    When I first took the plunge and adapted a vegan lifestyle, I felt inspired. Suddenly my meals and baked goods were each a new experiment, and I was revamping my old favorites to make them new. I fell completely in love with plant based foods.

    Fast forward two years and my baking sometimes has another label slapped onto it -gluten free. I haven’t talked about it much on the blog, because I really dislike labels, but I have adapted a 95% GF diet. Simply because I feel better without all the breads/wheat intake.

    My digestion is amazing, and I don’t feel sluggish or bloated. I say 95% because I will occasionally eat a roll, a cupcake with whole wheat flour, or if I go out to a restaurant I will eat what I am served, but when I am at home I go GF for most of my meals.

    I’ve been baking a lot of treats lately that don’t call for flour at all, which has made this adventure easy, but I decided it was time to revamp my all time favorite cookie recipe. I made it gluten free, and added ground coffee…because I could. Don’t let the terms “vegan” and “gluten free” fool you though, these are one of my more naughty treats.

    Chocolate Chip Coffee Cookies

    Ingredients

    • 2 cups all purpose GF flour (I use Namaste Foods GF flour, it’s a cupforcup flour)
    • 1/2 teaspoon baking soda
    • 1.5 tablespoons fresh* ground UN-brewed coffee beans
    • 1/2 teaspoon salt
    • 3/4 cup melted coconut oil
    • 1/2 cup packed brown sugar
    • 1/3 cup xylitol (or raw sugar)
    • 1 tablespoon vanilla extract
    • 1/2 cup applesauce
    • 1.5 cups semisweet chocolate chips

    *fresh coffee has the most flavor

    Directions

    1. Preheat the oven to 325 degrees F. I use stone wear to bake my cookies so that I don’t have to line a baking sheet, but if you don’t have any line a cookie sheet and set aside.
    2.  Combine the flour, xanthan gum, baking soda, ground coffee and salt. Set aside.
    3. In a medium bowl, mix together the melted coconut oil, brown sugar and xylitol until well combined. Mix in the vanilla, and applesauce until light and creamy. Mix in the dry ingredients until well combined. Stir in the chocolate chips by hand using a wooden spoon. Place cookies onto a lined cookie sheet, or large pizza stone. Cookies should be about 3 inches apart.
    4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted.

    Now..keep in mind…these are gluten free. The raw cookie dough itself is not as tasty as regular floured dough, but I did still eat enough dough to feel slightly sick. What can I say, I’m a dough digger. These are fluffy, soft, and full of sugar. Perfect.

    I shared these treats with some civilians* and they loved them. I found that the flatter and wider the cookie, the more balanced the flavors. Shorter and taller cookies had a bit of the flour taste, so make sure you make them an even size. I am officially obsessed.

      These look just PERFECT girl, and of course you added coffee, hahaha! You are going to turn into a coffee bean 😉
      I pretty much do all gluten-free baking and cookies. I’ve heard Bobs red mill has a funny taste because of the bean flour in them?? I’ve heard King Arthur flour blend is good. I’ve never tried any blends since I make my own, but a company recently contacted me and is sending me their blend. I’m anxious to try it and see how commercial blends compare to my own. Regardless, these look fabulous and sooooo good and I want one in my mouth!

        OH, good to know!! I did notice a bit of a flavor, but it wasn’t terrible. I would love to try King Arthur’s blend, that’s what I used to buy when I used whole wheat! OR maybe it’s time I make my own!?

        It’s a binding agent used for most GF baked goods, it prevents the treats from CRUMBLING TO PIECES!

      These sound good, I love cookies that have a slight coffee flavor. My favorite banana bread is gluten free, it is a little hard to get the flour combinations right. I’ll have to try these cookies!

      no it doesn’t scare me but kudos to those who do it. i’m just too lazy to find alternatives but i do eat clean which is a task enough for me.! i want those cookies!!

      Those look/sound so divine, and I love that you added coffee to them! I bet it really punches up the flavour!
      I’ll admit, the GF label scares me! I’m sure it’s like when Kelly went vegan though- I would just need to take my time in grocery stores to find the proper ingredients and get the hang of cooking/baking for that!

      YUM! Coffee + Chocolate are always a winning combo! These look absolutely delish – as with all the things that you make. I feel SO much better when I am not eating gluten as well.. I try not to eat a lot of wheat either at home, but just like you – when I am out and about I will not let gluten get the best of me and eat what I like!
      So…. wanna move closer together so you can share these babies? I’m too lazy to bake/I will eat them all in one sitting.

      I’m all for people following whatever style of eating makes them feel their best, so no… vegan and gluten-free doesn’t scare me. Diets without cookies do, though 😆 These look fab, girl. And I love how you’re always managing to sneak coffee into all your treats. A girl after my own heart ❤

      It makes me giggle when you add coffee to your chocolate recipes…you are all about the coffee 🙂 I’m very open to trying new things, while I know (or think) I won’t go vegan or gluten I still will try new recipes regardless of the label. I have to say my husband is very weary of the gluten-free title b/c we had really bad gluten free beer once 🙂 and he hates “fake” meats or cheese but he also knows every recipe that says vegan is not necessarily that.

      First, of course you would throw coffee in there 😉 Second, that, combined with chocolate and coconut oil sounds heavenly. I really need to get some xanthan gum to have on hand when I want to make this kind of stuff, or just thicker smoothies or something.

      I learned my lesson about tasting raw dough when I use Bob’s Red Mill All-Purpose GF Flour… It includes garbanzo bean flour, so it has the taste of savory beans! (Similar to if you’ve ever tasted the raw batter for black bean brownies… Which I also made the mistake of doing. I just love licking the spatula too much!) I was actually just thinking about baking coffee cookies myself; your fabulous cookies just might have convinced me it was necessary! 😉

        Bob’s DOES have a bit of an after taste, I must experiment with other flours. I’ve tried another all purpose from Costco, but I liked Bob’s better. I need to just make my own! BAKE SOME COFFEE COOKIES!

          I usually end up making my own blend with Bob’s other pure GF flours to avoid the bean-based flours. I can’t bake anything without tasting the dough or batter! 😉

      you know, i feel similarly about eating GF- it’s not a diet thing, but i just feel better in general when i limit carb intake. maybe that’s an all-people thing? but i’ve always been curious about GF flours- doesn’t the substitute filler usually make you feel similarly… what’s the word.. overly full? bloated? or does it do away with all of that? oh dear, i always feel like you’re some kind of nurse/dietician and i come to you wish such basic kiddo questions 🙂

        I haven’t noticed any problems subbing GF flours into my diet. I don’t eat them a lot, but so far I am OK! I haven’t heard of any bloating occurring, but that’s not the say it doesn’t happen!! I feel bloated eating too much “regular” flour. It’s sad. Xylitol, a natural sweetener DOES cause bloating and even gas…fun fact that you probably didn’t want to know!

      These look amazing – and i’m going to guess they probably taste pretty good too. I just feel like school sucks all the time out of my life I used to have for, well, doing anything else! I am going to bookmark these to try sometime this summer!

      I’ve been considering going GF as much as possible too, because my digestion is so so bad. I’ve been horrible with meal planning lately!

      I’m also vegan and about 95% gluten free–sometimes I’ll buy Field Roast sausages from Whole Foods and they’re made with vital wheat gluten–but most of the time I avoid it and some days I even eat grain free too. I haven’t mastered the vegan GF baked goods yet but these cookies look AMAZING and easy which I love. I did make some cookies the other day with some sprouted GF flour I found at the store and they actually turned out decent which was a total win for me!

        I LOVE Field Roast sausages, but my tummy does not. 😦 For that reason I leave them only for special occasions. The professional baseball park in my area sells them, so I may have one if I ever make it to a game! 😉

      Okay don’t hate me, but the raw cookie dough tastes yucky cause of Bob’s Red Mill mix. I promise you, most GF flours don’t taste that yuck! Look for a brand called Namaste Flour if you can find it or try blending your own. Seriously SO much better. Okay, love me again.

      I can totally ignore the vegan GF labels because you added coffee to these, which I adore.
      GF stuff doesn’t scare me at all. My only issue is I don’t have the flours, baking ingredients on hand and it’s not something I’d usually buy just for one recipe. Your recipe might be the exception though. I still want to make that vegan fudge. You temptress you.

      Oh drool.
      I don’t belong in any label because I eat seafood but no other meat. I try to stay gluten free and like you, eat what’s in front of me while at a guest’s house or out to eat. I say I’m vegetarian, but vegetarians would never eat a delicious piece of salmon.
      I guess I’ll never really know who I am in terms of a food label. Woe.Is.Me.

      CIvilians!!!! ahhhh I love that name for us people who eat…. gluten and things. Once again, you got the coffee in there- yes. These look amazing as does that final photo of chips- seriously SELL YOUR PRINTS ON ETSY. YOU COULD BE A MILLIONAIRE-WELL-KNOWN-FOOD-ARTIST by now.

      OH- I just had a thought. You could make them into greeting cards and say things, like ‘I’d share my chips with you.” or “You make me chip-per!” or something……. Okay, I’ll stop rambling. Clearly, I always have greeting cards on my mind.

      You’re killing me Britt. These look bomb. Although I may be biased…. anything with chocolate AND coffee has my name written all over it. I’m not turned off by the vegan/gluten free label, but I do worry that the gluten free flours will taste gummy? Maybe. I’m just not sure about it yet….

      Love these!! I haven’t attempted a chocolate chip cookie yet.. it totally is the “holy grail” of vegan baking:) Here you’ve done it! I can’t wait to try.. I’m just sad because I’m totally out of my GF flour right now, used it all up on the weekend.. now I have to wait a few days!! xx

      First off, I love you not only tasted the batter but went back for more. LOL!

      I would totally dive right into these, they look delicious! I wouldn’t care about it being vegan or gluten-free. Tasty is all that matters.

      Can I ask you a vegan baking question? I’m going to anyway. Do you prefer to use coconut oil over a non-dairy butter when baking? If so, why? Is it due to the soy?

        Sometimes I just can’t stop with the dough..it’s not a pretty sight.

        You can ask me MANY vegan baking questions! I do prefer coconut oil over non dairy butters for 99% of my baking. Simply because it’s SO good for you, and the flavor is delicious IMO. The only time I’ve run into problems with coconut oil is with frosting. Unless the frosting (for like a cupcake) is chocolate, I cannot use coconut oil because the flavor is WAYY too strong. This is where I would use Earth Balance (vegan) butter instead. It’s all about the trial and error for me, and coconut oil almost always wins the battle!

        I do moderate my soy intake, but I am def not anti soy. I love me some tofu.

        You could use an egg, or a seed egg (made with either chia or flax seeds), 1/4 mashed banana (although this will be a strong banana flavor possibly), or 3 tbsp nut butter!
