My favorite thing about quinoa is its versatility. Almost like chia seeds in the sense that they can conform to any flavors added to them. My second favorite thing about quinoa is that it is a complete protein. This supplies vegetarians like me with the essential amino acids that our bodies cannot synthesize without some help from my favorite items..FOOD!
I am going to share with you all a recipe, but only with a promise that you will make this in the very near future. I promise you that you will not regret it, and if for some freak accident you do regret it..I will gladly send you my mailing address so you can mail me the leftovers you do not wish to eat.
- 2 cups quinoa (one red, one tan)
- 2.5 tablespoons olive oil
- 2 tablespoons fresh orange juice (AKA straight from the orange)
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon/orange zest (half of each)
- 1/3 cup green onions
- 1 cup pistachios
- 1 cup raisins
- 1/2 cup chopped mint
- 1/2 cup chopped parsley
Cook quinoa as directed.
In a matter of minutes you can take this plain Jane creation..
There is no right or wrong way to add the ingredients, and these measurements are not set in stone. I started with the liquids and then added the solids, but either way would work just the same. I would add more pistachios because I think they steal the show.
Pair this with some spag squash and you’ve got yourself a meal!
This bowl will last all of a few days in my house…if that. This is the 3rd bowl of awesome that’s been made in 2 weeks. I’d say it’s a hit.
