    One of my biggest pet peeves is when people don’t recognize a perfect banana. I get that we all have different preferences, but just because a banana is spotted or somewhat brown does not mean it’s “rotten.” My ideal banana is somewhat spotted, and never green.

    In fact when a banana has some brown to it/ is somewhat over ripe, this is when the nutrients are most readily available for absorption! Plus we all know that spotted bananas make for delicious treats!

    Two sights really captured my soul recently. A cloudy sky, and the above overripe bananas next to two containers of fresh raspberries.

    Baking.

    A hot sunny day hasn’t stopped me from baking in the past, but a cool overcast makes it much easier. We go through a lot of bananas at Starbucks, and when they start to look “not yellow”, they’re mine!

    We’ve already discussed the abundance of raspberries I’ve been hoarding eating in previous posts, and I decided to attempt a new recipe. Not only have I never combined raspberries and bananas together in a bread, but I’ve also never made my own flour. Until now.

    How I’ve never attempted the simplicity that is oat flour before is beyond me, but now that I have I can say with ease this is a new flour staple in my house. So easy, so simple, so delicious, and so CHEAP!

    Raspberry Chocolate Banana Oat Bread

    Ingredients

    • 2 1/3 cup whole GF rolled oats (before making into powdery flour)
    • 1 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 3 very ripe bananas
    • 1 tsp vanilla
    • 1/3 cup brown sugar
    • 2 flax eggs (2 tblsp fresh ground flax + 6 tblsp warm water)
    • 1 cup smashed fresh raspberries
    • 1/2 cup dark chocolate chips (plus another small handful)

    Directions

    1. Preheat oven to 350 F and wipe a 9x5in loaf pan with coconut oil.
    2. Make your oat flour by using a high speed blender or food processor. Blend/process until flour like. This should make around 2 cups, which is what you will need for this recipe.
    3. In a medium bowl combine your 2 cups of oat flour with your baking powder, baking soda, and salt. Set aside.
    4. In a separate medium sized bowl combine mashed bananas, brown sugar, vanilla, and flax eggs until smooth and creamy.
    5. Slowly add flour mixture into the wet mixture and mix until well combined.
    6. Fold in smashed raspberries and chocolate chips. Pour batter into your oiled pan, and sprinkle a small handful of chocolate chips on top. Bake for about 40 minutes, or until a knife inserted into the center comes out clean. Mine took closer to an hour, I have an old oven.
    7. Cool for 10-15 minutes, then remove from pan onto a rack.
    8. Eat with a heaping scoop of vanilla coconut ice cream.

    I can’t express how much fun I had experimenting and creating this bread. Having an evening free to bake instead of work or study really made the process that much more enjoyable.

    I had two pieces right away, one by itself and one with PB and more berries, because you can never have too many berries.

    This bread is delicious, thick, & dense. Don’t bake this expecting light, airy, & fluffy bread. For a better balanced density use multiple mini loaf pans instead of one large one. I could care less, I ate every bit.

    I hope my friends at the Virtual Vegan LINKY Potluck don’t mind that I used raspberries for my bread/dessert again. I just can’t get enough!

      Toss up between strawberries and blackberries for me! I love them both. Also people who don’t like dense bread don’t know what’s up. ELIMINATE THEM.

      I’m very impressed that you made your own flour! That bread looks amazing… Just the right amount of done. I’m a big love of raspberries and blackberries at the moment so a bread full of raspberries is a winner in my book! 🙂

      Uhhhhh… I’m afraid we can no longer be friends. I can’t STAND when bananas are even the slightest bit brown. I can only eat them when they still have a little bit of green and NO brown. (this makes for a very small window of time to eat them, haha)

      Actually, I take that back, we would be great friends because I could pass along my “too ripe” bananas to you and you would love them! hahaha

      I love that they throw out “over-ripe” bananas cheap. I am NOT letting on that this is when they are at their best so I buy bags full for 99c a kilo and I eat half of them while I am baking up and freezing the rest. Who cares that the rest of humanity have been fooled into eating yucky green bananas, all the more for us I say 😉 Best we keep schtum so that this fad of ours doesn’t catch on and the humble spotty banana gets elevated up to “foodie” status and gets priced out of the ballpark 😉

      Dense bread is where it’s at! And I’m totally with you on the bananas — I can’t handle them when they have even the slightest hint of green on them. Bleh. Just no. Spotted is perfect.

      And I’m not sure I could pick a favourite berry, but blueberries definitely have the potential to take first place. Then strawberries. Raspberries are kind of near the bottom of the list for me — don’t hate me!

        Blueberries are prob my top choice too. I LOVE RASPBERRIES don’t get me wrong, but blueberries will always have my heart. Although raspberries have more fiber…and I love me some fiber.

      I used to hate blackberries but now I’m obsessed with all berries. Raspberries still have my heart though so this bread is totally my jam! Especially with the chocolate, because that goes the best with raspberries.

      Raspberries weren’t on top of my berry hit list until… this summer? But seeing them all over the blog world made me give them another try and oh yes, they’re good. The two reasons I’ve yet to bake with them – or at least since living on my own: 1) they’re basically priced like edible gold and 2) I eat the whole punnet before I can even think about using them for anything else.

      Ugh when I was little I lovvvved green bananas. Clearly I had some sort of brain damage as a child. The overripe ones are the bomb! Plus you can freeze them and then whip em out whenever a baking urge comes. Perfect

        YES, I have!! I’ve only ever made them fried though…in coconut oil. SO GOOD! I’ve also had them as chips, the ones from Trader Joe’s. Also good, but oh so dangerous!

      Everyone is on the banana bread making train right now in the blog world, and my eyes and stomach are so so happy. I bought some raspberries the other day at the farmer’s market, and I’d forgotten how delicious they are. Seeing as I LOVE bananas and bread and raspberries for that matter, this recipe is genius! When you posted this on instagram I came over here immediately. And here I am a day later, back at this post, with it bookmarked now. Yep, I’m crazy. xx

      Your raspberries look absolutely perfect and that bread sounds divine! I love the mixture of raspberries, bananas and chocolate chips. YUM! I love overripe bananas to cook with, but I prefer my bananas a touch green when I eat them. LOVE bananas!

      Green bananas are just nasty- ick! I’m all for the spotty, ugly kind…even spottier if I’m baking! Given my recent love (more than normal that is) for banana bread, you KNOW I’m all over this recipe…do you think peaches would work in place of the raspberries? As much as I would love to keep in the berries, sadly they’re not in season here!

        OHH peaches would be interesting!! Peach and banana, those go together right!? WHY NOT! Give it a try!! They might be a bit more wet than the raspberries so maybe start with less than a cup and see how that works.

      I used to complain how these bananas look and refuse to eat them and my copain always buy his bananas brown and spotty – and eat them regardless, which grossed me out way back then. Few years later, I realized how useful these overripe bananas are in baking, smoothies, and so much more; they are also a perfect natural sweetener! I love raspberries, my neighbour grew berries & veggies in his gardens, and dropped a box of beautiful locally grown raspberries/blueberries at our house, so nice of him! Britt, this bread looks marvelous….love this with peanut butter and BERRIES! Mmmmm!

      Raspberries are my all time favorite fruit so I’m quite alright with you making multiple desserts with them. Keep ’em coming, and you already know how I feel about #publicbanana.

      I made my own oat flour this past weekend. It was a first for me as well (look at us experiencing our ‘firsts’ together), and so damn easy. Hooray for oat flour.

      The bread looks so gorgeous!!! I love all the chocolate chips of course! Sadly, I’m not a fan of too much banana in baked goods…I really, really wish my tastebuds would change, but I just can’t handle it.
      My favorite berries are strawberries and blueberries and have them daily!!!

      Just when I thought this couldn’t look any yummier you put PEANUT BUTTER on it. After my own heart! I love brownish bananas in smoothies because their flavor intensifies, but I don’t love eating them straight. Only because they’re messier! I know that’s crazy.

      Ohmygosh, I am SO tempted to fill out an application for Starbucks based on that banana tip alone. I eat one every single day (they’re the perfect breakfast/post-workout-fuel!), so I would snap those up in a heartbeat. I love the lightly freckled ones; they’re a little softer and have the fullest banana flavor. So obsessed with berries right now — LOVE your bread!!
