    Every once in a while I stumble upon a recipe that rocks my world. These masterpieces usually cause my inner foodie to do a mental back flip off of a killer whale. It’s very rare for me to follow a recipe completely, as I usually like to tweak them around to make them my own. I found a recipe online and followed it almost 100%, right down to the food plating. I was that inspired. All pictures in this post are in fact mine.

    It’s been two days and I still can’t stop thinking about this meal. It’s the perfect spring/summer meal. I did use different beans, sprouted tofu instead of firm, and I didn’t season my kale. Minor differences that don’t take away from the glory that is this recipe.

    BBQ Tofu Bowl

    Inspired by thesweetlifeonline.com smoky bbq bowl

    • 1 cup brown rice
    • 8 oz sprouted tofu, pressed
    • 4 giant kale leaves
    • 1 cup beans (I used white kidney)
    • 1 cup BBQ sauce (or you can make your own) also enough to cook the beans in.
    • 1 avocado
    • 2 tblsp nutritional yeast

    For the tofu:

    Cut the pressed tofu into cubes and marinate them in a shallow container with 1 cup of your BBQ sauce for about an hour. Once the tofu is done marinating, place on parchment paper or silicone baking mat and bake for 20 minutes with your oven preheated to 400F.

    Save the extra BBQ sauce and mix with the nutritional yeast. After 20 minutes take the tofu out and flip them over. Reapply the saved BBQ sauce and bake for another 10-15 minutes. For extra crispness put on broil for a few minutes, but make sure not to burn it.

    To assemble the bowl:

    I used brown rice on the bottom, and then layered the rest of the ingredients on top. I steamed my kale, and warmed my beans on the stove in BBQ sauce. Yes..more BBQ sauce. Assemble and place avocado on top. This recipe serves two. For an extra kick squeeze lemon onto the kale after it’s been steamed, and add S + P to taste.

    Please do yourself a favor, and make this for dinner. Vegan or not..this meal is sure to please everyone with a pulse. Oh and as if I could forgot..dessert is always a must. Just like my cupcake for one, I made ONE cookie for dessert. This too needs some tweaking.

      Yummo!! Anything with BBQ makes me super happy. That bowl looks like a little slice of heaven. I tried pressed juice for the first time yesterday and it made me so happy that I told my mom I wanted a juicer for my birthday and now it is on it’s way to my house. SO I will be having a BLAST with that from here on out!

      Is it terrible that I’ve never prepared tofu on my own…? It scares me (I’m lame, I know), and the Whole Foods hot bar just does it so much better…

        It’s really not as scary as it seems haha. I was worried the first time I made it too! WF does do a good job for quick and easy consumption!

      tofu–one thing that I haven’t tried. And am a little nervous too. Texture might weird me out! BUT it sounds tasty 🙂

      you know, seriously, some of the recipes you tweak to make your own, you should get patented so you can get paid for it.

      I saw a sneak peek at this meal on Instagram (I think) and thought it looked super pretty then. Nice job plating everything up! Anything with avocado is up my alley…and I have a block of tofu sitting in my fridge and I didn’t know what the heck I was going to do with it…problem solved!

      That tofu looks awesome! I love bowls of veggies like this. Lately, I’ve been eating vegetarian (just haven’t really wanted any meat) and I’ve been loading up on beans. They are great to add to just about any meal! Can’t wait to see that cookie recipe. No way did you make that thing in the microwave, right? Either way, I’m impressed with it!

      oooooooh my gosh, this looks so good! BBQ anything is golden in my book. I had General Tso tofu over the weekend, which has a similar sweet, tangy sauce. NOM!

      This looks amazing!!! BBQ tofu is the best :). I now suddenly have a craving for BBQ tofu and vegetarian baked beans? Haha…it is sounding like a pretty tasty combo!

      omg that looks SO good! my last meal that was a hit with the fam was a filipino dish called chicken adobo. the only down side is that it’s pretty salty because it uses soy sauce so i’m trying to find a way to reduce the sodium level.

      I don’t eat tofu because soy bothers my stomach, but I love bbq marinated things! The combination of flavours in this bowl sounds incredible!

      I can’t eat tofu because my stomach doesn’t handle soy that well, but holy.wow does yours ever have me craving some. It looks so perfectly crispy and flavorful… and the BBQ and avocado combo? Gah! Mind coming to cook for me? 😀 I’ve totally been slacking on the cooking lately and would like to be eating something besides ABJ sandwiches and grilled chicken salads.

      Okay don’t kill me for going anti-vegan on you but I might have to recreate this with chicken instead of tofu- such amazing flavors..I love the combo of avocado & bbq sauce :)! And by the looks of it, I don’t think that cookie needs any perfecting…it looks rather fabulous to me- perfect texture!

      That tofu bowl looks good! I’d have to not use beans but everything else is great. I’ve never had sprouted tofu before.

      I love the idea of a single serve cookie, can’t wait for your recipe once its tweaked.

      I don’t cook with tofu often, but I just might have to give this one a try! The hubby isn’t a big fan, but hey, if I’m cookin he has no choice right!? haha. I love love love that avocados are in season right now! They are everywhere 🙂 MMMmmMMmmMMm

      HOOOKAY- this looks really good, minus the avocado. Me no likey the green mush. DId you change the background to your website? it looks beautiful. I feel like this pattern would be the colors you could decorate your B and B with.

      I only had tofu ones, but I was not a fan. Maybe I didn’t give it enough of a try, but it kind of freaked me out …haha Your food always looks so good, though!

      This actually looks so good and spring-y! I don’t really eat tofu BUT I think I should probably give this one a go. I’ll make Max eat it too 😀 hahahah I love the “one” dessert moments.. its actually the best idea ever, cause we all know what would happen if we baked an entire tray of cookies/cupcakes etc….

      The BBQ tofu looks great! I love bbq flavored things in the spring time. My boyfriend won’t eat tofu so I may have to make this for me one night when I’m by myself for dinner. It would be a nice change from my usual yogurt bowls. single cookie sounds great, that would solve my problem of eating them all before I can even bring them into work the next day.

      A recipe for just one cookie? Genius. I can’t even tell you how many times I’ve been craving just one cookie at night but I don’t want to go out and buy one and I don’t want to put the effort into making a whole batch. So I end up grabbing a handful of chocolate chips but it’s definitely not the same. Can’t wait till you tweak the recipe and share!
