    The first pumpkin of the season has been consumed by my face.

    TJ’s pie pumpkin, whopping price of $1.99. This happens to be the same price as the canned pumpkin. Why buy a can when you can use the real thing? This pumpkin was sliced, diced, chopped, emptied, and eaten like it was my job. I was able to get three uses from this bad boy.

    Coconut oil and sea salt pumpkin seeds. Pumpkin seeds happen to contain a variety of minerals, vitamins, protein, fiber, and are low in carbohydrates. Ideal snack for my vegan diet.

    Half the pumpkin was saved for the next mornings breakfast, pumpkin pancakes.

    I have missed my pumpkin pancakes. I do prefer canned pumpkin for pancakes because it’s much creamier than fresh pumpkin. My favorite part of this pumpkin was the deliciously spicy soup it was initially purchased for.

    Pumpkin Lentil Soup

    • 1 small red onion
    • 1 small cayenne pepper (or if you don’t like spice, a mild pepper works too)
    • 1tsp cumin
    • 1/2 pie pumpkin
    • 2 cups vegetable broth
    • 1 cup water
    • 1/2 cup red split lentils (I used the ones from TJ’s)

    –The first thing I did was cut the raw pumpkin in half (actually Manfriend did, I’m a wimp) and bake the halves at 350 until the pumpkin was pliable. When the pumpkin was done I set it to the side and started getting the other ingredients ready.

    –Dice up the onion and pepper into a pan to saute. Add the cumin and cook until the onions turn translucent. Once these are done you can then add the vegetable broth, water, pumpkin and lentils (make sure your pan/pot is big enough.) The lentils need a few minutes to cook. Once the lentils are done to your liking, pour the mixture into a blender and blend until smooth.

    This is the perfect fall soup. I knew I had to start the first day of fall the right way with pumpkin, pumpkin, and more pumpkin. I even tried my first pumpkin spice latte (soy) from Starbs! I hope to find plenty more fall inspired recipes over the next few months!

      Hey pumpkin girl—that thing is the perfect pumpkin (or, I guess, it was!)…
      I love pumpkin…a little too much. All those fall spices always get me–but I think apples are my favorite fall thing. I grew up in “apple country” and going outside during apple season is the most amazing smell on the planet!

      I AM SERIOUSLY FREAKING THE EFF OUT BECAUSE… I was at the airport today and realized that the HOLIDAYS are just around the corner… Yeah, not really sure why the AIRPORT reminded me of such things but…. Maybe it’s because I love when stores and EVERYWHERE I GO there are holiday decorations!!!!!!! Everyone seems so happy, even when times SUCK – I LOVE IT!!! The worst day of the year though is January 2nd though! BLEH! EFF THAT – so I ain’t gunna even think about that right now! ha ha. Can we nosh on pumpkin together? I have 8 million cans of Libby’s in my pantry… I dig in with a spoon, or maybe… JUST MY MOUTH! LOL!

      Hi Brittany! Just came across your blog today and thought I’d say hi because I -adore- your energy! And that pumpkin soup… omigosh. Pumpkin is definitely a perfect Fall food, as is anything with apples, maple syrup, cinnamon, sweet potatoes, walnuts, figs, or pecans… Mmm yes, Fall is a tasty bugger.

      Pumpkin soup is the best…even better when butternut squash is thrown in the mix! I remember making such a random soup last year but it was SO fall and so yum…butternut squash, chickpea & apple..and of course cinnamon was added in!

      YUM!! I guess I just didn’t know how to go about making pumpkin with..a pumpkin. I usually used canned. This seems like the better, and less expensive, route for sure!
      I love adding pumpkin into soups! Thanks for the idea. Can’t wait to start up with pumpkin again. 🙂

      I love fall. So much. And your soup looks ah-mazing and a definite must try!

      Just as an FYI from a Starbucks barista – our pumpkin syrup contains dairy. It has sweetened condensed milk and condensed nonfat milk in it. Your barista should have let you know when you ordered something with soy, but in case they didn’t I want to make sure you know!

          No problem. White Mocha an Creme Brûlée also has dairy. You’re safe with the regular chocolate though. 🙂 The protein powder in the smoothies is also dairy – and that’s all the hidden ones I think!

      This looks so great!! I dont believe Ive ever had full on pumpkin soup, but I have had pumpkin chili!! My favorite fall flavors are anything that can be turned into a soup 😉 Oh and cinnamon of course!

      I love ginger! As in gingerbread loaves and gingerbread men. Although that might be more of a late-fall-slash-early-winter flavor. But pumpkin and chocolate are up there on my list too!

      I recently tried the limited edition pumpkin flavor of Thomas’ English Muffins, and I thought you might really enjoy them! They’re not *quite* vegan (nonfat milk is the third-to-last ingredient), but they’re good enough that it just might be worth it to bend the vegan rules!
