go, but I have been eating them as a dessert as well. SO good.
Sometimes if I am feeling really wild, I will make these with both chocolate chips AND crasins. Best of both worlds!

So true: “It must be an unspoken rule that to blog you must love the season of pumpkins and crisp air.” Guilty as charged.
These look delicious! *Thank you Pinterest* 🙂 I’m a lover of traditional no–bake chocolate cookies, but they don’t make my diet so happy…
Alex @ therunwithin
i totally agree with you, I did some walking this weekend and my legs were on fire. I just realize after that man I walked a lot! i love walks in this weather though
Amanda @ .running with spoons.
Walking is seriously no joke! I’ve pretty much abandoned all other forms of exercise for the time being, and it still never fails to amaze me how good of a workout I can get from just walking. Oh, and the lack of water thing definitely might be partially responsible for your fatigue. I know that if I slip up on drinking enough water, I definitely start to feel it pretty quick. All my energy seems to disappear and my limbs feel like lead… then as soon as I start drinking more, I feel a whole lot better.

I heart you. Crazy how many people love Fall, but really, whats NOT to love? 2.5hrs of walking, my goodness.. thats crazy. But EAT more silly! Get Manfriend to make you something delicious. Although I like walking too – you get to notice and appreciate so much more in comparison to running..or maybe thats just me because I daydream when I run? The energy bites look awesome, and I love that they are NO bake, not to mention made of ingredients that are already in my cupboards!!

Walking is a workout! I love it. Also, your balls look amazing. Inappropriate? Maybe, but I’m still gonna say it.
HollieisFueledByLOLZ
Wow that is awesome. I’m personally not really a fall fan…summer all day everyday…def not winter either. But fall isn’t terrible. Walking seriously is lovely (as well as running) in the fall.

yes…the wonders of nutrition! get your fuel girl (i should know..lol).
PS- all my recipes are no-bake *giggle* pickle and peanut butter comes to mind..
imakeeper
Getttttt your energy and appetite up girl! I need you to survive the upcoming winter (and all that follow) so that we can plan our elaborate meeting and future playdates.
Walking in the colored leave land is the best kind of walking that there is. Unless…. it is on a warm sunny beach. Then that takes the cake, for me at least.
These bites look amazing. I would probably eat all of them and feel sick. I think the best non-bake thing I have eaten is….. chocolate PB mousse. Does that count? i have no idea, but it does not involve any baking just a little fridge time.
Alexandra
DUDE heck yes to walking!!!! That’s the only cardio I do and I LOVE IT!!! It’s just to wonderful to take in your surroundings, get some fresh air, and enjoy nature 🙂 Can I come over and eat these energy bites with you and take a stroll? Maybe we could put your cat on a leash heehee
Brittany
Bahaha YESS!!! I have tried walking my black cat..and he sorta kinda went with it..but then would flop on the ground. I got shy because my neighbors were watching and I never took him out since then. HAHA. I still have the leash and harness..I will die alone with my cats I just know it. Pleaseee come over.
Alexandra
I’m coming as we speak!!! Just so I can witness this cat foolery heehee 😀
Lou
YUMMO, love the sounds of these tasty sweet balls (hehe)
2.5 hours of walking is a lot, no wonder you were sore… perhaps more stretching and COCONUT WATER to hydrate quickly, and get some electrolytes back in your system, especially if your appetite has been off – works a treat, believe me. Also, gentle yoga to open up those hips a bit 🙂

Love the first photo! The tree and street is so beautiful

I love fall and I don’t even get a real fall season here. It’s just so much better – everything about it! Walking is such a good workout!
Rach @ This Italian Family
It’s so true! It seems like everyone in the blog world loves Fall so much, haha! I like the Fall, but not like I adore Summer. Also, these look completely delicious!

I eat my vegan chicken directly from the bag.
I know that I shouldn’t.
But I do.

That is all! 🙂
Tessa @ Amazing Asset
Loving your photos, they remind me of why I truly do adore fall 🙂 Well that is until that whole dumb winter situation occurs… if we could skip that and go to spring, it would be perfect!
Andddd obviously this recipe is bomb, no-bake makes things easier and there is plenty of chocolate in there for my liking 🙂
Melissa @ Mouthwatering Morsel
mmm that looks good. I love fall but I wished it was a little bit colder. it’s still too hot down here in the south.
Patty
Aw I LOVE this post!! Yay fall and cookie balls – can’t beat that 🙂
Change of Pace
Yum! I’m going to have to give these a try!
I do love fall, but ours are so short that I can’t get too attached to the season!
Khushboo Thadani
Seriously- walking is a LEGIT workout! As a form of cardio, it’s so under-rated! Hope your appetite and energy levels are back to normal asap! Love the sound of these balls- I love all the ingredients alone but combine them, and that right there is synergy :)!
Sarah @ Feeeding the Brain and Body
That is too bad that your appetite is off, but great that you made some energy balls to get some fuel! Sounds like a great walk! I don’t mind fall but Summer definitely wins for me!

Hey, Brittany. I just came across your blog after you commented on my guest post from Amazing Asset the other day, and after just reading your small description blurb (and your About Me-B. Willy and Blogging for Dummies sections) I love your blog already! Where do you currently live because that foliage is beautiful! I’m originally from Massachusetts, living in Tampa, Florida at the moment and I really miss fall weather. So that pic made me pretty jealous. I’ve made similar “energy bites” before, and they are absolutely perfect for a small snack to have on the way to a workout! Thanks for the recipe of yours, look good!
Brittany
Aww thank you so much for stopping by! I loved your guest post. I live in the Seattle area, we get a gorgeous fall over here!! The energy bites are almost gone..I can’t stop eating them!
letsgetupandlive
Walking is such a great way of enjoying nature. Especially in Fall when it isn’t too cold yet but not as hot as on some days in Summer.
Funny how you’re posting a recipe for balls – naughty blogger thoughts, huh? – just now that I’ve been pondering making some. Do you think quick oats would work in the recipe?
Pumpedpumpkin
YES! I love walking!!! and the fall! We would be perfect bffs. Fall is hands down my favorite season. I was determined to get married in the fall for that reason. I like summer but sometimes I’m just like “UHG heat and humidity”
Barbara Bamber | justasmidgen
Wow!! I love this recipe!! I’d have to hide the stash so I wouldn’t have to share, so shhh! I’ve had the same problem with walking.. it’s a lot harder than it looks:)
katalysthealth
I love no bake balls 😉
I probably have a dozen recipes or so that I make with nut butters and oats. My little sissy LOVES them, so I always make a batch when I come up to visit for her!

I’m drooling. I need chocolate right now.

I love no-bake energy bites – i make ’em all the time, too. Aren’t they wonderful? And your fall walks sound just lovely (except for the soreness the next day). I need to get out + take more of ’em!

gah … I need to walk. I use to think running was the only thing I should be doing but I realized walking isn’t so bad. just wished it was a little cooler out though. as for those bites. yum! I don’t have a favorite no bake thing soooo maybe I need to try yours. 🙂
Alex @ therunwithin
walking takes it all out of me too, I had to laugh at your description though of the pain. That got me 🙂 I need to find some gluten free bite recipes to try, those look so good
Alex @ Brain, Body, Because
At first I was like, it’s not fall? Brittany has lost it??? But, then I realized this is from October, ha!
Also, do you stretch after running, but not after walking? That might be why you wake up so sore!
