Hiya chickadee’s, welcome to another round of Brittany’s random babbling’s. Today’s topic will be no different than the rest, except for the fact that it will be EXTRA random. Fasten your seat belts and off we go.
I have discovered a new (to me) food. This product has been staring at me day in and day out when I stock the deli shelves at TJ’s. Finally a coworker (a cute one at that) introduced me to this product and I just had to have some of my own.
Soy Chorizo, welcome to my life. I hope you never leave me.
Initially I thought this was going to be too much food. Believe it or not there are 2 eggs and spinach mixed into that meaty looking goodness. How silly of me to underestimate my eating abilities.
It was so good I even ate the fork. OK not really, I was sucking it clean while taking this photo. I have become quite obsessed with eating off of this place mate. The night before I ate my tomato basil soup off of it too.
Yesterday I spent the day with the best fraann, and upon arrival I was greeted by the cutest cake ever.
Well done best friend..well done. You make me proud. Paired with some blackberry ice cream and call it a meal. Along with the cake theme, we decided to attempt making cake pops..key word..attempt.
I rolled the balls and she stuck the sticks. This process seemed to go smooth, it was when we melted the chocolate to coat the outside that things went awry.
The ones in the back turned out chunky and were thrown out. The ones in the front turned out decent so we decorated a few. I made Joe..and in spirit of Halloween the best friend made a few “blood” pops..those were thrown out too.
B for Brittany, J for Jessica..get your mind out of the gutter kids. This conjoined twin cake pop was also good for Halloween. The J is without a stick and just “hanging” onto the B like a blood sucking creature.
I think we will need some more practice before we open our bakery.

- Ever made cake pops? HOW do you melt the chocolate coating so it is thin? Ours was really thick.

3. I love making cake balls! I haven’t put them on a stick before, but that’s a great idea! We usually melt chocolate in the microwave 10 seconds at a time. But to make it extra easy to dip… we add some canola oil to the chocolate chips before we pop them in the microwave. Makes the chocolate all silky and easy for dipping.
And now I’m done counting, haha!

Oh wow, that cake is rather adorable! I wish I had some tips on the chocolate issue.. mine came out thick too! Maybe it depends on the kind of chocolate you are using to dip?

I love that soy chorizo from TJ’s!!! It’s just the right amount of spice. YUM!
See if you can find chocolate bark at the grocery store. It melt way better than plain chocolate chips. Also, I would recommend heating it on the stove over low heat rather than the microwave.

you can thin down your chocolate glaze with cream…. makes more of a ganache, but it will set. melt your chocolate chips down with the cream – microwave works fine, just blast for 30 seconds, stir, blast for 30 seconds, stir and repeat until melty – don’t heat for any longer than 30 seconds at a time or the chocolate will burn and that’s just too sad! (try 1C chocolate chips with 1/2C cream) that cake was so so cute! how fun, love making crazy things in the kitchen. love your Halloween place mats!
adding some coconut oil to chocolate would work too, if you don’t want to use cream
