Beet-balls

After a disgustingly long day of work, I found myself arriving home to the most adorable culinary display. While I was away, a certain Manfriend of mine was at home diligently making us a three course meal.

Since I turn into a feverish troll if I go too long without food, an appe-teaser was prepared while dinner finished cooking. High protein bagels topped with with jalapenos smothered in vegan cheese. 15 creative points go to the man with the beard. 

After hoarding  equally sharing each bite size bagel, dinner was served.

Spaghetti and beet-balls. Yes I said beet-balls. Paired with roasted Brussels, vegan sausage, and grilled asparagus. The beet-balls were a combination of kidney beans, quinoa, and an entire beet. The beet was easily the size of my fist.

I can still taste the earthy flavor of this beet-ball. Another 30 creative points for the man with the face fuzz.

Since no meal is complete without a sugary treat (did you catch that wicked awesome rhyme I just threw down?) I fueled my sweet tooth demon with some of this vegan friendly ice cream.

If there are two people eating out of this pint, it’s acceptable to consume all four servings in one sitting. I promise. Bearded dragon gets 25 more creative points, giving him a running total of 70 creative points for one meal! He cashed in his points for a set of fake vampire teeth, tootsie rolls, and a man made cape designed for high speed running. Chuck E. Cheese has nothing on my point rewards.

Sunday I am running my April race. The distance is shorter than the last race (another 5K), but I am running this race for one single reason. Doughnuts. The race is put on by Top Pot Doughnuts, a wildly popular doughnut shop in Seattle. This race was decided on over a month ago (before I went vegan for a bit) so I struggled with the idea of consuming a non vegan doughnut. I decided I wouldn’t be able to forgive myself for passing up a free doughnut that I will have earned.  With that said, I will not only be partaking in a free non vegan donut, I hope to make it to Mighty-O Donut shop for a vegan friendly doughnut too. Balance..it’s all about balance.

I knew I had picked a winner to hang around after this particular conversation.

Me: “All of the donuts at Mighty-O are vegan!”

Manfriend: “I am buying SO many.”

Me: “We should get a dozen.”

Manfriend: “For EACH of us.”

Ohh..swoon. Two dozen donuts, means I don’t have to share.

Q: What’s the most unique “ball” creation you’ve had with spaghetti? Beet-balls for me! I loved every last bite. Next up: Brownie balls. Chocolate and spag never tasted so good.

  1. OKAY! Clear the room. I’ve had enough. We must start cloning manfriend, now!!! It will be our new business. He will sell. Hell, I might even buy one. Our business shall be called, “Buy a manfriend.” LOL. I am getting it trademarked right now, so you will be forced to share. :D hahahaha!

  2. Must have psuedo-recipe for beet balls! You know, just basics, cuz you know no one ever has every ingredient and it gets ad-libbed. :-)

  3. Holy yum!!! I’m not sure I’d be able to eat those jalapenos, but everything else, hand it over. Especially that vegan ice cream. Did you like it?!

    Wow—he totally wins manfriend of year award!
    Beet balls sound divine. I had Neat-balls once at a raw restaurant….I’m not sure what they were made out of (I hope I did at the time, but now I forget). They were yummy! I’m all about the creative balls! I think pesto-flavored once would be awesome. Maybe I’ll do that next.

  14. Wow you really landed a keeper- dinner sounds amazing! Not sure if you’ve mentioned before but is Manfriend vegan too now? We need to get you a tshirt for the race saying ‘Will run for doughnuts’ ;)

  15. what a great manfriend!! My hubby wouldve had top ramen waiting, or delivery pizza. Its the thought that counts right? ;)
    And in highschool on our day off my bestie and I went to a doughnut shop together and split a dozen. We spent the entire day eating 6 doughnuts each, drinking coffee, and watching our favorite movies. Ive never felt so sick in my life, but it was such a great day!

    Ohhh man, I love what he cashed in his points for. I want some vampire teeth. RAWR. I don’t think I have ever created any unique meatball with spaghetti. Lame. My mom is really talented at making them- I have only tried making them once. I completely did not do it right and the balls sizzled into mush and turned into a burnt-beefy-scrapping. It was horrible. ::shudders::

    I’m SO pumped for your doughnut run. And I hope you get a full dozen to munch on. I have a half-marathon tomorrow…. this must be a fabulous weekend for running! or maybe we are like the same person, but separated by our diets and locations. I”m certain that is it.

  18. this meal looks incredible! the only ball-shaped treat i crave on the regular is fudge truffles..so many good recipes and topping choices..but those beet balls look so good and i love all the ingredients. trying it!

    Looks scrumptious! I would like to try those beet balls myself, and I don’t even like beets (except for you!) and I would certainly give them a try. Send the recipe my way if you can, and just maybe next time you visit I will make them for you. I know, it won’t be as special as your “man friend” making them, but it would be my treat. And, I’ll even throw in some great guacamole for good measure.

I had to comment because a) I love fun food b) while Graeter’s ice cream will FOREVER have my heart (only ice cream worthy of me eating it with a spoon out of the container) I do like Purely Decadent as well… and c) because I once ran the Krispy Kreme challenge (got disqualified though…) and can appreciate the iron stomach it can take to run anything that mixes donuts and quick feet

    I have heard about that race!!! Kyle reads up on all the cool running races … and we watch too many shows that feature those delicious donuts from Seattle. I really need to come visit you so we can find some vegan donuts ;) Good luck!
