    I love making food. I love the entire process that starts at the store, and ends with a sigh of contentment after eating my meal. I can spend hours making a meal, but there are those days where I just want something quick, easy, but still full of nutrients. I made two meals this past week that were just that-quick, easy, and nutritious.

    First up was my marinated fried tofu and bok choy, served over a bed of brown rice, quinoa, and roasted Brussels sprouts. Sounds fancy right?

    This was my first time using bok choy, and I loved this vegetable!! It was delicious and paired perfectly with the entire meal. It tasted delicious alone, but the marinade was what stole the show.

    Everyone needs to try this once before they die. That is all.

    I am drooling just thinking about this meal. I sauteed the bok choy in coconut oil, fried the tofu in coconut oil, cooked the rice/quinoa as directed, and put the Brussels in the oven until they browned. Once everything was complete I combined the bok choy and tofu in a pan and poured the crack marinade over the top to let the sauce soak in. Combine everything onto a plate and admire your masterpiece.

    Next up was Israeli cous cous with mixed greens, tomatoes, Brussels sprouts, carrots, and broccoli. This was even easier than the tofu mix. I cooked the cous cous as directed, and while that cooked I sauteed the veggies in coconut oil until they softened.

    So.Good. Little pillows of heaven.

    Of course no meal is complete without something sweet, and I have two easy treats for you as well. Starting with an ice cream ball.

    Select your ice cream of choice, roll it in to a ball (using a spoon or ice cream scoop) and place onto wax paper. Set this in the freezer while you prepare your coating. I used pretzels, but next time I am using cookies. Take the balls out of the freezer and roll them in whatever coating you choose!

    Next was 5 minute baked peaches! I have baked a lot of apples..A LOT! Apples never get old, but peaches are in season so it was time for something new! Cut the peach in half, stuff with brown sugar, and bake for about 5 minutes. You don’t want the sugar to burn. If you add butter you can bake it longer. No butter for me though, this would defeat the 5 minute bake time. Pair these with ice cream..or ice cream with crumbled pretzels!

    The end.

    Q: What is one of your go to, “quick meals?” Pb&J’s never get old, but these are bit more “sophisticated.”

      little pillows of heaven….. omgee, yes. I love that description and that dish, I want some. Cous cous is not only super tasty it is super fun to say b/c you get to repeat it twice. Double-fun.

      Quick meal would be my cottage cheese on toast. That is not really a meal though, just a staple in my diet. So I guess I am going to have to be lame and say PBJ. Only this is NOT lame because you also said this…. which further leads me to believe, our stomachs are one.

      Well, sometimes. When I am not eating meat and you are not eating tomatoes, they are one.

      Go to = couscous with every veggie in the fridge thrown in a pan with lots of seasoning! Pictures look great!

      Okay you are a genius- LOVE those balls (that’s what she said hahah)! My go-to meal when I can’t be bothered to cook or think what to make is eggs on toast with avocado and stir fried broccoli and mushrooms…hits the spot always!

      You absolutely remind me of my hilarious little teeny tiny sister Stephanie. HILARIOUS!
      And the first meal has my stomach growling ferociously!!! Starbucks opens in two hours, so I’ll soon have my KIND bars (hurry up 6am and get here) but I would absolutely 100% trust you to make food for me!!! (and I don’t grant anyone that privilege, ever!).

      Trader Joe’s = food of the Gods!! I love pretty much everything they have there. Ohh I have never made bok choy before but I think I’ve had it in stirfrys and adored that green veggie.

      Hate that you have a trader joe’s. I’m jealous. I really need to move somwhere that has one or Austin just needs to get theirs ASAP! Gonna have to make that tofu recipe. Looooks so good. Get some bok choy in my belly.

      my go-to quick meal is a can of tuna and a bag of spinach. that plus some mustard and red pepper flakes and i’m in heaven. lately i’ve even been topping it with tahini or coconut oil. weird, yes. delicious, definitely!

      I love making meals, too, but just always seem to run out of time to do it! I end up just eating salad and tuna or some quick chicken in a skillet!

      I kept scrolling down and seeing new recipe after new recipe!! How could this be quick?? You are amazing!! I would love to try all of these! I made a dish with that cous cous and it’s definitely a fun texture for salads.. I want to have dinner at your house!!

      So bok choy is called “xiao bai cai” in Chinese and it was one of my favorites from when I lived in China. I didn’t know I could get it in the States until just last year and I have LOVED having access to it. It is just so perfectly delicious! 🙂

      I LOVE baked peaches. Grilled with a drizzle of wine is even better. I’ll have to start baking more apples and pears though. Great idea!! Have you tried baked mango?
