    • Is Grocery Shopping Still Fun…

Posted at 4:36 AM by Brittany, on June 28, 2011

…when you shop where you work? When you work at TJ’s it is!! Yesterday was the first time I shopped at the TJ’s I work at. We’ve been open for over a week, and I still hadn’t shopped. I had a day off, so I leisurely ran errands and then got some food.

There were definitely more items purchased, but these were the few things that were calling my name for a month straight. I finally got around to buying them. I do in fact have a fridge full of fruit and veggies despite what these pictures might portray. Those wasabi almonds and Joe-Joe’s are already my new obsessions.

As I was heading out the door to start my errands I saw this.

My cat has a man made..or in this case cat made cubby hole in the bushes. I almost didn’t see him, but I am so glad I did. When I kneeled to take a picture he ran to me. I gave him a pat on the head and got into my car. I turned to look back and he had changed locations to leaning against the tree stump in front of the cubby hole.

I have a terrible obsession with gum. Not just any gum, but the gum that is sweetened with artificial additives like sucralose or aspartame. I have tried giving them up and going for all natural gums, but I haven’t found any that I like. Yesterday I went for some gum, and I was OUT!

All three were empty..even the natural Breath-Rx in the middle. On my Walmart run I made sure to grab another Mento’s pack of gum. The stars have been realigned. As I left the parking lot I noticed a lady holding a homeless sign. She had the sweetest looking dog with her and it broke my heart. I only had $1 on me, but she was still so thankful for anything I had to offer. I felt warm inside for a good 15min after I spoke with her.

I had one of the laziest days I have experienced in weeks yesterday, and I am so OK with that. I hung out with this guy pretty much all night.

I try to tell myself my small stache beats his masculine beard..but in reality his beard really is quite nice. Yes..my cat’s name is Little..I can confidently say it is probably a one of a kind pet name. No “Jakes”, “Max’s”, or “Mitten’s” in my house.

Alright, I’m back to my 5am weekday shifts today. Then it’s home to clean the chocolate I just discovered stuck to my camera. Ohh the life of a food blogger. Have a tantalizing Tuesday.

Q: One thing you NEVER leave the grocery store without..GO!

    • Big, Fat, Chewy Chocolate Chip Cookies

Posted at 9:12 AM by Brittany, on June 25, 2011

Does that title intrigue you? If not..you do not have a soul. I’ve left this non vegan recipe on my recipe page, simply because these were the best non vegan cookies I had ever made.

Big, Fat, Chewy Chocolate Chip Cookies

      Ingredients

      • 2 cups whole wheat flower
      • 1/2 teaspoon baking soda
      • 1/2 teaspoon salt
      • 3/4 cup coconut oil
      • 1 cup packed brown sugar
      • 1/2 cup raw sugar
      • 1 tablespoon vanilla extract
      • 2 eggs
      • 2 cups semisweet chocolate chips–one dark chocolate, one white chocolate (and then some)

      Directions

      1. Preheat the oven to 325 degrees F.
      2. Sift together the flour, baking soda and salt; set aside.
      3. In a medium bowl, cream together the melted coconut oil, brown sugar and raw sugar until well blended. Beat in the vanilla, and eggs until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
      4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted.

You will know I made the cookies when the chip to dough ratio is abnormal. More chips please! My mom seems to think she made a baking monster out of me..in reality it was blogging that did it!

I was proud of the fact that I didn’t eat the cookie dough while waiting for these to bake. I ALWAYS eat at least half the dough..and regret it later. Seriously..I end up feeling like Jabba the Hutt..not to mention I hadn’t had any real food for the evening so exnay on the ookiedoughcay.

      Dessert first, dinner second.

Colors of the wind wrapped into a tortilla. Make these cookies today, you won’t be disappointed.
