    Working in a coffee shop means I get to work around drool worthy baked goods all day long. I have been lusting over the blueberry scone at Starbucks since it was first launched a few weeks ago as apart of the new La Boulange treats. This scone is made with dairy, so I took the inspiration and baked my own dairy free scones!

    I took my scones up a notch though and added orange zest and squeezed an orange on top, with some sugar for a crumbly finish. Craving satisfied! If you look close you’ll see the zest!

    I used a pre-made flour base so I don’t have a recipe for you, but perhaps this post will inspire you to bake some scones to have with your morning coffee! I had just purchased some fresh organic blueberries that were on sale, it must have been fate!

    If all else fails, there is a Starbucks on every corner and you can go buy a blueberry scone from them, I hear they are delicious! I bring some home to my mom anytime I can! Bringing home scones for my family means I get to eat more of these scones, win win!

    I still had plenty of blueberries left after making these scones, and decided to throw some in with a bowl of quinoa. From there I added some pistachios and topped it all off with some lime juice! SO simple, but so delicious!

    I don’t have a recipe for this either because I just eyeballed everything. I used a half cup of (pre)cooked quinoa (which comes out to be more like a full cup after the quinoa is cooked,) around 3/4 cup of blueberries, and around 1/2 cup shelled salted pistachios. Squeeze as much lime (or lemon, or ORANGE!) on top as you desire!

    I LOVE blueberries, so perfect for summer.

      Oh I LOVE scones…and I have tried the Starbucks Blueberry scone and it was totally amazing, as I had anticipated! I LOVE blueberry scones, but since I have this new found lemon craving for everything that I eat, I wonder if there is a lemon scone recipe out there? That would be interesting to try 🙂

        There is a recipe for EVERYTHING out there! Lemon scones are AMAZING!! Check out Google or Pinterest, they have endless recipes!! You could even just use a basic scone recipe and add AS MUCH lemon juice as you want (well almost haha you don’t want soupy scones!!!!) I would rub the juice on top too like I did with the orange on these..SO GOOD!

      I never think to go the sweet route with quinoa, I always make it savory with veggies and cheese. Love the simplicity to it though. And fresh squeezed citrus in the summer is a must. The lime and blueberry kind of has me craving an adult beverage…

      I made pumpkin scones like a year ago and they were AWESOME. It was my first time making scones and I was pretty proud of myself they came out looking like a scone! Haha! At least being vegan saves you the money of constantly buying all of the baked goods at Sbucks. You make me want to get a job at one!

      Mmmm blueberry scones are my FAVORITE!! Although cinnamon chip is a close second 😉 I love anything with blueberry, though, especially when you add lemon or orange zest…definitely takes things over the top 🙂

      Oh now I’m craving scones! I don’t remember the last time I had one, but omg I love them! I think my fondest scone memories are of the ones I had in England. They were plain, but with that thick clotted cream and fresh jam? Nothing better. Period. I’m going to have to make some of my own. Blueberry ones sound AWESOME! I eat so many blueberries, I’m kind of waiting for my skin to turn blue… if carrots can make you turn orange, why can’t blueberries make your turn blue? 😉
      I think raspberry chocolate chips scones would be awesome too! Or lemon poppyseed! Maybe even cherry orange! I used to make cherry orange muffins all the time and they were amazing. I know cranberry orange is the more “classic” flavor, but fresh cranberries just aren’t sweet enough for me! Oh to have a sweet tooth…
      Okay, I think I’ve rambled enough! But I’ve just got to say that that quinoa looks awesome too! I love the sweet spin on it (no surprise there haha). I’ve seen lots of recipe for breakfast quinoa but have never actually tried it. I guess if oats can be breakfast, quinoa deserves a chance too haha. Okay, rambling OFFICIALLY over!

      ok…. don’t make fun of me but i have never ate a scone before. I dont know if this means i am a hermit or lame or not from england, but perhaps i need to go to starbucks and buy myself one.

      blueberrrrrries are de best. have you seen the ‘you forgot the blueberries’ youtube video??? if you haven’t, please watch it now.

      1) I love scones! 2) I cannot seem to get enough blueberries this summer. I seriously have been using them in all of my meals – yogurt, oats, salads, cereals! I love when fruits and vegetables are in season. There is nothing better! 3) I like the idea of making your own scones (though I have never done it before – I’d like to) since you know what is actually put into them 🙂

      Yes, those Starbucks scones are amazing (or Starbucks anything, really….). Yours look better though, because anything homemade is a FTW type situation! 🙂 Blueberry anything is awesome but your quinoa creation is definitely unique. I love it but how were you able to use uncooked quinoa for a salad like that? Because it soaked up in the lime juice? Super creative!

        Such a great question about the quinoa, I can see where I went wrong with describing my portions. I did cook the quinoa, but what I was meaning is that it’s half a cup of uncooked quinoa (which you will then cook) but because it expands once it’s cooked I wanted to be sure people knew that I meant half a cup BEFORE it was cooked. I didn’t clarify that very well…so I updated the “recipe.”

      Wow- those look divine! And your quinoa looks pretty darn tasty, too! We’ve been trying to eat more quinoa, so I should make this!

      I just love the look of scones. And the look of blueberries. So basically I’m just drooling all over this post 😉 I actually have two favorite flavors of scones! 🙂 English Royalty Chocolate Chip Scones: http://allrecipes.com/recipe/english-royalty-chocolate-chip-scones/ They are super simple to make and the combination of orange juice and chocolate is amazing. Those would be super easy to make vegan because there is already no eggs I think.       Wow! Those look awesome and delicious. I am a sucker for “summer fruits” like blueberries and strawberries. I eat them all year long.

      I think if I worked at Starbucks, I’d be hopped up on sweets and iced coffee all day long. It might require an intervention.

      My aunts scone recipe (that I stole) is to die for but it has buttermilk in it. I also have a good pumpkin one and I know we both love pumpkin!! I’m gonna try your blueberry one, I have never really tried vegan things but I’m pretty amenable to anything that comes out of the oven! 🙂

      I picked the perfect time to pop by.. I adore blueberries and scones and here they are together:D I have often seen baking at Starbucks and aim to Kopykat every single one, but I never seem to get through the entire baking selection, lol! I’ve made their gingerbread loaf.. and now I want to try the blueberry scones!!

      There is something sooooo stinking wonderful about a scone. ahhh, I love them. When I saw the quinoa, blueberry picture on instagram I almost died…. DELICIOUS and so summery 😀 YUM. Nothing better than fresh fruit in the summer!

      MMmmmm Blueberries! I love frozen ones in my shakes year around, but fresh plump ones are the BEST! I can go through a pint in a day if I’m not careful, haha. Those scones (both yours and SB) look delish 🙂

      And those scones look amazing and now I’m totally craving one – I can’t even remember the last time I had one, but I’m so in the mood for one now.
