    It’s a shame I wasn’t more attentive in my 11th grade food science class. We routinely watched Alton Brown on Good Eats, yet I was always working on other homework, goofing off with my friends, or making chewbacca noises in the corner. These days Good Eats comes on, and I am alert with pen and paper ready to take notes on a new science related food project. This post has nothing to do with Alton, or with his show, but it does have to do with some VERY good eats.

    After my 8K last Saturday, I went to the farmers market to check out the goods. I’ve been to plenty of farmers markets, but I had never purchased any of the items being sold..until now. I immediately focused in on the giant fanning leaves that the Egyptians used for their royalty. I also noticed the bowel color changers in a bundle of 4.

    That would be giant swiss chard leaves, and beets..which well..change the color of your bowels. It’s hard to tell the size of these leaves from the photo, so allow me to compare my stub hand for a size reference.

    Seriously..huge leaves. Both of these items were $3 each, there was no way I was leaving without them. I knew right away what I wanted for dinner that night. It ended up being so delicious that I had the same dinner two nights in a row.

    Beans and rice, all wrapped up in the chard taco! This was SO good, and SO easy. Despite the deliciousness of this meal, it is definitely not first date worthy. Be prepared to make a giant mess.

    The bundle of leaves came with 8 giant fans, and they were gone in two days. I hope the farmers market by my house has these because I need more. I’m twitching at the thought of them. The second night I had these, I paired them with a random kitchen creation. Who likes jalapeno poppers? If you’re like me..you can easily throw away 20 poppers in one sitting. Sadly enough..this was a common trend throughout my youth. It’s no wonder I was a chunky child. These days I don’t find myself eating poppers all that much, especially now that I eat a vegan diet. Enter idea: vegan cornbread popper muffin..things.

    This was crazy easy. I used Bobs red mill corn meal mix, and followed the recipe on the bag to make the cornbread. Cut up a few jalapenos stuffed with vegan cream cheese, and baked them until they were brown! If you’re not vegan, make em with regular cream cheese!! They turned out great!

    And that..is what I call good eats!

      I have never had swiss chard before. Those look good though, I think they were having a sale at the cheap produce place I go so maybe next time I will give them a try. I have been dying to make some sort of stuffed pepper with cheese that you bake. This is a great idea!

      I enjoy beets. Tell me how else you eat Swiss Chard? I went by a farmer’s market this weekend too and picked up some beets and Swiss Chard! Great minds think alike!

        I use the Swiss chard a lot when I make any kind of pan fried mix. I will cook it in olive oil or coconut oil and mix it with other veggies, potatoes, or beans/lentils. It withers like spinach when cooked on the stove and pairs well with rice or any grain! Or just use it in a salad!

      Yummo, it’s terribly wring I have NEVER tried a jalapeno popper isn’t it? Must try!

      Ummmm something insanely good I have eaten? A homeamde chocolate and beet cake with caramel butter cream!

      Oh yummm. I’m sad I already ate dinner, because I want to eat these for dinner instead! I’ll ignore the fact that I already went to the market and Swiss Chard did not end up in my basket home.

      Something great I ate recently: sweet potato and goat cheese sushi. Sounds like it could be weird, I know, but it may have changed my life. Everything else kinda tastes second place in comparison.

      Haha, I’m so old Alton Brown probs wasn’t born when I took Home Economics and learned to cook at school:D I love his show and I can imagine you’d be learning so much from it. I should take the time to do that too. I love your beautiful photos with the pure white background… and my gosh.. those are massive leaves!! I didn’t know you could buy vegan cream cheese.. that’s awesome!!

      Yummy!!! Today for lunch I had quinoa topped with edamame beans and baked sweet potatoe, soooooo good. And for dinner I had a salad topped with orange peppers, dried apricots (AMAZE), and baked tofu, :).

      NOM! That looks really good. Glad to read I’m not the only woman who goes wild for a farmer’s market, elbowing hipsters and vegans out of the way to get to the really fresh stuff. Seriously yesterday the local fruit and veg market happened to be closed after I trekked all the way down there, and it seriously bummed me out. I may eat double today, to make up for it 🙂 I have food posts coming soon, FYI!

      Collard wraps are the best and steamed swiss chard is one of my favorite alternatives. Never added beans to the mix though – so thanks for the inspiration 😉

      OMG those swiss chard wraps look soooooooo good- love how creative you are with your eats! I don’t think I’ve ever had swiss chard but obviously that needs to change! The last GREAT thing i ate a soy & maple glazed salmon..ah just thinking about the texture/taste makes me hungry haha!

      I am not regular in watching Alton’s show, Good Eats, but I really listen what he says. These chard tacos and corn bread muffins look so good.

      Seriously all this look amazing!! and those cornbread muffins?! what a genius idea!! not a hot person, but my bestie would LOVE these! swap the spicy stuff out for tomatoes and Im all over those bad boys
