So Good You’ll Eat It Twice

I’m not going to beat around the bush with this post, I’m jumping right into it. This is how you make an EASY dessert without a recipe.

You’ll need your favorite pie base. I used a box. Watch out world, I used a BOX. Such is life.

Once the mix is made up, a large mason jar lid is the perfect size to cut circles out for the muffin/cupcake pan you need to use.

Ok this next step, is critical. Let me repeat I DID NOT use a recipe, so you must go slow and don’t over do it with the flour. Take your fruit, I used blackberries and add a handful to a bowl..maybe a little more. Then add 3 fingers worth of a pinch of flour to the berries, and dump sugar ontop. MASH it together to get a thick gooey substance. You’re done.

Take the leftover pie dough and make cute designs on top. I tried, but of course mine look like a four year old’s design. Manfriend decided to show me up again and make his look way better.

“I wanted you to have a good picture for your blog.” Such a thoughtful pie maker. This one of course tasted the best. It was my favorite. Job well done Monkey.

So this was day one. It was delicious. Day two rolls around and there is nothing on the docket for dessert (yes, this is something necessary for EVERY day of the week.) So I suggested mini pies again, only this time..with oatmeal sugar cobbler crumble on top. AGAIN with no recipe. Just do exactly what you did the first time, and then take butter (mine was vegan), melt a TINY bit, add some flour, some brown sugar, oatmeal, and cinnamon. Just mix and mash until it’s crumbly. You won’t need a lot of this stuff. If you want to be classy, mix it inside the measuring cup used to melt the butter.

So.Good.I.Ate.It.Twice.

I definitely get lazy and don’t measure everything out… Frosting, cookies, cupcakes, and pancake batter (which I made twice last week using the “eyeball” method!)… It always seems to taste better too when I ditch the measuring cups. Maybe that’s just my ego shining through, but I get really excited when my food turns out nicely without measuring the ingredients!

    I never use recipes… add- libbing is what I do! I find I always muck things up if I use a recipe… yeah I’m a weirdo I know :)

  11. This is why I love your blog- simple yet mouth-watering recipes! The thought of making pie always intimidated me but I think I could handle this…and hey, since it’s mini surely that means I can eat it on a regular basis :) ! That last picture is fantastic- the crust looks perfect!

    NOT using a recipe is dangerous, but hella fun! I love doing it! Haha, despite my many fails. I remember I made my mom keep my “witch stew” (aka carrots, water, and celery) in the fridge for weeks. I LOVE pie and everything dessert so this is awesome! Plus it’s cute and mini :D !! Next project? CHOCOLATE PIE!
