    I am 100% absolutely positively addicted to zoodles. How I ever survived without this simple yet delectable way of eating vegetables I do not know.

    I’m obsessed with spiralizing all the things. Why dirty a bowl when you plan to eat the entire Costco sized tub in one sitting? If I could spiralize a cupcake I would, but I’m not sure how that would work. If you’ve never swirled and twirled a zucchini into noodles, do it. Do it now. I use this cheap spirazlier from Beyond.

    Also rocking my world? Berries, and hemp seeds. I’ve been upping my protein.

    I had this bowl of feel good before a solo hike last week. On this hike I stumbled upon a unique discovery that I thought was too cool not to share.

    At the top of the mountain was this Prayer Box. Just as the name implies, this box had a slot to stick prayers. Even if you’re not religious this is a great way to drop a thought for something that is weighing on your heart.

    Sometimes writing things on paper and letting them go is all we need.

    Some hikes I go on are purely sport and I’m fully in the moment of the burn. Other hikes are deeper than that and I encounter multiple emotions by the time I reach the top. It’s as if I’ve had my own therapy session in nature. From a long day at work, to a difficult phone call with a loved one, we all have our ways of working through emotions. This box is another, and I totally dig it. Definite world rocker.

    Other things that rocked my world last week:

    -Three legged cats.

    -Gregory Alan Isakov is coming to Portland in January to play with the Oregon Symphony. He was fantastic with the Seattle Symphony, so I purchased tickets quicker than a pigeons mating session. I can’t wait!

    – Free massages. Except my masseuse fell asleep on the job.

    -Coffee and chocolate…from Maui. My friends know me well.

    Dog is rolling around with his ball, I assure you he is fine.

      To make a salad of shredded zucchini and carrot a little less healthy but EVEN MORE delicious, toss them with some deep-fried egg noodles, crushed peanuts, beansprouts, coriander, and a dressing made from lime juice, crushed chillies, fresh garlic, fish sauce and palm sugar. The deep-fried noodles add a pleasing crunch.

        I’d have to leave the egg noodles and fish sauce out, but that other stuff sounds awesome!! I definitely pair mine with a side of something salty and crunchy.

          Vegan alternatives: soy sauce instead of fish sauce, and deep fried rice noodles instead of egg noodles. Experiment with different noodles, some respond well to deep-frying, turning puffy and crispy, others just stay brittle and take on a burnt flavour.
          Cheap packet ramen noodles are quite reliable, Thai rice stick noodles are wonderful, dried Italian tagliatelle is pretty forgettable…

      zoodles rule! i love spiralizing sweet taters too…. such a good substitute for real noodles. which i love, but hello love handles! 😉

      getting outside can be some of the best therapy out there. that prayer box rules.

        I prefer them raw. I tried “cooking” them once, but I didn’t like them warm and the texture wasn’t much different.

      I really like the idea of that prayer box at the top of the mountain. I’m not really religious, but it seems to me that it would be really freeing to write about what’s on your heart in that moment when you’re on top of the world ❤

      Could you imagine if you could zoodle a brownie? Or cake AND frosting? It would be so fun to eat! I wanted to buy a spiralizer for quite some time. I might have to bite the bullet and get one because zucchinis are a plenty right meow!

      Zoodles.. yumm. I actually just bought stuff to make some.! and I NEED that zoodle maker thing. Like yea.! they would make them look way better. Have you zoodled sweet potatoes.?? would that work. lol

      HAHA. I bought that spirilizer from Bed Bath and Beyond. Britt was house sitting and never knew what this was. I had watched a video on using this and loved it. As soon as she came home, I haven’t been able to use it because she has taken it over. She even removed it from the house and took it on a hike with her, so I couldn’t have used it even if I wanted to. LOL. I’m thinking she needs one of her own.

      I didn’t realize pigeons had a quick mating season. Duly noted.

      I’ve never had a zoodle. Based solely on your recommendation, this needs to change.

      Also, are you sure that dog is ok? Kidding.

        Mating session…not sure how long the season lasts, but the overall session lasts about 3 seconds. The swooning process is much longer though, I will tell you stories of how I know all this over coffee at your house. If we’re lucky we will have a live preview on your porch.

      Hi Brittany! I had a love affair with Zoodles for several months, then took a break. I’m on that break right now, but you may have convinced me to go back hahaha. I always wanted to try spiralizing a sweet potato, so that may be my first project. I had some terribly delicious food at a local fair last week — like deep-fried Oreo terrible, and man it was good. Happy Tuesday, lady! Yes to writing things down and YES to hikes! 🙂

      Hey lovely lady! Stopped into WP and came straight to your little corner on the interwebz. I love your zoodle recipes, especially for summertime salads. Thank goods our Chicago winter is over and I can finally start grazing on cold veggies again. And last week my mama flew into town to visit and that rocked my world for a lifetime, but not when she left 2 days later because I cried enough tears for a lifetime, go figure.       I went on a kick where I ate tons of zoodles last summer. They were so yummy! I should try that again!

      That prayer box is so neat! I love that it’s there! And I love hearing what you write about your hikes through nature. Time in nature can definitely be a therapy session! 🙂

      Everything looks delish – I spiralize everything I can, too. I need to know what is in your delicious looking bowl that has 30 grams of protein yet NO PROTEIN POWDER! That is intriguing.

        1 cup Bob’s Red Mill oats – 14 g
        3 tblsp hemp seeds – 10 g
        2 tblsp almond butter – 7 g

        So I was wrong, 31 g total (plus 0.5 more if we count the berries.) 😉

      I tried zoodles and I think I wanted them to be like pasta…which they weren’t at all. I ended up eating a loaf of bread because it didn’t fill me up. Other than that, the taste is fantastic! My world has been rocked recently by a new breakfast combo: banana, vega powder, almond milk, hemp seeds and PB. SO GOOD!

        DUUUDEE I kid you not…I’ve been mashing a banana up and mixing it with protein powder (I use just a plain pea protein) and some water (I’ll have to try almond milk) with hemp seeds and berries. I’ll have to throw a dollop of almond butter on there tomorrow!! Twins.

        Also, I for sure have chips and some kind of protein with my zoodles. I couldn’t survive off those alone. HA.

      I have the same spiralizer. My fave recipe for zoodles – zoodles, olives, capers, tomatoes, & a quick lemon and olive oil dressing. So darn good.
      Looooooove the idea of the prayer box. And so agree with you about hikes being like little therapy sessions with nature. There is literally no human that can make me feel better than going out solo in mother nature.

      The color of those blueberries is amazing! I had some straight from my parents and a friend’s gardens last week and they were so good. I’m with you too on the hiking and running and being out in nature, the varying approaches and benefits. Always good to get outside.

      Love your zoodle obsession. I haven’t made them in a while… good reminder! I’m loving on hemp hearts lately. Your hiking and my running are the same. Some are great for the burn, others are to let out my emotions and thoughts and be free. I like the “prayer” box. Writing things down does help. That’s why blogging can be such a great coping tool 🙂

      I need to make zoodles! I used broccoli slaw instead of pasta on Monday night but need to break out the spiralizer. I love the combination of zoodles + pea shoots + cilantro! Did you add anything else to the mix? Also, Gregory Alan Isakov = AH! I’m jealous that you’re going to see him again.

      As for me – my new job rocked my world last week! Loving the wine + flatbread pairings! Nomnomnom. Too bad I’m on the Whole30 now. No wine + pizza for me for awhile…

      My first thoughts for spiralized carrots? Cartoodles or carrotoodles! For some reason, my brain wants to put a “T” in there, even though you’re probably supposed to stop halfway through the word… I’m definitely a crazy one! I’m the same way with running and long walks as you are with hikes — I sort through my thoughts and emotions, which usually feels like therapy too. It’s wonderful! And as for what rocked my world last week? Having lunch with one of my “second mommy’s” from childhood. Even though it’s been years, it felt as if only a few days had passed! And I love getting together with people my parents age more than my own. I must be a senior citizen at heart. 😉
